    Hi John! My mom had the BEST Peach Cobbler recipe. Unfortunately, through a series of events, her most prized recipes were lost. She had a biscuit topping, with a sugar crackle glaze. She was so 'ole skool that she even "blanched" the peaches to remove the skin. Yours looks delish, and easier, too. All I would add is a dash of nutmeg and a splash of vanilla to the filling. A variation...make a Peach Melba cobbler, with the addition of freshly picked Raspberries! A little fresh lemon juice and zest, and a little Framboise liqueur! Perfect for the summer...always a pleasure to view your channel! ☺️

      Stefan Marchione Check out Chef John’s recipe for peach cobbler on Food Wishes channel. That might be the one you are looking for . The topping is like a soft center, crispy sugar cookie. After spreading the batter on top of the peaches, you sprinkle liberally with sugar spray a bit of water on top.

    For ease of peeling peaches ... blanch in boiling water for about 30 to 60 seconds .. remove to cold water.. they will be cool enough to handle in a few minutes and the peels will slide off ... * You're welcome ; ]

    I’m from the south, here’s a little tip. Wash and cut the peach in half like an avocado, scoop out the pit, and then use a large dinner spoon to scoop the fruit away from the skin. Flip the half-peach flat side down on cutting board to cut those perfect slices. Repeat with other half.

    All these months later, I made this cobbler today. However, I also looked over a few other peach cobbler recipes on RUclips and the “others” did mention the one cup of white sugar to mix with the dry ingredients …1 cup flour, 1 cup sugar, 1 cup milk. Easy to remember. I used s.r. flour. Anyway, I needed your take to see how to cook and sweeten the fresh peaches (as most use canned). I also browned the butter in the pan in the oven. Sprinkled my topping with a bit of cinnamon and sugar before baking. All in all came out delicious. TY. Your video here did help me.

    We love this cobbler! After trying several other recipes we finally have a keeper! I think the cobbler dough bakes better by putting the peaches on top of the batter instead of the other way around like in some other recipes. Like John says, don't cover the batter completely so that it can rise up through the peaches. I covered it all up one time and the batter didn't rise through very well, so that was pilot error.

    I grew up eating the old fashion Peach Cobbler with a pie crust and the dumplings and I find it to still be my favorite.It take a little longer to make but it is delicious. I have my grandmothers recipe so it is old.

  • @fealubryne
    @fealubryne 4 года назад +5

    Dumb question, but could you blanch the peaches to make peeling them easier or would that negatively affect the flavor/cooking time?

    • @stefanmarchione6757
      @stefanmarchione6757 4 года назад

      That's 'ole skool. My mom did it that way. I think it just softened them, but made removing the skin easier. But you know what? That whole process is messier and more time consuming. Boiling, blanching, cooling, peeling, putting, and slicing.

    No one will see this but its a recipe that works for all fruits
    Its a cup of flour
    A cup of sugar
    A cup of milk
    A stick of butter
    A teaspoon of vanilla
    And a cup of any fruit
    Set the oven to 350° F
    Put all you dry ingredients into a mixing bowl
    Add the milk
    Add vanilla
    Take the stick of butter and cut it into small slices and add the slices into the mixing bowl with all the other ingredients
    Mix lightly. It can have clumps of flour it will be fine. Just dont over mix
    Pour the batter into a 9×9 baking pan
    Set it in the oven on the middle rack
    Cook for 45 minutes
    Let it cool off a bit and enjoy
    Its my personal favorite cobbler recipe and i highly recommend trying it out

    We have a peach tree that is giving us beautiful peaches this year, I was looking for a peach cobbler and found your video. I've made it twice now and it's a favorite! I mill my flour so I used 128g as a measurement for 1 cup flour from soft white wheat and added an extra tablespoon of milk for the liquid, the batter looks runny (freshly milled flour is more thirsty than bagged flour and needs time to absorb the liquid) but it bakes up nicely. Thank you for your wonderful videos!

  • @claudiusreed9691

    The cobbler looks too dry. It needs the juice from the peaches to help make it moist. Do not throw away the syrup from your canned peaches, folks. When using fresh peaches, you need to make a syrup from scratch - butter, sugar/brown sugar (amount depends on how sweet your peaches are) and you can even throw in some cinnamon, nutmeg, vanilla and some people even put in some almond extract, too.

      Agree. I was all set to make a peach pie a few weeks ago but my premade crust decided to shrink on me. Thankfully my peach component was made very different than this one here (lots of juice thanks to the butter put in as the recipe called for). Instead of doing a base like John I had a crumble set to go on top. First time making what I did and it turned out great!!
