- It's Summer and that means I finally have an excuse to eat copious amounts of whipped cream with strawberries after dinner (and lunch...and breakfast). To mix things up for myself, I have baked these delicious Strawberries & Cream Cupcakes for a twist on my favourite way to eat my favourite fruit.
RECIPE -
For the strawberry goo...
a punnet (400g) of strawberries
2 tbsp sugar
For the cupcakes...
125g self raising flour
125g caster sugar
125g unsalted butter, softened
1/4 tsp bicarbonate of soda
1/4 tsp vanilla extract
2 lg free range eggs
1 1/2 tbs whole milk
2-4 tbs strawberry goo
For the icing -
100g unsalted butter, softened
225g icing sugar, sifted
2 tbs double cream
2-3 tbs strawberry goo
Strawberries for decorating!

FOR EVERYONE IN AMERICA, HERE ARE THE INGREDIENTS:
for the strawberry goo, use:
1 2/3 cup strawberries (or a little less than a pint)
2 tbsp sugar
For cupcakes:
1/2 cup regular flour + 1/2 tsp baking soda (which is how to make self raising flour)
1/2 cup granulated sugar (which is american caster sugar)
1/2 cup softened unsalted butter
1/4 tsp baking soda
1/4 tsp vanilla extract
2 large eggs (free range or farm fresh are best!)
1 1/2 tbsp whole milk
2-4 tbsp strawberry goo
bake at 340 F for 20-22 minutes
FOR THE FROSTING:
6 tbsp softened unsalted butter
3/4 cup +3 tbsp sifted icing sugar
2 tbsp heavy cream
2-3 tbsp strawberry goo

Thanks for this recipe Jemma. I decreased the amount of butter and sugar in the cupcakes, and I found the buttercream was far too sweet so I had to cut it with fresh lemon juice. I managed to just about frost 12 cupcakes. Made these for Mothers Day, and my mum really liked them. The cupcake was light & fluffy. Thanks again!
Oh my gosh!!! Strawberry goo! I've been making my strawberry cupcakes with this stuff for years! You will never get a better strawberry cake with anything else. I will just make extra and keep it in the fridge and eat it on toast or dip cookies into it. So freaking delicious!

I just made the cupcake , it is so yummy. and the cake is fluffy. and even without the icing, still delicious just like the sponge cake. and I reduce my sugar... highly recommend this recipe...

these are delicious cupcakes. we used swiss meringue buttercream with the strawberry goo swirled in and oh my gosh, yummy!
I just made it and they were the best cupcakes I have made before. So moist! The only things I would change next time I make it would be 1) mix in more strawberry goo to my batter, 2) decrease the amount of sugar in the icing and 3) maybe dribble the strawberry goo on top instead because I really like strawberry goo and mixed in too much. The consistency of my icing became too runny as Jemma had warned.
I've made these as cupcakes before and they were delicious! I was wondering if I could double the recipe for two 6" cake pans?

But I am sad today, This recipe was easy but I don't know why it went bad
It got dry though I bake it for 19 min. Was will when I got it from the oven, I made a cream cheese frosting but it had a thin texture so I put it in the fridge, at that point it went completely dry!!
I actually got a very positive feedback from the people who ate it!! Thanks so much

i made this cupcake but with the goo recipe in your book which uses 110g of sugar and it tastes jammy and delicious!! i also used your swiss meringue buttercream recipe for icing on the cake. it was a-ma-zing. the only thing that i would change is to decrease the amount of butter in the swiss buttercream but other than that, i am no longer going to use american or british or the stiff and sweet icing no more

I made these today. But I could only find some very big cupcake liners so I only got 6 cupcakes. And I guess I overfilled the liners, so instead of strawberries & cream cupcakes, I got "strawberry ripple muffins". Since they look more like muffins i didn't ice them with buttercream, but they're still delicious and really moist. I'd definitely make them again and try my best to make them cupcakes instead of muffins. Sorry Jemma, I destroyed your recipe😂

i love this recipe i made this when i was 11 years old now i'm 12 and i made this at my parent's wedding anniversary they loved it minus the butter cream my mom is a little sensitive to sweetness so next time i need to replace the frosting with whipping cream or swiss meringue butter cream but thanx for sharing this recipe
I know this is an old comment, but have a go at Jemma's swiss meringue buttercream. Its a lot less sweet and smoother than traditional buttercream

Made these today for a summer potluck--so good!!! Also, if you double the cake/buttercream recipe, you do not need to double the recipe for the strawberry goo; the recipe for 12 cupcakes is actually plenty for 24 (with extra!)

I've always used much more milk in my cakes. Does that change the texture at all? Is that what makes it a sponge instead of a cake or is that just a difference in verbiage?

Hi Jemma, i've been meaning to ask this for a long time... i've noticed among all bakers online that i'm following, you're the only one that put everything all of your ingredients (except the milk and vanilla) at one go and mix up the batter. while most of the bakers use to cream first the butter+sugar+egg then slowly adding the wet and other dry ingredients. Is there any big difference in the batter or the cake itself? thanks in advance!

It's essentially the same thing as long as it's wet ingredients first then the dry especially in this case it's whole egg in the recipe and there's butter plus bunch of rising agents so imho it's not necessary. Of course you can beat the butter&sugar alone to cream it thus holding more air and gives a fluffier overall texture. Arguably you can even separate the egg whites and beat it aside but i don't think it's gonna make a noticeable difference as it's not something like an angle food cake or a chiffon which relies on the egg whites too hold the structure.
The main purpose of creaming the butter and sugar together is to create more air in the batter to ensure the cake will rise and be fluffy. Since Jemma is making cupcakes (small in volume), and she is already using self-raising flour and baking soda, it is not absolutely necessary to cream the butter and sugar. You will notice that she uses the creaming method when she is making bigger cakes like layered cakes and pound cakes.
Made this today, it only yield 9 cupcakes. The cake is great, need to work in the frosting. Thanks for the recipe!

125 g of sugar was too sweet for my tasting so next time I will reduce it my half. other than that the cupcakes came out so soft and airy.. Just took it out the oven to taste. The best moist and textured cupcakes ever :D Thanks for this recipe :D

I tried the cupcake today and it amazing, especially the strawberry goo, my kids loved it so much and have 3 straight away. I think it a bit soft, can I change self-raising flour to plain flour and how much plain flour do I have to use?
I made these and they turned out amazing.. my kitchen smelled like strawberries for a day.. loved it..
But I guess 100g butter for the frosting is too less, I got to frost only 9 cupcakes, I didn’t get the frosting for the other three cupcakes. I think 150g of butter for frosting would be good.

this is the exact recipe:
Strawberries and Cream Cupcakes
Ingredients:
Strawberry Goo
a punnet (400g) of strawberries
2 tbsp sugar
Cupcakes
125g self raising flour
125g caster sugar
125g unsalted butter, softened
1/4 tsp bicarbonate of soda
1/4 tsp vanilla extract
2 lg free range eggs
1 1/2 tbs whole milk
2-4 tbs strawberry goo
Icing
100g unsalted butter, softened
225g icing sugar, sifted
2 tbs double cream
2-3 tbs strawberry goo
Method:
Add the strawberries into a food procecer until they are completely liquidized after about 30 seconds it should be ready
Put this through a sive into a medium sized saucepan scraping it to get rid of any seeds and pulp
Add the sugar and give it a realy good stir
Put it on a medium heat and let it come to a boil and then turn the heat off and simer for 30 minutes until it is a really nice thick consistency
Add the self raising flour, castor sugar, unsalted butter (that is room temprator), bicarbonate of soda and free range eggs. Beat that for 30 seconds with paddle attachment on a medium speed
Until it is mixing add the vanilla extract to the milk
After it is well combined gradually add the the mix of vanilla extract and milk and beat for about 1 minute
Now add a couple of tsp of strawberry gooand mix until a ripple is seen
Take the batter and pour into the cupcake trays lined with cupcake liners
Now bake in the oven at 170 degrees C for 20-25 minutes
While the cupcakes are cooling make the icing
Add the butter and beat it with a paddle attachment on high speed for 5 minutes
After 5 minutes add the icing sugar in two intervals mixing well in between
Now add the cream add a tbsp and add more if it needs it
Mix the mixture for 1-2 minutes to make it nice and fluffy
Now add a couple of tbsps of the strawberry goo into the icing and add it into a icing bag with a star tip
Ice a swirl and and add a strawberry
