      You don't need a uni degree... The only thing like that which will help you land chef jobs is a degree from a revered culinary academy. (a respected and also therefore expensive one).
      But you don't really need that either. Many of the worlds top chefs learned in a restaurant kitchen.
      What you do need is to be comfortable working long hours for a substandard pay., most likely for the rest of your life with no retirement.

    This is guy is the representation of the word MASTERY, just look at his hands. Those are the hands of a working man. He knows his trade to perfection, ranges of temperature, the physics of the egg, the different suppliers of eggs, and the nuances of packing. He is a true master and standard of mastery. Hope we have him many many years more.

      He's probably already transitioned to making the most of his money off YT.

    Look at the beautiful color of the yolk....that means the chickens were fed well and naturally - by grain alone you get a pale almost white yolk.

    海外のレシピビデオで半熟卵のことをRAMEN EGGと呼んでてびっくりした。そりゃ日本のラーメンに半熟卵乗ってるけどねぇ。ちゃんと作らないとトロっとしてないよ!と思ってました。茹で卵の剥き方で穴開けた所にふぅっ!と息吹き込んで噴き出してましたわ。びっくり!
    いろいろ考えと作り方ががあるのは素晴らしい。ちゃんとした作り方教えてくれて感謝です。

    I eat 2 boiling eggs everyday but I only boil 4·5 min on eggs 800 gm per dozen and with excellent running eggs - they are basically the largest eggs available in Australia bar some professional special order. Yet Mr Motokichi went for 7 minutes with a large at the rear end and has wonderful results. I am going to try your method tomorrow and see how it goes. Thank you for the film.

    That's about how I do it, but I only boil for 6 min 45 sec (for American size large), and add a splash of vinegar to the water (no salt) which supposedly makes it peel more easily. And, of course, I don't poke it with a pin. I used to put them into a bath of ice water like he does, but now I just put them into a bowl of cold tap water, which seems to stop the cooking just fine but leaves them still warm when served, and they peel super easy (maybe thanks to the vinegar).

    It's so satisfying!!! I saw another video how to marinate eggs for ramen and I've racked my brains how to prick the egg, of course there's an egg piercer!
    BTW, eggs and salmonella (for those who just has access to ordinary eggs lol), wash the eggs with water just before using them (do not wash eggs before storing them!).
