    Okay, I just made this dish this evening and WOW! So much flavor - I even tried the dish before adding the garam masala (it was good, but adding it brought a nice sweetness at the end from a nice warm spice). I used Chinese eggplants and pan fried them, which gave the overall dish a more hearty feel vs a soupy or curry finish. Now that I've made this, I will now try your red lentil curry recipe! Also, I was happy to discover during my ingredient search just how many Indian Grocers there are sprinkled throughout Los Angeles. Bring on the spices, Rainbow Plant Life!

      I cut the eggplants in chunks, tossed in oil and Airfried them to make this dish and it worked wonderfully as well!

    I am from the eastern part of India and the version of Baigan Bharta we make doesn't involves cooking the eggplant further with spices, we roast the eggplant and then simply add mustard oil (which is a must because of its sweet and slightly bitter flavor), chopped onions and chillies, chopped ginger and garlic and pinch of salt,lime juice and coriander and mash it u,....it tastes amazing even without all the other ground spices in it...and sometimes we add mashed potatoes to it and it tastes even better, we call it Baigan Chokha (mashed eggplant) from our region and its another version if anyone wants to try it with a less spicy version

    Small tip, eggplant is easier to roast on a roti jari, meaning chapati grill.
    In some states they add yogurt to the bharta. Thanks for sharing:)

    1. Use mustard oil to coat the eggplant
    2. Make small slits and stuff it with some garlic
    And see the flavor elevate to a next level.
    Similarly roasting vegetables in oven with mustard oil will not compromise the taste and you also need not strain the roasted eggplant as that water can be really flavourful.
    Traditionally the green chilies are not chopped finely. They are bigger pieces and it works perfectly in case you don't want to chew them then you can remove it.

      We cook and eat a lot of mustard oil in Assam and i swear i don't find any other oil as flavourful, mustard oil really elevates the dishes.

      Mustard oil is banned for consumption in the USA. Any mustard oil sold here is not food grade.

      @@BruceWayne-eh4im That is just ridiculous. Mustard oil is an essential ingredient for cooking in some parts of India. It has rich aroma. Sometimes we use it with vegetable oil to lighten the richness

      @@debibera912 Yes but FDA bans it. I know what Mustard oil is, I am of Indian origin. However FDA bans mustard oil for consumption due to it's high Erucic acid. Erucic acid has been STRONGLY linked to fatty depositions on cardiac and cardiovascular tissues. Coincidentally (or not), Atherosclerosis and it's sequelae are very high in south asian regions where Mustard Oil is widely used.
      I am just telling you why asking an American to cook with Mustard Oil is meaningless. It's nearly impossible to find in grocery stores and if you find it, it is not going to be food grade (so unsafe to consume)

    PS - I use an iron griddle and wrap the eggplant in foil and place on hot griddle and turn every 5 mins until cooked. It will save your stove and make clean up a breeze

    I used to work at an Indian restaurant and some people while ordering bharta were like "sorry but something is wrong with this" so we needed to explain to them that it's just smokey and nothing is wrong with it. I personally really like this dish x

    Today, I made it for the first time. I love eggplants, but I don't know many ways to cook them. When I took the first bite, I had to stop for a moment because I started laughing. My husband was confused, so he asked me "is it too spicy?" "is it bad?" and all I could do was giggle like an idiot, and I showed him the 👌✨ and finally said, "god it's so good". 😂
    Recently I've been trying to eat more plant based, mostly for health and weight loss, but I also found that I don't enjoy eating meat as much as I used to. Generally speaking, I always preferred veggies over meat, but I do love eggs and dairy.
    So thank you, for this amazing recipe, I will definitely spread it to everyone I know hahaha. ❤️

    In Sri Lanka we make it in a slightly different way. We deep fry it and add vinegar, sugar, onion, green chillies, salt, ginger and garlic and mix it all together. It’s called wambatu moju and tastes so good

    I made this tonight for my family. It tastes great BUT I added a bit more chilli powder and salt to taste :) I also wrapped my eggplants in foil and put in the oven for 70 mins (190 degrees Celsius) and it worked perfectly. Thanks Nisha!

    I laughed so hard when you said Max refers to eggplant as Satan’s zucchini! That’s a great way to put it. It usually reminds me of leather unless it’s prepared well. I have a feeling I would like it in this dish though!

    We are from Pakistani side of Punjab and my mother makes it with yogurt. Just beat some yogurt, add roasted eggplant, raw chopped onions, tomatoes, green chillis, fresh coriander, some salt and red chillies. So good during summer time.

    This was actually the first dish I ever tried with eggplant. I found a recipe looking for eggplant recipe’s. I made it and really liked it. I so want to make this version as it has so much more flavor added. The one I made was also made in the oven. I want to try it over the burner.

    I always loved baingan bharta in restaurants but never knew how to make it, so this was helpful. Made a batch tonight and it turned out pretty good! (I added green peas because the restaurants I've been to always did. And I think next time I will have to make it a lot spicier, but it's good to have a starting point to work from.) Thanks!

    I bake it in the oven wrapped in alu foil, but poke it with fork before putting in the oven. It comes out beautifuly creamy, just amazing. Not watery at all, as all water drips out trough that fork holes 👌

    You are so funny! And also so funny together :) I never knew what to do with eggplants, its still quite uncommon in The Netherlands. But this winter Sinterklaas gave me a Israeli vegan cookbook and fell in love with eggplants!
    There is an amazing recipe from Panda Pita in Tel Aviv. The pita gets filled with baked and steamed eggplant, tahin, a devine beetroot-fenurgeek-chutney, pickled onion and a tomato-salad with rocket and herbs. I wish I could share one with you and Max :) Enjoy Bali! 🥰🙏

    The Vietnamese do amazing things with Eggplant. I never liked it at all until I tried it many years ago at the AUM Vegetarian Restaurant in Chiangmai, Thailand. From the very first bite I absolutely LOVED it! It was listed on the menu as being a Vietnamese Dish. Wow! Delicious! I stayed there for weeks and ate there almost every day and I sometimes ordered two at a time! It was really that good! The restaurant is no longer there unfortunately…

      @@nicolegrabowski5704 Unfortunately no… And I haven’t found the same dish at other Vietnamese Restaurants in the U.S. Some are good but not as good as at the Aum Vegetarian Restaurant. I ate there many times over the years but when I went there in 2010 I learned that ‘Toy’, the lady who owned it has sold it apparently. The menu had totally changed. That dish wasn’t anywhere on the new menu. I wasn’t impressed with the food at all and stopped going there. Toy married a Canadian guy from British Columbia. He was living there in Chiangmai with her. Maybe they decided to move back to B.C. I have no idea. BUT, there are many other vegetarian and vegan restaurants in Chiangmai now. I was there again just before the Pandemic.
      The ‘Loving Hut’ vegan restaurant chain are Vietnamese owned and they have an Eggplant Entre’ that I order sometimes in San Diego and Houston…

      My (Vietnamese) mother chars the outside of Chinese eggplants, peels them hot, cuts them in half lengthwise then in three or four across, then spoons a sauce of chanh (either lemon or lime), nuoc cham or vegan alternative, sugar, olive oil, and wilted green onion over the top. This is probably not the eggplant you were looking for, but hopefully some of the flavor profile is still there.

    It's autumn and I've been on an eggplant kick! Thai Basil Eggplant & Tofu, I think, Max could also enjoy. Caramelizing the sauce with the eggplant and tofu (at the end) will give it that meaty-umami flavor and feel. I will try out this Baingan Bharta recipe as it's not too intimidating, since I've delved in South East Asian recipes. (your lentil dish with all those ingredients - I will need another cabinet just to accommodate all those spices - LoL)

    I’m an eggplant lover and this dish sounds amazing!
    I usually roast my eggplant pieces in my airfryer (tossed with salt&oil and on top of some aluminium foil) and now I’m tempted to try roasting it in there whole.

    All the western people feel sorry for vegetarians but what they don't know is when it comes to Indian cuisine there are so many brilliant vegetarian dishes that you can go a week without eating meat and not even realize, you don't even miss it sometimes. And I am an absolute meat lover saying that.

    I line a baking sheet with foil and using the oven broiler, it takes time but lesser clean up 😀 also I’ve found that the insides of the eggplant remain raw when using the stove v/s the oven

    Awesome recipe, will have to give it a try. You and Max remind me of my fiancée and I (she’s from India, and I am white-Hispanic) and I’ve enjoyed her and her family show me her culture, especially your delicious food!     This is so good! I had to put my eggplant on a gas bbq to wrinkle the skins, but other than that the rest of it went off without a hitch. This is SUCH an excellent recipe its not even funny. The very next day I was already craving it again. Dangerously deliscious!!! Thank you!

    I've been vegan for 4 years and I live in Brazil (I'm Brazilian). Back then, substitutes for meat were mushrooms, eggplants, TVP and green jackfruit.. maybe zuchini, too... It was a huge challenge, because I don't like any of them and I never knew how to cook. I only learned because I became vegan, really... I want to try your recipe, but it hasn't been a good experience for me trying recipes with these ingredients. LOL I will make an effort. Thanks!

    Wow, this is a beautiful dish. The flavors are so deep. Certainly wasn’t 10 minutes preparation and cook time with cooking, peeling the eggplant and steaming it. But it was delicious.

    I really look forward to trying this dish. As someone with a little sister, what worked for me to get her to eat eggplants was to add them blended into tomato sauce whenever we make pasta or pizza.

    My grandmother used to line the stove top with foil for easy cleanup. Also indian markets have a mesh grid to place over flame so the soft eggplant doesn't fall apart

    In UP, Bihar (other states of India), they put long gashes in the eggplant and stuff it with green chilies and garlic cloves before charring it on open flame and mashing it all together. Turns out so much more delicious! 😋

      Yes! I saw that technique in some videos but when I tried to do it, the garlic burned and the eggplant leaked too much on the stove before it could cook through on the inside. I think the eggplants in the states are too big for this, but would love to try with a smaller Indian eggplant.

      @@RainbowPlantLife I think the American varieties are a little different (maybe GM crop?) Coz in India I've never seen anybody draining the eggplant after charring it. The youtubers in Pasta Grammar complained as well that the American variety is too big and lacks flavour, don't know if it's true. You can char the green chilies and garlic separately if they burn with the aubergines but you must try it once!

    I have never thought to peel an aubergine before! And now I'm annoyed at myself because I don't use aubergine because the skin is so tough and stays that way (unless you want mushy aubergine which I don't). Thank you for this tip!

    Made this today and it was awesome! I made two changes, I used red cayenne pepper instead of the Kashmiri chili powder because I didn’t have that in the house, and along with the eggplant I added a bag of frozen cauliflower that I roasted ahead of time in the oven. I loved it! I’m thinking of trying next time adding some cubed tofu in there to pack some more protein and make it a meal. Thank you!!!

    Cooking the eggplant on a charcoal grill has been the best method I've tried... you'll get all the smokey flavor. I also got great results using the air fryer (don't have a gas stove)

    In my country we also have dish where we cook the eggplants like that, but I learned to wrap it in foil and that way your house will be less smelly and it cooks out great.

    superb! I searched for an authentic recipe for baingan bharta but didn't find any, not even in Indian channels. All of them hv changed the whole recipe in order to elevate the dish, they added curd and what not. But, to my surprise, I found it on your channel. its the typical authentic recipe.     I wouldn’t say baigan bhartha specifically originated in Punjab. Baigan Bhartha is widely enjoyed in many states in India (it’s like daal , not really from a single state).
