While in Japan often breakfast, at a local cafe, would consist of an inch thick slice of this bread lightly toasted, slathered with butter, a tiny side salad and a delicious freshly brewed cup of coffee with a thimble-full of heavy cream on the side. It was " Morning A" on the menu. "Morning B" added half a hard boiled egg and a dab of mayonnaise. Absolutely delightful.

Followed this recipe to the tee, hydration ratio seemed off since I started off with a really wet dough. Had to add an extra 100g~ of flour to get the right consistency as seen in the video. Also, I’d suggest to anyone following the recipe to use 5-8g of yeast instead of 2.5 as my dough had trouble rising properly. I’m pretty sure all these problems are because Japanese bread flour is a lot different than flour here in North America. Different ash content, protein content, etc.

I’m waiting for the bread to rise currently and just taking a break and wow I respect the amount of work you put into this because it is not as easy as it looks!! I had a bit of trouble along the way but found my way out of it with knowledge from my past culinary class.
