Since i use microwave and not oven, i lowered the heat to 130°C~150°C. Cook about 10 minutes and only fill the cup to 3/4. Add 1~2 tsp of vanilla extract to lessen the egg flavour and boom you will have a perfect cupcake! 😃👍🏻

Cake flour is a low protein flour that's milled into a fine consistency. It contains about 7-9% protein, while all-purpose flour, a harder flour, has anywhere between 10-12%. You can mix 3/4 all purpose flour and 1/4 cornstarch for substitution.

hi what about putting cocoa powder or instant coffee? does it affect the texture?

Yap definitely. Most of sought asian use it for baking cake. I think no problem will occur for using SF oil.

They came out good..... But after some time they collapsed... Means they were soft but not reduced in volume....

Did you perhaps whip it too much? Incorporating too much air into your batter will cause the cupcake to rise too much and collapse afterwards.
Try to tap the baking try 1-2 times after taking out from the oven. This will help you to avoid from collapsing :)

yes. vinegar helps stabilized the meringue. its a good substitute for cream of tartar.
