BETH’S PEACH COBBLER RECIPE
Makes 4 mini cobblers or 1 large one made in a 9x 13 shallow baking dish
INGREDIENTS:
8 peaches, pitted and sliced (I leave the skins on, but feel free to remove them)
3 tbsp (40 g) turbinado sugar
2 tbsp (25 g) white sugar
1 tbsp (15 g) flour
½ tsp (2.5 ml) cinnamon
¼ tsp (1.25 ml) nutmeg
¼ tsp (1.25 ml) salt
2 tbsp (30 ml) lemon juice
2 tbsp (30 ml) water
¼ cup (40 g) of raw pecans, diced
1 tbsp (15 g) butter (cut into cubes)
For Topping:
1 1/4 cups (150 g) flour
1 tablespoon (12 g) white sugar
½ teaspoon (2.5 ml) salt
1 tbsp (15 ml) baking powder
9 tablespoons (135 g) cold butter, diced into cubes
2/3 cup (160 ml) heavy cream
1 egg
Raw, turbinado sugar for tops
METHOD:
Preheat Oven to 450F (232C).
Slice peaces into slices and place in a large bowl. I like to leave my skins on because A.) It’s easier! B.) It creates a nice “rustic” farm-to-table look. But feel free to remove them if you wish.
To the peaches, add the sugars, the flour, cinnamon, nutmeg, salt, lemon juice and water. Toss to coat. Spoon into mini casserole dishes or 1 large 9 x 13 dish. Top with butter cubes.
Place dishes on a large baking sheet, to catch drippings if juices bubble over.
Bake for 15 mins or until peaches are bubbling and caramelized.
Meanwhile create the biscuit topping.
In a large bowl whisk together the flour, sugar, salt and baking powder. Then add the chilled butter working flour into the butter with your hands, until you create a coarse meal and the butter is the size of peas.
Then in a small bowl combine the egg with the heavy cream, whisk until smooth, and add this mixture to the flour mixture, and stir with a fork creating a sticky dough.
Remove the peaches from the oven and dollop the dough onto top of your warm peaches, leaving a little room to see the peaches underneath and then sprinkle some turbindo sugar on top.
Bake at 400 for 15 mins. Serve warm with a scoop of vanilla ice cream on top.
NOTE: These can be made a few hours before and stored, uncovered at room temperature. 20 mins before serving heat at 200 degrees for 20 mins. Enjoy! - Хобби

I like to use a pinch of Chinese five spice in peach dishes. It gives a lovely flavor without being as familiar, makes one think, "hmm, what is that?" Can't wait till peaches are in season again so I can make this.

that's such an interesting way to make it! usually I melt the butter and leave it at the bottom and pour batter on top and add peaches with juice (from extra slices) and sprinkle some cinnamon! the bottom is so great, crispy and light. I mastered this recipe at age 7!

I made one of these for my outdoor education class :3 although my teacher did it differently,instead of mixing the cake batter then put it on the fruit, she just put the powder cake mix on it and it really made it soo sweet,the cobbler wasn't fully cooked when it was time to leave so I never got to finish it.

I saw this video as it popped up in my suggestions again, and wondered where you got these mini cast iron skillets from. I've been trying to put it on my wedding registry and can't seem to find them anywhere. They're so perfect.

chokozz Yes of course that would also be great! Just add another tbsp of flour to the fruit mixture if using frozen fruit. That will help absorb the extra water the frozen fruit retains :) Enjoy!

Hi, since I don't know I'm just curious, I saw recipes without eggs in the topping batter. What is the difference that eggs make and what is more traditional? (Btw your recipe looks totally amazing!)
You definitely could leave the egg out, but it would make for a drier, more crumbly topping. The egg adds richness and moisture :) Personally I think it's better with the egg :) Hope you enjoy!

Love peach cobbler, especially this time of year. Cast iron is a beautiful thing huh? Maybe you have tried this? Still a little messy, but easier to peel - try dropping those peaches in hot water, then in cold, the skin slides right off. :)
Ha! Yes I have heard about that one and it looses me at "boil a pot of water" in the summertime LOL! I can get pretty lazy in the summertime!

Oh sure you could just bake the whole recipe in a heat safe 9x13 casserole dish no problem! I’ve done it that way too :)

How did you pit the peaches I have so much trouble
Oh yes that can be tricky :) I usually slice in half and then give them a good twist in either direction, then remove the pit with my hand :)
Can I add brown sugar on top instead of the white sugar? Maybe cinnamon mixed in with the brown sugar.
You could, but just be careful and watch it since brown sugar will brown quicker (due to the molasses that's in it) and could get too brown before the insides of the biscuits are done :) that's why I use the white sugar :)
Can I use frozen peaches for this recipe?

gallowaygirl1998 Sure you could use canned peaches, but skip the first part in the oven, otherwise they will get to mushy. I would use 8 cups for this recipe. Enjoy!

To peel a ripe peach, just blanch the peaches and then rub off the skins with a paper towel.
