OVEN baked PORK CHOPS with Potatoes - 2.0 Version

  • One of my favourite standby pork chop recipes! These Baked Pork Chops are a terrific way to cook pork chops in the oven. Slathered in a country-style sauce then baked until caramelized on the outside and juicy inside.
    So fast and easy to prepare, you can make this tonight!

    RUB INGREDIENTS:
    1 tsp Worcestershire Sauce
    2 tbsp ketchup
    1 tbsp soy sauce
    2 tbsp brown sugar
    1 tbsp olive oil (or vegetable or canola oil)
    1 clove garlic, minced
    2 tsp apple cider vinegar
    4 pork chops / cutlets , around 200-250g/7-8oz each including bone
    800g/ 1.6 lb baby potatoes , larger ones cut in half
    1 tbsp olive oil
    Salt & pepper
    Preheat oven to 220C / 430F (standard oven) or 200C / 390F (fan forced / convection).
    Toss potatoes in oil, sprinkle with salt and pepper. Scatter on baking tray.
    Place in oven for 15 minutes (giving them a head start).
    Meanwhile, mix the Rub ingredients together in a small bowl.
    Slather the pork on both sides with the Rub, reserving some Rub for basting. (See notes for marinating)
    Take the tray out of the oven. Toss potatoes then push them to the edge.
    Place pork on tray. Bake for 15 minutes.
    Remove tray from oven, flick to broiler/grill on high (shelf about 20cm/8" from heat source).
    Flip pork, spoon over reserved rub and dab on sides. (Note 4). Broil 7 - 10 minutes until pretty well caramelised.
    Remove from oven. Use a brush to get the golden juices off the tray and dab it onto the pork - this is key for flavour and colour! Pop it back under the broiler for a couple of minutes to finish off.
    Serve, scraping the juices on the tray onto the pork, then garnish with parsley if desired.

    Just made this tonight and wow!! The sauce is AMAZING!! I’m going to double the sauce recipe next time because it’s sooo good! Pour a little on the potatoes before broiling! Thanks so much!!

    Made this tonight! I would give the Porkchops a quick brine next time and cook them just to 165.. I also used a mix of Potatoes and Yams. They browned very nicely! My wife and I loved the flavor! Making it again. Thank you :)

    Hi there. Nice video I checked out both versions. I have a question. Are you using convection or regular bake for the chops? On the first video you mentioned 390 convection and this was 425? Thanks will try this 😉

    Hi Keri! I'm a Scotsman living on the Greek island of Rhodes, but many years ago, in the 90's, I used to live in Alberta. Do you know what I have in the kitchen? I have 6 lovely Greek pork chops, lovely local vegetables, extra lovely local olive oil, super Rhodian potatoes and I'm going to make your recipe tonight!! I hope it turns out the same way for me! (the Greek Gods have a way of interfering with my cooking projects)

    just curious . have you ever tried sweet potatoes?

      No I haven’t, but I bet they would work just as good, and definitely taste delicious. Depending on the size of sweet potato cubes, it may take longer to cook 👩‍🍳

    Parchment paper should never be put under the broiler. Especially leaving the ends sticking up. Always fold the ends down to the edge of the end sides for regular heat. The broiler is way too hot, especially on high. The paper sticking up will brown and burn loose if left too long. The bits of paper fly all over the food and the oven. You changed "rub" to sauce in the 2nd video. But it still says "rub" in the recipe. A rub is dry spices with no liquid.

      Did you watch the first video? She used the same ingredients in her sauce, which in Arkansas is also called a wet “rub”

      @@kerriekrafts I did. The recipe dont say a wet rub. It says a RUB. In the rest of the world a wet sauce is called a sauce. But I guess if you rub a sauce in the meat, you can call it a rub if you want too. 🙂 Point is, she changed the word rub, to "sauce" in the 2nd video. The description recipe dont reflect the video change.

      It gets mixed in with the other ingredients to make the sauce that you baste the pork chops with.
