UKRAINIAN UNSTUFFED (LAZY) CABBAGE ROLLS | my grandma's recipe

  • Today I'm sharing my grandma’s Ukrainian Unstuffed Cabbage Rolls made with any ground meat, rice, chopped cabbage and savory tomato sauce. She would roll cabbage rolls before work but on busy days she made this lazy man version. ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️
    ►INGREDIENTS:
    1 large onion, chopped
    4 garlic cloves, minced
    1 tbsp oil
    1 lb ground turkey or any meat
    1 cup brown rice, uncooked
    3 lbs cabbage, coarsely chopped
    28 oz can tomato sauce, low sodium
    14 oz can diced tomatoes, low sodium
    2 cups water or any low sodium stock
    1 tbsp oregano, dried
    1 tsp thyme, dried
    1 tbsp vinegar
    1 tbsp honey, maple syrup or sugar
    1 tsp salt
    Ground black pepper, to taste
    3 bay leaves
    Fresh dill, parsley, green onions and yogurt/sour cream for serving

    ►DIRECTIONS:
    1. Preheat large and very deep non-stick skillet or 5-6 quart Dutch oven on medium-high heat and swirl oil to coat. Add onion and garlic; cook for 5 minutes, stirring occasionally.
    2. Add turkey, rice, oregano, thyme, salt and pepper; cook for 10 more minutes, breaking into small pieces and stirring often.
    3. Add broth, tomato sauce, diced tomatoes, vinegar, maple syrup, cabbage, bay leaves and stir well. Bring to a boil, cover, reduce heat to low and cook for 60-70 minutes. Do not open!
    4. After check if rice is cooked and if not (mine was) add 1/4 cup water, cover and cook for another 5 - 10 minutes.
    5. Serve warm topped with Greek yogurt and herbs.

    My mom used to make cabbage rolls, and I've seen many videos where people demonstrate making them, but you're the first to show how to make them unrolled. I think I'm going to try it!

    I'm Slovak, this is very similar to my mom's. Difference is, half ground pork, half ground beef is used. Also, drained sauerkraut is added. Thanks for this recipe...much easier than stuffing the cabbage leaves, which need to be cooked before stuffed. Eliminates two big steps...!!

      Yes, lazy version is so much easier. There are so many variations of cabbage rolls among Ukrainians and all Eastern European countries. I love to add sauerkraut sometimes!

    Very good, took about two hours to make total and looked watery at the end, but upon stirring it the beautiful cabbage conglomeration came to life. Thank you.

    Thank you!!! I've been craving golubki for a while now, but couldn't find cabbage big enough to make the rolls. finally decided to get a smaller head of cabbage and just try making up something :) Your recipe popped up at the PERFECT time and I love that rice is cooked with all the other ingredients. :) I am also born and raised Ukrainian, but in my family, we've only had rolled cabbage rolls, so when I told my mom today that I will be making them this way, she did have a mild shock LOL

    This recipe has good ingredients, attention to detail such as seasoning & proper cooking/layering of the ingredients. I made up a recipe in my head once from memory of how my baba made them & it was so close to yours except I cooked the rice separate, which I will not do again as it was too difficult to incorporate & it was a missed opportunity for more flavor. Thanks for this post.

    I would like to try this way of making unrolled cabbage rolls, it will be a lot less work but I have a question, can this recipe be made in a slow cooker? of course cook the meat first and do the rest in the slow cooker! Your recipe looks so delicious, I will try this method next time! thanks for sharing ! Oh and by the way, why don't you try cooking on an induction cooktop? I have one, and I can tell you that it's MAGIC!!!

      For slow cooker it might need different amount of liquid but you can try. Also it tends to burn so I would watch it. Not sure how long. You can see this recipe ifoodreal.com/instant-pot-cabbage-rolls/ if you have Instant Pot. Sorry for late reply - technical difficulties.

    I don't understand one thing. You say your grandmother is Ukrainian and then you say you spoke russian a lot. Were other members of your family russian?

      Correct. I still speak primarily Russian language especially since my husband is Russian. There is a lot of history between Russia and Ukraine and during Soviet Union eastern part of Ukraine including Central City Kyiv predominantly used Russian language as their main language of communication. Same goes for all former Soviet Union republics of that era. Since 1991 when Ukraine became an independent country, Ukrainian became primary language and more and more people started using it.
      And yes we had a lot of family in Ukraine and in Russia. We have always lived peacefully...

      @@ifoodreal I really don't understand how you can say that you had always lived peacefully. What about the Holodomor genocide when the Russians starved the Ukrainians? My father was a teenager when that was going on and he lost many family members from starvation. That the Russians forced on the Ukrainians. My Paternal Grandmother was raped in 1916 by a bunch of Russians soldiers in her hut, while her 3 year old child watched. I don't consider what my family experienced as the Russian and Ukrainians living peacefully.
