- Tempeh is a great source of Vegan Protein. Made with Fermented Soy Beans, it's super great for your gut too!
I hope you enjoy this super easy to make Indonesian Tempeh Curry from scratch. You're welcome to replace the Tempeh to Tofu or any other protein source of choice.

Looks so delicious! I had a job working at a restrautant and Indonesian night was always my favorite! We served black bean tempeh with sambal, cabbage, lemongrass salad and a delicious soup, was so good!

1 tomato chopped, 1 small union diced, chick peas, (about 2 table spoon) ginger, chilli powder , 4 knoflook, komijn zaan , tumeric, lemon juice. 1 lemon grass, 1 lepel olie 4 uien, 2 wortels in dunne reepje, 1 rode paprika , 1 brocoli, 1 rode chili , curry pAste erbij doen die in de blender was. 200 ml vegetal water, 400 ml koko melk , 2 lime leaves , salt

Blend 1 chopped tomato, 1 diced onion, 2tbs cooked chickpeas, chopped ginger, 1 chili pepper, 4 cloves garlic, cumin seeds, coriander seeds, 1 tbs turmeric, some lemon juice into a curry paste.
Heat sesame oil in a wok, add 1 chopped onion, when translucent add 2 julienned carrots, 1 red bell pepper, broccoli florets, red chili pepper, and stir fry a bit.
Add curry paste, and crushed lemon grass, vegetable broth and 1 can of coconut milk and 2 kaffir lime leaves. simmer and adjust salt to taste.
Cut tempeh, sear the chunks and add to the curry,
Serve with rice or rice noodles, garnish with green onion.

Just curious how did the vegetable stock looks clear as water?

My curry was really nice, very subtle so i will add more spices next time, i usually use less first time. My curry did come out a bit watery - how can i thicken it without using the UK standard of plain flour or cornstarch~i don't like those blands flavours in my curry.
Maybe you can try adjusting the amount of liquid, like adding less vegetable stock and adjust as you go
Coconut milk gives more body to the broth. Make sure you use thicker coconut milk then gradually add the stock. However, as more moisture evaporates out of the pot your soup will get thicken 🍜
If i don't hv the stock can I use water
