Honestly, I prefer making a custard base. My GF is lactose intolerant, so I use coconut cream, almond/oat milk 2:1 ratio. 3 egg yolks and 3 TBsp of cornstarch and/or some gelatin. Needs to get real firm. Cook and cool. I make Swiss Meringue for no-bake (double boiler) with the egg whites
It doesn’t necessarily have to be corn syrup, any kind should work, personally corn syrup is just my favourite to use but any other should be good too!😊
