    Wanted to share my attempt on this bread. First, it looked really funny but maybe I can work with it and somehow come up with a solution. Second, it was delicious. I will never go back to another recipe. Best I've ever tried to date.

      you can eat bread, real bread, just slice it super thin if you want a sandwich, or only have 1 slice. Who says you have to have 2 pieces of toast anyway? 1 is fine!

    Thank you for posting this. It is the simplest I’ve seen so far and an actual loaf of bread!!!
    My husband loves bread, but has become so sensitive to regular breads now, driving up his blood sugar. It has been so hard trying to get him to give it up! 😰
    I hope this will turn out for me to be able to comfort him! It is so difficult eating sandwiches without bread, when you’ve been used to eating them with bread all your life!!!

    I just made this and the texture is nice and soft, not like styrofoam breads i have made previously. Mine collapsed quite a bit though, so next time I'll leave it in the oven for a bit longer with the door cracked open and oven turned off. I also added a bit of grated Parmesan

      I am so glad that you like the texture. Also, great idea on leaving in the oven for a little bit longer. You could also try making sure to beat your egg whites a little longer.

    I just made this but it deflated more than I wanted. I don't think I had my egg whites stiff enough. Takes a long time with a hand mixer. Even though it doesn't taste like bread, I do like the taste. Next time I'll try an extra egg white and keep whipping them until I'm sure they are thick enough. This would be perfect for sandwiches for those who are diabetic or, as with myself, pre-diabetic.

      Yes, it does take a long time to whip the eggs. you are right it’s hard to explain the texture, but it does really taste good when making it into sandwiches.

    Nice - but let me give you great advice for your wood cutting board. 1) sand it down (get sand paper online). 2) get Tung Oil - brush it on thoroughly on both sides. 3) let it air out for a day or two. 4) repeat 1-3 about three or four times. Better yet - go online to watch videos about using Tung Oil to finish cutting boards. Will protect your knife, your cutting board, make it look nicer, will make it easier to clean, more sanitary and more fun. Great video btw. Looks tasty.

      Tung oil is not food safe. Use mineral oil.

    Can egg whites be used instead of egg powder and water? That egg white powder is 8 oz. I can't see using that entire canister of egg whites on one small loaf of bread.

      Yes, you totally can. Look at what the ratio would be online for egg white powder versus egg whites and then you do not add the water.

      I haven’t tried it personally, but a substitute website said to use 2 cups of egg whites for one cup of egg, white powder. And then don’t use the one cup of water.
      So you would use 2 cups of egg whites, and one cup of cottage cheese

    Not a fan of any cloud bread bc it looks and tastes like angel food cake, which I’m also not a fan of. Also, I hate having to beat egg whites separately for any recipe. Crystal, however, is adorable and I really like her presentation. Very helpful!

      it is usually gone so fast that I’ve never needed to freeze it. I usually just keep it in the refrigerator, but it will probably freeze OK once it is sliced.

    Hmm. Don’t they say that egg whites without yolk actually cause an insulin spike because body metabolizes pure proteins the same as sugar? Can we do this with a whole egg?

      You could try it maybe separate it first and beat the egg white to make it fluffy and then add in the egg yolks after that

    How about turning upside down to cool. Must keep the surface of bread elevated so It doesn't touch surface of counters. That's what I do for angel food cake.

    I have wanted to make this but the egg powder is $ 40 for just over 7 oz
    I tried 2 different recipe to make it with just egg white and it does not work.

      What happened when you tried to use the egg whites? it actually does work with egg whites as well are you finding that it’s caving in more ? a lot of people like to add a little bit of cream of tartar

      @CrystalsCleanKitchen thx But it goes flat after it comes out of the oven doesn't hold it Structure so by using more cream of tartar This problem will not happen. I used a cup and a 1/2 of egg whites And I think it was a teaspoon of cream with tartar. Could you recommend a good amount to use. Thx

      @evaanderson7620 use only one cup of egg whites and I would say a half a teaspoon of cream of tartar and you are beating them until a stiff peaks have formed correct? Sometimes if you don’t beat it enough, it’s not great.

      The cottage cheese is mainly for extra protein

    The recipe seems easy and delicious, BUT $25 for 8oz of Egg White powder and $1 cottage cheese makes this $26 load of bread. 8-12 eggs whites make a cup, so at average (Oct, 2024) of 35 cents an egg, that's $2.80-4.20. $5.20 a loaf is a lot more reasonable. Plus, you still have the yolks.

      You could use monk fruit if you put it in the blender and made it a powdered monk fruit otherwise Allulose would work well also

      Yes, you could use liquid egg whites. However, you would not add the water that I said to in this recipe.

    I tried your bread and didn’t work at all. I don’t give opinions unless I try them first.
    The consistency it’s awful and still feels wet inside even thought it’s completely cooked. I don’t like to bite into a sponge consistency.
    Easy is not always worth it.
    I am sorry, but I think this recipe needs further improvement. It’s nothing wrong with trying new ideas, but requires more practice. I am a very good cook to begin with, so it helps a lot.

Also, with the new research showing the metabolic benefit of using Allulose, I was wondering if you have tried to incorporate Allulose, (exclusively), in your baking recipes. I know it can be tricky with how it browns so quickly. If you have any recipes you can share using Allulose successfully, that would be awesome.       I actually use Allulose for most of my recipes. I buy a big bag of it from Amazon and it generally will work for almost anything I do.

    Egg white powder is WAY too expensive even at Walmart. It's $30 for 8 oz!!!Sure wish there was a substitute for that. ingredient.

      You may not need the cream of tartar if you did use it maybe a half a teaspoon

      I asked Alexa and she said eight egg whites is equal to one cup of egg white powder. But I have not tried it yet also, you would not need the water in the recipe
