INGREDIENTS
12 ounces (340g) cream cheese
1/2 cup (120g) salted butter
-melt in the microwave for 1 minute, or use a double broiler.
4 large eggs at room temperature
1 cup (120g) egg white protein powder
2 teaspoons (12g) baking powder
1/2 teaspoon (2g) baking soda
1 teaspoon (2g) xanthan gum
1/2 teaspoon (2g) cream of tartar (optional)
Bake at 320°F (160°C) for 40-45 minutes, until toothpick is clean when inserted.

Just made this bread this morning. 59 year old male with almost no baking experience. The recipe was easy to follow and the bread came out perfect. Thank you very much for this great recipe.

The outside of my bread isn't brown like yours. Is there something I'm not doing ?
I made this at 9 pm. so I could have some tomorrow morning. I tweaked a little added two tablespoons of butter powder and two tbsp of allulose. I made a couple of buns too because I have the silicone forms to make them. The smell of this bread was incredible. I've tried different variations. and I think this will be my go-to recipe. Thanks so excited to have eggs and bacon on it.
@@bethjohnson8719 if you want more browning you need to either add allulose or some honey
mine turned out golden not so dark. but it's perfect 👍 I like the wetness. I didn't use parchment paper I just used butter to grease the pan.
I added 4 g of yeast mixed with a little bit of warm water. hoping it taste more like bread 🤷. took it out of the oven letting it cool so far looks good kind of spongy. this tastes the best and it didn't flop like some others that I tried.I can't believe no after taste and actually has a good taste. closest thing I've had to bread so far. thank you so much I'll be making this over and over again. And it was easy to make not like some others with "marshmallow peaks"...
Love this bread. I was running out of egg white protein powder so used 1/2 c each of the egg white protein powder and 1/2 c whey protein powder and it turned out fantastic! My favorite bread recipe either way!

First impression: a little eggy, a little on the moist side. But overall a great replacement for regular bread.
For me it's better than using pork rinds (causes gut inflammation) or beef powder (too expensive). It's as she said, the taste isn't overpowering. It is neutral.
I tried toasting it but no luck so I made thin slices and put it in the dehydrator to get the perfect toast like texture. My picky toddler ate it without any complaints. Thank you for this recipe. I'm happy to add this to my arsenal for the days I'm not in the mood to eat a lot of meat. Very filling 👌
I just made a loaf of this. I did add salt and a little sweetener. Oh my gosh this is the best bread ever! I've been eating psmf bread for a while and with the right tweaks I've gotten a bread that I like pretty well, but I will be making this more often now. Thanks!! I might add that it is reminiscent of corn bread and it toasts.

Wonderful bread recipe! So easy I’ve made it three times now and each time I refined the technique. taste is great. Texture is a little off, but a lot closer than any other ones I’ve tried. And it’s so much easier.

Just made this and tried it. This is by far the best one I've tasted.
I just sliced some of the bread put pizza sauce on it with mozzarella cheese and pepperoni. unbelievable 👍 this is the best versatile carnivore bread that tastes good and no aftertaste 👍

I made my first keto loaf tonight without the egg white powder. I skipped on the egg white powder because eggs are already expensive enough...sadly my loaf deflated hardcore. HOWEVER I am still so happy with how flavourful the bread came out to be. I will try again soon with another type of powder to mix in.

Okay, I tried it this morning and made faux egg Mcmuffin with mine because I made buns. Next time, I might make a bunch of buns. Let me tell you how satisfying this was. I do not miss bread at all. My husband eats normal American diet & I do not feel deprived eating carnivore. I am so thankful for finding this woe. So, thank you for this recipe. ❤ 😊

Love this bread, but it seems to go bad pretty quickly, I'm guessing because it's so moist until you toast it. Any suggestions to help it "keep"? Does it freeze okay or keep in the fridge? I've been omitting the cream of tartar as I don't have it, would it make a difference to the speed at which this bread molds?
Also, I see in the comments you say the instructions in the description is for a doubled loaf, which is all I've made...if halving it, what size loaf pan are you using?

I made this recipe tonight. Followed directions as shown. And it really puffed up. Was really good tasting. I noticed the tsp. And grams are different. Also was it suppose to add both baking soda and baking powder? My bread looked like egg white bread.
You said you doubled the recipe to get this big loaf. So double the recipe you have listed or is the recipe listed already doubled? What size loaf pan for this doubled loaf? Looks incredible! Can't wait to try! Will be an awesome change to food choices for carnivore diet!
So sorry for responding so late. My life has been a bit messy since having a baby :). The recipe listed is for a big loaf. The loaf tin it's a 600gr loaf tin 25cmx15cm.
Looks delicious. I was looking for carnivore/keto friendly recipes to make dressing. I wonder how this tastes if I toast it to dry it out and mix with grilled onions and celery etc.

The bread looks marvelous! But the cream cheese. I love cream cheese but cream cheese doesn’t love me. LOL! But I might can get away with eating some in bread form. So I will definitely give this recipe a try soon. I’ll make some buns for burgers and egg sandwiches when I do.

Thanks for sharing this recipe! I'd tried Mariah Emmerich's protein sparing wonder bread which is too bland and spongy for my taste. It also collapses quite a bit after baking.
Since discovering this recipe I've made the bread four times. My husband, who isn't carnivore, loves eating it toasted. I like eating it fresh for the first two or three days and then also toasted. It helps me increase my butter intake.
I've tweaked the recipe a bit. Found the crust too dry and hence reduced the egg white powder and increased the butter content a bit. Since I make Dr. Kiltz's ice cream on a regular basis, where I only use 3 egg yolks, I make this bread with less egg yolks, which should reduce the eggy taste. Mine actually doesn't taste eggy, but buttery, a bit like Swiss Challa bread.
It also looks fluffier than the one in this video.
Here's how I make it:
110 g butter
300 g cream cheese
3 whole eggs
3 egg whites
70 g egg white powder
30 g beef gelatin powder
2 tsp baking powder
½ tsp baking soda
¼ tsp stone salt
1 tbs allulose (simply because bread is usually made with sugar for the yeast). Will try it without it next time.

Followed Danielle's recipe few times, the last 2 times after rising crazy in oven loaf collapsed very bad, was unusable after that.

Yes xanthan gum is for texture, but is optional, you can leave it out if it bothers you or you don't have it.

can you not use cream cheese for this and can you use beef gelatin instead of egg white protein powder or maybe just use liquid egg white?
That sounds like it would be completely different recipe more similar to the PSMF loaf for which I have many videos on my channel! Or you could also try the carnivore brioche bread (also on my channel)

it's avocado oil spray that I found in TKMAxx
Rapeseed is another name for Canola oil if that helps.
I used butter without parchment paper and the bread slide right out

We've ttried other recipes and while the taste was awesome they were a bit chewy. How is this one?
Hmmm this might actually be a bit more chewy than the first one as it's more dry.
I made a this bread and it came out looking great. Had a piece while still warm and it was delicious. However as it cooled down it began to shrink and now is about half the size it was. What did I do wrong? Also I used a food processor which made it come out better but again shrank down a lot.
Could be it needed a bit more time in the oven? If the top was too brown, you could shield it with foil
Ok. I had it at 325 for 45 minutes. So keeping it in longer will keep it from shrinking?

Hi. Looks great. Where I live egg white powder costs so much. Also, I have a lots of vanilla flavour whey protein powder. So can I use egg whites instead of egg white powder and for sweet can I use vanilla flavour whey protein powder in a similar bread? Thanks if you have time to answer.
I'm not sure, but I think the egg white powder is used to provide body for the loaf. You might be able to substitute whey protein but it might change the structure and taste. I don't think liquid egg whites would work the same way. Maybe someone on here has experimented and can give you a more definitive answer.
That's all I had and I substituted it with whey and it came out perfect. The vanilla flavor gave it some sweetness

Probably not, the powder acts like a flour.
I was wondering the same thing. I might try this and beat egg whites till stiff peaks, then fold it into the rest.

It will be too wet with egg whites I think. If you try, I'd suggest whipping egg whites first.

You can just leave it out! Shouldn't make much of a difference!

I tried your bread twice and both times they looked beautiful and then when I took it out it collapsed, and it looked like someone sucked all the air out of it. What did I do wrong?
Maybe not baked enough? This bread is that soft so that it could collapse in my experience.... But you can also try to switch off the oven, leave the oven door open ajar for 10 min before taking it out.

I'm tempted to try it, but I don't think I will. It's about $9/loaf when you break down the cost of the ingredients. BUT...if you're adhering to the carnivore diet, it could be worth it to have some bread make it's way back into your diet. LOL
Yeah, unfortunately the cost of ingredients has gone up a lot, eggs are crazy expensive right now.

Looks good but not strict carnivore
It can be if you don't add any of the powders like baking powder etc.
It tastes great! But when I checked it at the 35-min mark, it was coming out of the pan along the edges, leaving a kind of trough down the middle length of the loaf. It looks too deformed to use as a slice of bread for a sandwich. I thought I followed the instructions to the letter, where did I go wrong? Looking at the comments, and the lack of any comment that comes remotely close to this problem, makes it look like this is squarely on me! YIKES!!! What did I do? What did I do?
Hmmm, maybe the baking pan it's too low?
@@StayFitness I wish it were that easy. I put it on the top rack, thinking it would be contained in the pan like in the video. But it rose high enough to get tangled up in the upper broiling burner. When I put it in the oven, the batter filled the bread baking pan about a little over half filled, maybe 3/4 filled, but I think it was closer to just over half. I had three thermometers on it, so I know the temp was really close. I'm very analytical from working years for process engineers. I triple checked all the measurements. And use all the suggested ingredients. It wasn't browned on the top at the 40-min mark, so I left it for another 5-min and the color looked great. It just had a huge deep valley running the length of it with the sides running over the edges. If I could get it to stay in the pan and look more like a loaf, I would be using this for bread big time. It holds together great, yet it tears nicely. I'm lost, I don't work in the kitchen that much.

put it on the middle rack. and make sure there is room for rising up.
This happen to me. I think it’s the blender. Try just hand mixing like video. Too much mixing activates the baking powder.

it's not dense at all. you did something wrong.
Got this bread in the oven now.... yuck smells like burning eggs. 😢 and the blender was a royal pain to clean... the powders stuck to the lid and I had to scrape down the sides Several times. Highly doubtful that I'll make this again.
I used a stand mixer. this is the first carnivore bread that actually doesn't smell bad. I'm not sure what you did wrong.😮
