Just the best! They both must be very proud of their daughter, and I doubt that they have any complaints about their son-in-law. What a great family! Food looks pretty good too. I use a little bit of coconut milk to blend the curry paste when I make it, since I am going to cook it in that anyway- makes it blend easier for me. Love the homemade curry paste recipe!

I made this on Sunday and it smells and tastes great - it’s good restaurant quality! I added snow peas and next time I have to remember to add more tofu than I actually did though 🤔 I made this with store bought green curry paste and in the UK I bought the brand of Thai green curry paste called Thai Dragon and it is a vegan curry paste

Totally get it, lemongrass can be confusing! I’m glad it was helpful. Red curry is pretty similar to green curry but with red chiles and a few minor differences here and there. I’ve only had panang curry a few times, I think i need to change that!
I recommend cutting the tofu into thin slices and pan-frying on both sides. That way you get the maximum crispy surface and not have to worry about getting every face of the cubes.
Your take on vegan Szechuan chinese takeout w/ with apps, soups family style entree be great. I always love the mapo tofu, sicy egglant with garlic sause, green beans etc
I love Native Forest Coconut Milk, but... You gotta get the "simple" version!! At least in my opinion (and of other Thai people I've talked to) the "classic" version which includes guar gum tastes like coconut milk + plastic. It might be more consistent, but I've opened literally 100's of cans & the company seems to have come up with a better process in the last couple years to get the consistency pretty, well consistent, in every can 👍👍
