- Summer Summer Summer time...(summer tiiiiime!). Summer time is strawberry time and these Strawberry Shortcake cupcakes take a classic treat, dial it up a notch and add a little cupcakey magic for good measure. They're a bit hit when they're in the C&D shop so I know you're going to love them!
Recipe...
For the buttery shortbread base -
100g shortbread biscuits, whizzed up to a fine crumb
10g melted butter
5g golden syrup

For the strawberry goo - • The Quickest Easiest S...
For the Sponge -
125g self raising flour
125 caster sugar
125g soft unsalted butter
1/4 tsp bicarbonate of soda
2 lg eggs
2-3 tbsp strawberry goo
For the Swiss meringue buttercream - • Swiss Meringue Butterc...
add 3-4 tbsp of strawberry goo to taste
For the Pie Crumb (this will make more than you need but it will keep in the fridge for up to a month-
190g plain flour
pinch of salt
15g caster sugar
125g melted butter
1 tbsp water
(add more flour if it seems too wet)

Ooh I tried this flavour in your shop a couple of weeks ago! I loved your cakes and your wonderful staff who couldn’t have been friendlier.
This cupcake is like the base lego set (basic vanilla cupcake) combined with all the fancy extension packs 😂 you have now given us all these elements (cupcake, buttery biscuit base, fruit goo, filling, SM buttercream, dunking, topping) and we can assemble them to whatever cupcake flavour we like 😉
OMG, I loved the behind the scenes footage with the bloopers and shenanigans 😘 It’s not easy being a RUclips celebrity and baker and presenter at the same time!
When I come to London, I’ll definitely pop by your shop of wonderful treats! ❤️

Jemmaaaa! You make baking so much fun!! Your delightful presentations and clear explanations have helped me improve so quickly and now baking has become my new hobby! I am allergic to most all baking staples, so I never got in the baking habit b4, but I follow the vegan recipes mostly or make vegan substitutions when I can. I always bring my creations to work to share so I won't eat them all - cuz I will (😋🙈 ) and my co-workers enjoy them quite a lot. most of the usual ingredients can be substituted. just have a look around for different kinds of flour, you can even get your hands on vegan egg alternatives :)

They look so good, personal preference but I would swirl some more goo in the cake batter and the cream filling as well for pockets of extra jammy loveliness.

I'm sure American buttercream would be delicious - it's just much sweeter than SMBC, so you may want to use less.

I’m in love with this recipe! Couple things though... can we get the temperature in Fahrenheit as well? Also is it important for the fan assist aka convection? I have a very basic apartment oven (which should be fancier considering the cost of rent).... and all the conversions I’ve come across seem way to hot for baking cupcakes (unless your after tough little stone like cakes)... help!!!!!

Hi Jemma , every video is thorough , inspirational and so yummy ! I'm still in the learning stage when it comes to baking. More than the recipe , I find using the oven quite tricky. Your cupcakes were all light brown and even on top . But I get mine burnt in the bottom and undercooked in the middle . Can you please do a masterclass on oven settings and usage like when to use bottom only or top only or both ? I'm currently using a 40 litre oven .
Since every oven is different, Jemma can't possibly do a comprehensive masterclass on that. But she's given quite a few tips in her recent cupcake base master class. It all boils down to trial and error, though. Good luck getting to know your oven!!

Hi Jemma, I have a question about the oven. Here in the Netherlands we have hot air oven which is like a conventional oven(upper and lower heat) but with a fan in the back that distributes all the heat. and just a conventional oven(upper and lower heat). My question is which one do you recommend using for your recipes? Also is it better to use one for cupcakes and the other one for the big cakes?
Btw, I love your video’s I’ve made some of your recipes and I love the Swiss meringue buttercream!
Hi. I use the oven you mentioned. I usually turn the fan and upper heat on when baking and put the rack lower. I find that my cakes or cookies might bake 1-2 minutes shorTer than the mentioned time in the recipe so I just keep an eye on them
