Aww thanks Alicia, and you know you are doing something great. Children do learn about food from what they see at home. I once had a woman tell me she never learned to cook because her Mom would always shoo her out of the kitchen. Even though it can be messy and time consuming, one day when you have those kids :) invite them into the kitchen to cook with you. Small things like stirring and adding ingredients will help them feel at home in the kitchen. For me teaching my kids to cook is a life skill equally important as learning to dress themselves, knowing their ABCs, reading and writing. Because it will one day help them to care for themselves and lead to a healthier more fulfilling lifestyle :) Keep up the good work your "future kids" will thank you one day!

I did use some spelt, and coconut sugar. I went on a baking binge last night, testing recipes for a crowd, and this was the best! My favorite part is the strawberries inside!

I say totally skip the chilling part before pipping you can pip right away as long as you whip the cream to stiff peaks. After they are piped then yes chill to hold their shape and to keep fresh, until ready to serve. Enjoy!

And if you do, do you sift before or after measuring? Do eggs and other ingredients have to be room temperature? Can I make a double batch without messing up the batter? I’ve had bad experiences with cupcakes in the past 😢
No sifting necessary! Just a spooned in amount of flour when measuring (don't "pack it in" otherwise you end up with more flour than needed! And sure you could double the recipe no prob :) (Of and for this no need to have ingredients at room temp) . hope you enjoy!
