Ep #3: Coconut, Dry Fruit & Dates Barfi (HINDI)
On Episode #3 of my #HealthyHalwai series where I show you how to make healthy mithais, I am making a Coconut, Dry Fruit & Dates Barfi.
You Will Need:
-3/4 cup Dates
-1 cup Hot Water
-1/2 Cup Coconut Flour
-2 tbsp Coconut Oil
-3/4 cup Soaked Dates
-1/2 cup Roasted Almonds, Pistachios & Cashews
-2-3 tbsp Date Soaking Water
-Puffed Amaranth Seeds for Garnish (optional)
Method:
1) Soak 3/4 cup of dates in 1 cup of hot water
2) In a food processor, add coconut flour, 1 tbsp coconut oil and the soaked dates. Grind this mixture together.
3) Then add 1/2 cup of roasted mixed nuts (I have used almonds, pistachios and cashews) along with 2-3 tbsp of Date Soaked Water and grind this mixture again.

Hello! I made this today and turned out really well! Few substitutions I made; -Used coconut flour instead of tapioca -Coconut sugar instead of gud -And red grapes🍇 because I dont get jamun where I live! My coconut cream was not thick like yours but did not seem to affect🤔, will try to get a better one next time! Thank you! I wanted to ask if its possible to make this with another fruit? I think I finally found a healthy kulfi recipe that fits my lifestyle and want to make the most of it!!🤗 thank you again!

@@shalvisharma10 I have 3 recommendations for you: 1) Set in the fridge instead of freezer for a less icy consistency, it will take longer to do so. 2) If setting the in the freezer, after every 1-2 hours, use a spoon to move the mixture in the mould around, this breaks the icy consistency and gives you an ice-cream like consistency. It's a bit tedious but worth it for the consistency you achieve. 3) Use an ice-cream maker to get a non-icy consistency. This is my least recommended method as I feel it's an unnecessary expense. However, just giving you all the options so you are aware and can enjoy a less stone like consistency as per your description.

No it doesn't - as the Sweet Potatoes have plenty of water inside them and give great moisture to this recipe.
