The what.....wait...did preppy kitchen post a video? YES !!! he said as he walked away giggling. Just saw the video...now I know what all the fuss is about. Hope our end result looks like yours 😄.
I followed his instructions to the T! But, my first pie was super runny. If anyone is making this you definitely have to put more egg yolks, at least 4 and do 2 cups milk instead of three! Also, 1/4 cup cornstarch is definitely not enough put 1/3 cup instead. But, the recipe is still bomb though! There were just a few hiccups in his recipe. When making the filling MAKE SURE that sucker is boiling/bubbling! This will cook the eggs through and mix it well into the pudding. Then, chilling it in the fridge overnight will make it PERFECT. TRUST ME! I made this shit three times. If your filling is still runny and you don't want to put flour or more corn starch add 2 MORE EGG YOLKS to the cool mix, whisk it up, then put it back on the stove and whisk until it bubbles/boils. It should thicken up quick!

I love this recipe! I didn't have corn starch but the potato starch worked just as well. I used apple cider vinegar instead of the vodka. My grandmother used vinegar in her crust.

I just did this recipe for thanksgiving and it was amazing! I did end up modifying some things though. First of all, instead of 3 cups of milk, I did 1 cup of milk and 2 cups of half and half. Also, to give the filling a subtle natural banana flavor, I roasted a banana, sauteed it, and steeped it in my milk/half & half for about 30 minutes. I saw some people recommend mashing it and blending it in the filling, but that can change the consistency and add too much air. I also added another egg yolk because I found it wasn't as rich as I'd like. Lastly, the measurements in the video are different compared to the recipe measurements, but I'd recommend following the video measurements.

@@Sorekneecap if you're asking if the mashed bananas brown, not if you mix them in throughly enough. Bananas brown from exposure to oxygen. Mixing them throughly in the custard prevents oxygen from reaching and oxidizing the banana puree.
@@lilianmartin9898 I haven't had a problem with consistency issues from mashed banana, not as long as you get it smooth when you mash it. And remember to increase the flour a bit to adjust for the extra moisture from the mashed banana. I just made a banana custard pie for Thanksgiving this year, and it came out fine. My daughter and her boyfriend even asked for a couple of pieces to take home.

I always wondered what went into a banana cream pie as they just weren't a thing in Australia when I was a kid but you solved the mystery for me and it's not as out of the ordinary for we Aussies as I would have thought. One of my favourites and also a regular dessert over here when I was a kid was banana custard with whipped cream on top and this is just that in a pie shell. I must admit it looks much more attractive in this format and just as tasty, I'm sure. Mystery now solved and I'll definitely be serving this up soon. Yum!

Banana cream pie was a favorite of mine since I was little. I haven't had it for years and I decided I would make banana cream pie for Thanksgiving rhis year. It was so good it brought me to tears! This is the best recipes ever! Thank you Thank you Thank you!
Done this recipe twice now and both times I've had to add almost a full cup of cornstarch before this will start to thicken up. The first time, used 1/4 cup cornstarch and I sat and stirred for half an hour and it never thickened. Finished it up, put it in the fridge and hoped for the best. Never set up. Put it back on the stove and added another 1/2-3/4 cup of cornstarch and it finally thickened up and was able to save the pie. Second time started with 1/2 cup cornstarch and it has the consistency of a thick soup. Note that for the custard I am following this recipe to the tee. No differences, no substitutions, no changes, nothing. Whole milk, granulated sugar, cornstarch, eggs, egg yolks, vanilla.
Thank YOU! You are the ONLY baker, chef etc that has ever explained the thickening process of a custard and why it is necessary to whisk that much. Without knowing why or what to look for learning to make custard is going to take a lot of curdling and mistakes. Thank you. It is sad
I made mine and it would not thicken like his, but his said out loud 1/3 cup of corn starch but his recipe said 1/4, I used the 1/4 cup in mine, and in the end it was liquidy after I left it in the fridge over night, could that have messed it up, I was whisking for like 15 min very fast on med-high heat and it never thickened like his

When my family makes it, they use boxed pudding mix, store bought pie crust, and store bought whipped topping. Not a fan of that, this homemade approach looks much better

OMG! it looks so yummy can't wait to have it baked. And by the way those who worried about using vodka just want to say that all alcohol drink used in recipes the alcohol evaporates as it is cooked no worries ! I use wine to make my pasta dishes and they add a lot of flavor.
this is about the 7th time I've made this recipe, each time I try something new. This time it was clotted cream ( or Devon cream) substituted for the milk. Yesterday I reduced a litre ( quart) of whipping cream into clotted cream so I had this mass of Devon and not really sure how I was going to use it all. So today when I made the custard I used my usual 400ml (about 12 oz) can of coconut milk and then I topped up the 3 cups of liquid with Devon cream. It turned out very smooth. I find that this recipe will fill 2 store bought frozen crusts. I give them to friends.

I tried this recipe and it was sooo delicious, thank you for sharing your recipe! If I had to add one thing it would be that if you are panning to keep your pie in the fridge for the next day, take the bananas out and add them the day you are going to eat them because they turn black. Thanks
This is the traditional method for banana cream pie though. I thought the same thing when I learned how to make it. All the banana flavor comes from the banana slices. I was thinking of making some to fill cream puffs and I think I will dice the bananas and mix it with the cream so it's more homogenous though certainly will not be as as creamy or look as smooth. In a pie where you are cutting slices the thick layer of creamy custard is a wonderful textural and visual contrast to the crust and bananas.
To my knowledge, the only way to make this custard flavored like banana is to add in artificial banana flavoring, which most people think is gross. Or at least John does and I agree with him!
Did you use ¼ cup or ⅓ cup of corn starch. Mine would not thicken and I used the written about of ¼ cup. The video says ⅓ cup. Might have been the difference.

I made this recipe. I think I am on my 3rd incarnation. I found the 250 g of sugar to be O.T.T. (over the top), way too sweet. I've cut the sugar back to 150 g, will probably cut back another 25 to 125 g. Also I use 1 can of coconut milk add milk for the remainder. I also played around with the cornstarch. I found 45 g works best for my liking. But a gotta say 40 makes it very smooth , just a little to slack for me. Oh, I add some coconut shavings as well. Both work, it's just based on preferance. I split the difference of the two when I made mine, but I'd recommend following the video measurements (maybe a bit less sugar though).

Pretty sure the screen is more accurate, he corrected his mistakes while editing. Sometimes you say wrong things without realizing it lol I can very much relate.
It was just a preference thing I believe. Like he mentioned, he put in 1/3 cup cornstarch but you can also do 1/4. I'd recommend doing what he did in the video. I made the filling based off the recipe and it didn't work out well and had to make it again using the measurements he said in the video.

Howdy John. I used your basic technique for my pie today. I used coconut cream ( some what condensed coconut milk) instead of whole milk and I dialed the sugar back to 175g. Also I added toasted coconut ...so I guess that makes it a banana coconut cream pie!
As I understand it the vodka works to wet the dough so you can work it and then when you bake the crust it evaporates quickly leaving the crust much more flakey. You can just use water.
Another version for the crust that makes sense to me is the Vanilla Wafer crust. Delish! Thank you very much for this version too. Definitely will give it a go!!

I roast 2 bananas in their peel, then mash and add to vanilla custard for a natural banana flavor. So yummy. Love your videos!

Julie Baker i mixed them in a blender with some of the custard.

Yeah, it's one of my pet peeves when cooks say use three teaspoons of something when they can just simply say a tablespoon.
16 T in a cup, so 1/4 cup is 4 T.
Except in Australia I believe a tbs is 4 tsp!🤷♀️ although to be honest I believe our cup measurements are different also- 250 ml =1 cup.

I made mine and it would not thicken like his, but his said out loud 1/3 cup of corn starch but his recipe said 1/4, I used the 1/4 cup in mine, and in the end it was liquidy after I left it in the fridge over night, could that have messed it up, I was whisking for like 15 min very fast on med-high heat and it never thickened like his
So I actually started out making your cream pie and then decided to add the bananas. SOOO GOOOD! The custard can be eaten alone, I love it. Thanks so much for such wonderful recipes. I have been baking for many years and have my favorites but your recipes are right up on the top of my list!

When my family makes it, they use boxed pudding mix, store bought pie crust, and store bought whipped topping. Not a fan of that, this homemade approach looks much better

OMG! it looks so yummy can't wait to have it baked. And by the way those who worried about using vodka just want to say that all alcohol drink used in recipes the alcohol evaporates as it is cooked no worries ! I use wine to make my pasta dishes and they add a lot of flavor.

Bananas are my favourite fruit so making this pie is an absolute must 😋
this is about the 7th time I've made this recipe, each time I try something new. This time it was clotted cream ( or Devon cream) substituted for the milk. Yesterday I reduced a litre ( quart) of whipping cream into clotted cream so I had this mass of Devon and not really sure how I was going to use it all. So today when I made the custard I used my usual 400ml (about 12 oz) can of coconut milk and then I topped up the 3 cups of liquid with Devon cream. It turned out very smooth. I find that this recipe will fill 2 store bought frozen crusts. I give them to friends.
You have the neatest kitchen tools, love all the cooper, pastry mat, and the those cake pan bands - which the guy at Sur La Table had never heard of.

I tried this recipe and it was sooo delicious, thank you for sharing your recipe! If I had to add one thing it would be that if you are panning to keep your pie in the fridge for the next day, take the bananas out and add them the day you are going to eat them because they turn black. Thanks
I always thought the custard would have banana flavor within it.
This is the traditional method for banana cream pie though. I thought the same thing when I learned how to make it. All the banana flavor comes from the banana slices. I was thinking of making some to fill cream puffs and I think I will dice the bananas and mix it with the cream so it's more homogenous though certainly will not be as as creamy or look as smooth. In a pie where you are cutting slices the thick layer of creamy custard is a wonderful textural and visual contrast to the crust and bananas.
To my knowledge, the only way to make this custard flavored like banana is to add in artificial banana flavoring, which most people think is gross. Or at least John does and I agree with him!

Did you use ¼ cup or ⅓ cup of corn starch. Mine would not thicken and I used the written about of ¼ cup. The video says ⅓ cup. Might have been the difference.

I made this recipe. I think I am on my 3rd incarnation. I found the 250 g of sugar to be O.T.T. (over the top), way too sweet. I've cut the sugar back to 150 g, will probably cut back another 25 to 125 g. Also I use 1 can of coconut milk add milk for the remainder. I also played around with the cornstarch. I found 45 g works best for my liking. But a gotta say 40 makes it very smooth , just a little to slack for me.
Oh, I add some coconut shavings as well. Thanks for taking the time to post this my man. I enjoy your vids.

Question? As he’s giving the measurements for the pie the subtitle underneath has different measurements. Why? Which are the correct amounts?
Both work, it's just based on preferance. I split the difference of the two when I made mine, but I'd recommend following the video measurements (maybe a bit less sugar though).

So when you're talking about adding the sugar, you SAY 1 & 1/2 cups, but the screen reads 1 & 1/4 cups.... which is the correct measurement?

Pretty sure the screen is more accurate, he corrected his mistakes while editing. Sometimes you say wrong things without realizing it lol I can very much relate.
It was just a preference thing I believe. Like he mentioned, he put in 1/3 cup cornstarch but you can also do 1/4. I'd recommend doing what he did in the video. I made the filling based off the recipe and it didn't work out well and had to make it again using the measurements he said in the video.
I just made this for xmas dessert and put in 1 1/4 cups sugar which made it quite sweet but definitely delish. 1 1/2 would be way too much I think!

Was there a mixup with the amount of sugar for the pie crust? In the video it’s 250g but the recipe on your website only uses 36g (like most recipes out there)

Howdy John. I used your basic technique for my pie today. I used coconut cream ( some what condensed coconut milk) instead of whole milk and I dialed the sugar back to 175g. Also I added toasted coconut ...so I guess that makes it a banana coconut cream pie!

Just use water
As I understand it the vodka works to wet the dough so you can work it and then when you bake the crust it evaporates quickly leaving the crust much more flakey. You can just use water.
Vinegar works too. Super tender pie crust.
