This is the first bread that REALLY got my attention. Looks good and I love the ingredients. I think I have every ingredient for this bread recipe. Looks like a true winner. Oh yes, love your Kitchen Aid Stand Mixer too. Never seen one with a design like that.
Recently low carb (doctor's orders!) & looking for good bread substitute as miss my 🥪! Just tried this as a first option & despite not being particularly skilled in the kitchen & a first go it's worked out lovely! Thanks for this.
Now to try out a few variations with coconut/ cardamom etc for naan subs 😋

@Thesugarfreemom I failed many times when I tried to make the Protein Sparing bread by Maria Emmerich, either the bread sunk in or the bread texture was like memory foam. I'm going to try this bread and I'll let you know how it turns out. Thank you and hope everything will be good.

I’m going to try this. After making, tasting and throwing away the PSMF bread 3x, because it tastes like you are eating a tasteless sponge. I gave up.
When I started keto 2 1/2 years ago I made the original cloud bread and it was okay. I added a little nutritional yeast and some psyllium husk powder and a bit of salt and it was palatable, not great but you could make a sandwich with it or add some sweetener to the mixture and some sugar free dried cranberries and have an edible light sweeter version to have with tea or coffee. I wanted to like that protein bread so much but it’s just not good. I usually like Maria’s recipes.
So, it’s back to cloud bread and I’ll tweak it to your recipe! Thanks.

Make a yolk oliveoil and water eggwash. It will make the bread better

What type of protein powder do you use ? Most protein is super dry when baked.
I use the Jay Robb brand, unflavored

Just finished making this. Glass loaf pans are a no go for me. Epic fail. I buttered them and the bread still stuck to the bottom and sides. Sad. I had high hopes for this.
what about parchment paper? I'm trying to avoid teflon. Silicon is supposed to be safe, dunno if they make bread pans though
I'm a long time keto-er, starting a program called Slape ReClaimed. The eating plan is somewhat different, but many similarities. It is designed to address inflammation. Anyway, on this plan, I cannot have whey protein. Are their any substitutes for the whey?
PS ...I do plan to try this someday. ;)

Instead of sour cream. I tried it with Greek yogurt and it was delicious but dry. Does the sour cream make it more moist ?? Has anyone tried it with mayonnaise?
Yes, absolutely the sour cream makes it moist. My newest dairy free version uses mayo.

I just order casein protein powder to mix with the whey protein, they said in a video it would give the bread more moisture, so excited to try it . The bread tastes great and not eggy tasting at all…. Even though it is a tinge dry . On this other video I watched they said the casein and whey protein blended together will give it more moisture. Gonna try it with the sour cream and the casein…Can’t wait for my order to come in. Your recipe is a keeper but definitely gonna try this tweak with the casein protein. 👏👏👏
needs Whey Powder (protein)
It's ALWAYS best to whip the yolks first so that the whites are whipped just before adding them to the yolks. That way the white don'es stand and start to deflate. Be sure to wash the yolks off of the beaters BEFORE whipping the whites. Here are a couple of examples of it done in the correct order::

She has a stand mixer and while the whites were mixing (for 15 minutes) she did the egg yoke. #multitasking

didn't work out your recipe. bread turned out like a memory foam, nothing like a normal bread at all. waste of time and ingredients.
