In my biotechnology classes, I had learned that a bit of salt helps protein dissolve in water; basically the protein becomes more "water friendly", hence dissolves easily. So this may explain why the albumin (egg white) goes out of wack in salt water; it is just finding it easier to interact with the water and hence can dissipate easier. However if you add the vinegar, the pH lowers and since proteins can only maintain their structure (in this case, the liquid nature of the albumin) in a VERY specific range of pH and temperature, the lowered pH along with the heat will help coagulate the albumin faster. 😂😂😂.ive been eating my own made poached eggs every day for over 50 yrs. Put enough water to cover the egg, add a big splash of apple cider vinegar, boil medium to high, make sure the water bubbles over the top (i swirl it some to make sure my yolk is squishy, not firm). I just pour out the water while holding the egg in the pan w a spoon. Then slide it into the bowl. No probs but i've done it thousands of times.😊

Perfect!!! My family loves poached egg but the "freshest eggs possible" doesn't exist in my reality. Simple trick with the sieve solved the problem. Thanks so much. Please continue to share:-)
I learned to cook from my mother. At 77 I’ve never made a poached egg. That will change very soon because my wife has requested one. Thank you for the nice clear instruction. Easy to follow and sure to produce a perfect egg.
OMDog! I was one of those people who ate poached eggs in a restaurant only, not a home. With this method, I believe I can cook as many as I like, especially with the “warm up” feature (after ice water). One great result of the pandemic, for me, is the quality of the food prep videos I’m finding. Thank you for your diligence in finding what works for poaching eggs! Blessings!❤️
My poached eggs came out perfect thanks to you. I did use vinegar and swirled just in case. I placed them on top of smoked salmon and toasted English Muffin to make perfect Salmon benedict!
I just made 3 poached eggs after watching your video. I made two minor changes…after draining, I carefully put all 3 in a small glass in stead of separate bowls. Second, I didn’t bring to full boil and then lower. I just brought to point of boil with the bubbles on the bottom of the pan and slowly dropped each egg from glass into non whirling water and then started timing for 3 minutes when last one went in. Removed after time was up and put on prepared buttered toast…perfect and delicious. I did put 1 Tbs. white vinegar in the water. As soon as each egg hit the water they immediately formed into poached egg shape. This was my first success with making a professional looking eggs. I have had great success with her soft boiled and hard boiled egg methods too. I usually use extra large eggs, and occasionally large ones. I didn’t have to adjust time for the extra large in any of her egg times. Thanks for all your hard work to set us up with successes.
Thank you. I make poached eggs often and have never thought of putting them first into a sieve. The iced water tip, which I use for boiled eggs anyway, is a revelation. Being able to make them the day before and simply reheat for a few seconds in boiling water is a brilliant solution to a busy (though thoroughly enjoyable) weekend breakfast prep.
I tried to make poached eggs before and it has ALWAYS been a fail. Until today! Today after watching this video, my egg didn’t break, didn’t boil or overcook and didn’t look like an absolute disaster. It was just perfect. Thanks for the great video!
I had my very first poached eggs at home today on a bed of sauteed brussels sprouts, chicken apple sausage and ricotta cheese. Oh, my goodness. I did it thanks to you. The eggs were buttery perfect.

My lady does poached eggs for breakfast almost every morning. Our eggs are still warm from the hen. No straining needed. Fresh is best for sure. We used to have to strain our eggs for that non whispy thing. Not anymore, thank goodness. Escaping the city/suburbs was worth it. Your advice is very good though, for those who aren't able to access truly fresh eggs.

Here you teach flawlessly, engaging with "other ways" and presenting one, not as the best, but as the one you found to work. All in a quick, calm, beautiful way. Thank you!
I remember my mother making poached eggs when I was under 10 years old. I vaguely remember her using a metal utensil that was shaped like a round spoon bowl with the egg in it. She used the steam of the boiling water to cook the egg in the spoon bowl turning it to a poached type egg. I wish I could get a hold of one of those utensils. It made awesome poached eggs. Maybe you might know what It was. Thanks for the lesson.
@@imback3200 Thanks. I'll have to check that out. I'm 51 now and it left a lasting impression on me. She would season it with salt and pepper, before I would eat it.
Hey thanks for making this video! I've never made poached eggs before today. I needed to give my elderly mom something to eat, and I remembered that she used to like poached eggs on toast. I knew what poached eggs were, but I didn't have the confidence to make them without instruction. They were successful, and she ate it all. I have another dish I can use now..Thanks again.
Great video and kudos on the effort you went to! My tip is to put the egg in whole (without cracking it) in the boiling water for around 10-15 seconds, take it out and then crack the egg into the water. It comes out nearly perfect every time. Eggcelent
I've made poached eggs in the past, but following your technique took them to the next level. I really think that "straining" the extra egg whites out and dropping the egg in the center of the swirl made ALL the difference. I some great poached eggs all thanks to your great video! Thank you!
I made a PERFECT poached egg with the help of this video. I just skimmed off the stringy bits from the top of the water with the help of a spoon. I placed the egg carefully on a buttered toast, and I'm super impressed with myself. We don't have asparagus in my country, so I'm wondering which vegetable to substitute it with, next time I make this 🥚egg. I like the idea of garlic and veggies for breakfast. I just love the way she works in her kitchen, so carefully and methodically. That's my way too!!
Out of all the videos we have watched, my students don't find you annoying in the slightest bit. In fact they find you quite delightful. One has even said they don't want to punch you in the face one bit. Thank you and keep up the good work. -Signed Mr. Maggard's 3rd block class, fall 2021.
This was very informative, thank you! The bit about the loose egg white is a game changer. I didn't have a sieve, but I used a cup to gently pour out what I could. Not as exact, but definitely effective!
🙂 Poached eggs on toast is my favourite weekend breakfast. But I use to find them a real pain to make. Took ages and often wouldn't work properly (broken, undercooked or overcooked) and it was difficult to get right. Nowadays, they come out absolutely perfect each time, as I have started to make them in my pie maker. I don't actually use it for pies anymore.....just poached eggs. I have a 4 pie maker. You lightly oil each hole, add a tablespoon of water, add an egg. Shut the lid and turn on for 3 minutes and 50 seconds, and hey presto.....perfect poached eggs. And if you oiled inside the press first, you simply wait for the machine to cool down, then wipe it down with a damp cloth.
my Dad once made poached eggs after my brother told him to "add vinegar" our dad said the eggs "made me sick" I asked hoe much vinegar he added to the water? He said " About a cup..."
I've found information according to the title of the video. You went through your doubts and questions and then went straight to the answer and how-to with no . Didn't even notice if you made the typical request of like and subscribe (this was nice and refreshing). One big like to you for all and thanks!
My method- boil a pan of water. Chuck egg in boiling water and turn off the heat. Put bread in the toaster. By the time the toast is done to my liking (about 2 1/2 minutes) and I’ve smothered it in butter, the eggs are done. Nice and runny eggs. No mess, just a plate, pan, knife and fork to wash. Simples. Use duck eggs, they’re so much nicer than chicken eggs when poached.
I like using a large serving spoon to put the egg into the water which is in a skillet instead of a pot. A little something I picked up from my grandmother who cooked for a living...
Wow I found so many different methods on the internet that I almost gave up! So glad I found this video, I tried it and my first ever poached egg came out PERFECT! 😍 Thank you so much!!
Love the sieve to get rid of the thin white. Another option for putting the egg into the water; put the egg into a non-stick ladle and lower it slowly until boiling water covers the egg and starts to cook it. After a few minutes gently pour the egg into the water.

lol... make 2 poached eggs , i gotta use 1 pot, 1 strainer, 1 small bowl to contain the loose egg white, 2 small bowls to contain the egg, 1 flat ladle to scoop the egg, paper towels to dry the poach egg, 1 plate for my breakfast. I'd rather stick to my slow-boil egg. 1 pot, 1 ladle , 1 bowl and eat it straight with my pepper & soy sauce.
Not to mention....20 mins to prepare all the gear....10 mins cooking and dickin about...then 5 mins swapping bowls and serving it with a twist of lemon or something....finally get to eat it and its gone in 15 seconds....sink full of dishes..hahaaa

Love your spirit lol.
ahhh, if you follow the above demo you won't mess up and you will save some $. I am going to prepare this for hubby today for b-fast
How was it
😂😂😂.ive been eating my own made poached eggs every day for over 50 yrs.
It's 2am.
I was getting the 2am munchies and wanted something to eat. Coincidentally I fell down the rabbit hole of cooking content, and decided to try and poach an egg for the first time ever.
Followed this tutorial and it came out perfectly. Was my first time even having a poached egg and I couldn't be happier with the results.
This is not a video for people that want poached eggs. This is a video for people that want perfect poached eggs. Great vid!
This isn't even perfect. Seriously I have seen better poached eggs in 3rd world steets.
The sifting method really helped! I made eggs benedict for my wife’s birthday today and it was my most non-disastrous attempt yet!
I tried it and it worked on the first try! I'm eating it right now
So glad to hear Monnie!
OMDog! I was one of those people who ate poached eggs in a restaurant only, not a home. With this method, I believe I can cook as many as I like, especially with the “warm up” feature (after ice water).
One great result of the pandemic, for me, is the quality of the food prep videos I’m finding.

My poached eggs came out perfect thanks to you. I did use vinegar and swirled just in case. I placed them on top of smoked salmon and toasted English Muffin to make perfect Salmon benedict!

Omgoodness! YUM! I didn’t have vinegar used 1 TBSpoon of cooking wine: Eggs were 3 days old. Used the swirl method and it worked great!
It works every single time 🎉

My lady does poached eggs for breakfast almost every morning. Our eggs are still warm from the hen. No straining needed. Fresh is best for sure. We used to have to strain our eggs for that non whispy thing. Not anymore, thank goodness. Escaping the city/suburbs was worth it. Hi Laura - so glad you loved the video and mastered your poached eggs!
It is content like this that makes me genuinely grateful to be alive right now. I might have never learned how to make a poached egg before, or had to spend weeks of time trying one persons' method with no evidence that it works or is practical! Here you teach flawlessly, engaging with "other ways" and presenting one, not as the best, but as the one you found to work. All in a quick, calm, beautiful way. Thank you!
Glad I could help! 😊

Thank you!

A pie maker? Brand? Got a link?
my Dad once made poached eggs after my brother told him to "add vinegar"
our dad said the eggs "made me sick" I asked hoe much vinegar he added to the water?
He said " About a cup..."
I'd rather say, ask ur mom the question
What does that have to do with it unless he drank the water?
Have a closer look 🤣

Didn't even notice if you made the typical request of like and subscribe (this was nice and refreshing). One big like to you for all and thanks!
My method- boil a pan of water. Chuck egg in boiling water and turn off the heat. Put bread in the toaster. By the time the toast is done to my liking (about 2 1/2 minutes) and I’ve smothered it in butter, the eggs are done. Nice and runny eggs. No mess, just a plate, pan, knife and fork to wash. Simples.
Use duck eggs, they’re so much nicer than chicken eggs when poached.
I WILL try duck eggs
I like using a large serving spoon to put the egg into the water which is in a skillet instead of a pot. A little something I picked up from my grandmother who cooked for a living...

Love the sieve to get rid of the thin white. Another option for putting the egg into the water; put the egg into a non-stick ladle and lower it slowly until boiling water covers the egg and starts to cook it. After a few minutes gently pour the egg into the water.
