Wil! I have to tell you that this was absolutely outstanding. Due to power cuts in South Africa I had one hour to get this together. It all came together with 30 secs to spare. Sat in candlelight and found this to be so delicious. My decision to make more was my best decision of the year! I love your channel.
you can slit the eggplants and rub seasoning like salt and turmeric and let it sit for 20-30 mins before cooking, this will draw our some excess water which can be discarded, this will make the eggplants taste more prominent and better textured too. This is an awesome recipe on its own though, I am really feeling inspired by this.
Thanks for this tip about slitting the eggplant. I was just saying the other day I need another eggplant go to recipe in my arsenal. This one looks like it is a winner.
@@sunlight8299 Indians add that to almost everything savoury. it adds a base flavor and color typical to Indian curries, though too much can get things bitter. It has a property of getting browning faster in stuff while frying too.
Tip from an Indian: Crushed coriander seeds (usually crushed between our palms) give more aroma to your dishes and don't get stuck in your teeth. love your work btw. 👍 👌
Wow, thanks for replying, you will also love the sub-cuisines from Central Indian, south Indian (All 5 states), West-Indian (Maharashtra and Goa), North West(Gujarat, Rajasthan) and north-east(Seven Sisters) and far north(Jammu Kashmir, Ladakh, Himachal, Uttarakhand) Indian dishes too, They are amazing. Most of the Indian food they serve outside of India is Northern cuisine only. you will never run out of Indian dishes. Would love to see you prepare those in Vegan version. 😊😊

I just made this; only had Japanese eggplant and had no cilantro seeds, but remember my cilantro was all dried out in the garden and went and picked those seeds!! Also did not have green chili pepper, but I don't think it made much of a difference. Having it now over some rice and BAM! What a flavor bomb. May need to get the other cookbook (I only have the ramen one).
This is Amazing! I love it , tasted so good ❤️👍 I just pimped one step, i slized a big aubergine and salted it, left it like that for about ten Minutes. Then i roasted the slices in the oven till they browned a litte. They taste amazing like that and you don't need any oil. Thank you for that amazing recipe !

Having said that, who likes the fact that in Wil's kitchen there are no carcasses on the menu, no blood oozing and staining his state-of-the-art chopping board? I made this tonight and it is perfection. It was my dinner tonight & will be lunch for a couple days, too. The sauce will taste even better overnight, but it was so delicious this evening that I drank what remained in the bowl. The spice heat is right where it should be and the flavors are quite intense. Amazing, as always, Wil.😊
I only had 1 eggplant and three zucchini’s. So I substituted and it’s delicious. My next try at this will be all eggplant or not. I served this over the lentil rice recipe from this channel, which I absolutely love.
I love eggplants, an Indian here n this video brought a big smile. I made your chilli oil too, Will give it a shot. Just a suggestion just crush the coriander seeds a bit n add to oil.
I made this for my family yesterday because this recipe came right at time to save the aubergine that was sitting in my pantry and was already getting a little wrinkly. I had to change the recipe quite a bit, because I didn't have all the ingredients at hand but it turned out quite well and my family loved it. I'm not really an eggplant fan but after seeing chilli oil dried chili whole chilli and fresh chilli I had to try. This is the definition of coziness with melty eggplant and warming glows. No doubt I will take this camping to share around a campfire on a cool winters evening. I suspect this malasa would work well with almost any veg and is now delightfully on my weekly rotation!! I being Indian absolutely love eggplant/brinjal and there are so many Indian dishes with eggplants that you can make that are freaking amazing...so thats why i am always surprised to hear that in the West, eggplants are hated by everyone...i will highly recommend everyone to try Indian eggplant/brijal dishes because it wil defintely change your mind and not all of them are spicy..you can make curry or make masala fried eggplant fries/chips or pakoras or mashed eggplant or chutney

Lovely lovely recipe, reminds me very much of my late-mum's style of cooking. I was brought up on this style of cooking, served with steaming white rice excellent (though these days I am eating more brown rice)
You got me on the coconut cream at the end. Beautiful eggplant recipe. I like the way you cut the other veggies, makes sense to cut them bite size so the fork can pick it up easily. This I can eat with egg noodles for Diabetic like me; otherwise good with pasta or steamed rice.
