Great video - simple to follow and understand and powerful as a consequence. Out of interest, the 'total calories' column in your tables is for what weight of the food? Or is it a serving size measure? I haven't been able to work it out. Sorry if I missed this in the video!

NOTES - read along WHILE listening to vid to catch all his details:
    1) fats - olive oil, coconut* oil, meat fat, butter, ghee, mct oil.
    2) meat - the fattier, the less insulin effect.
    3) eggs
    4) dairy without lactose (like hard cheeses).
Low carb / low lactose dairy is: cream, sour cream.
High carb lactose dairy is: skim milk, low fat dairy.
    5) leafy greens. - lettuce - fibrous filler food sources. Arugula, spinach, kale, etc. Add 2tbsp olive oil even better.
    6) non starchy, fibrous veggies - broccoli, cruciferous, cabbages, peppers, etc.
    7) nuts. - macadamia, pecans, walnuts, coconut* "meat"*, pistachios, pili nuts.
    8) seeds - flax, hemp, chia.
    9) oily fruits - avocados, olives.
    10) the low carb fruits are: (lemons, limes, currants, cranberries have less sugar than berries), blackberries, raspberries, strawberries, blueberries. Berries - esp the sweeter ones: 1/2 cup when eaten with heavy cream, the macros improve / less spike of insulin.
    11) - additional comment from me / other sources: eating fiber or a fiber rich food first, BEFORE eating more simple carb / higher glycemic foods, can also help cut the insulin spike from the simple carbs by 25-30%.
    * = Okay, this is serious now: I have the following info on the highest authority: Ryan Cyabyab, creator of "The Coconut Song" (available on RUclips):
The coconut nut is a big big nut
But this delicious nut is NOT a nut.
It's the koko fruit (doo doo)
    It's the koko fruit
Of the koko tree (doo doo)
    Of the koko tree
    From the kokopalm family!
    (la la la la la)
    😁🤗😜😂
    You're welcome. 🤗
(That song is actually worth checking out if unfamiliar - very catchy, good melody, fun. Great one for kids too.)👍

I agree, it seems like he likes balanced diets not selling high carb or high fat diets, but giving advice on balanced diets even though he kind of supports healthy high fat diets to some degree. High sugar and processed fat diets seems to be the enemy number one to health and I couldn´t agree more. As a type one diabetic (who works out 5 times a week and have an active lifestyle outside of that) medium carb, and medium fat has been the best option for me, which doesn´t mean medium fructose, medium processed margarine :)

I can attest to the keto diet as a type 1 diabetic. When I first went on it I lost 45 pounds and I have been able to keep my A1C near 7.2-7.5 over the last 5yrs down from 13! For the first time all the highs and lows are way more under control. I have found that when I get low sometimes still, if I eat some carbs like (depending on how low I am) some grapes and some cheese (protein) then it's not just a straight up high and it levels it out...I have learned a lot from learning about food and health, we have GOT to take responsiblity for our own health and stop being lazy fat butts about it! (I include myself in this!) I still struggle with my food addiction but my diabetes is under control for the first time in my 46yrs!

I have bought a new wardrobe and with delight donated shirts, pants, jackets and more. I listen to Dr Stan every night, over and over again as he keeps me reinforced. I have my first meal of the day at noon and don't eat anything after 8pm. Eight hour window for food, sixteen hour window for the body to do its work. I may have lost all that my body will allow but will enjoy the health benifits for the rest of my life. We were on a cruise a few weeks ago and I didn't eat bread, pasta, rice or deserts. LOVE your channel! I’ve been watching for some time and am a fan. I’m a very long-term ketoer - 11 years with a couple of low carb (under 50) per day and a sad break during the pandemic. When I started, and for many years afterward, there was little info and nothing like the proliferation of YT channels and FB groups. I had spent so long figuring it out and refining my diet through research. It was wearying, when the internet ramped up, to see the amount of misinformation being spread and the complete slavery to “the lists” with absolutely no knowledge to back their viewpoints up. When I did this in 2018 it took a few weeks before I lost 1 pound. I was actually at my goal weight for quite some time. Then we had the plandemic and I learned to make sourdough bread. That was my downfall. Although, I thought sourdough bread was more nutritious and less carbs.I guess I ate too much for too long. I put on 15 pound and can't fit into anything. Now that I'm back on Keto, I've lost 5 lbs in 2 weeks but it's much more difficult for me this time, and it took longer for the me to shed the first pound. This video was very helpful because I cut out all fruits and sweets and the craving for something to finish off after a meal was making me crazy. I'm accustomed to having a clementine or some berries and now I know that I can have some berries. Yippie!!! Thank you for your comment MiHiHemi...Many Blessing...

Great video! The only thing you didn't mention is that when we eat meat (sometimes a lot like being Carnivore) Gluconeogenesis does not happen automatically just because we ate meat. Gluconeogenesis is Demand Driven, not Supply Driven. It will only occur when certain cells have a need for glucose, it doesn't just run all the time, converting protein to glucose causing blood glucose to rise every time we eat meat.

Hi Dr. Ekberg. I started the carnivore diet last week. So far I've lost 2.7kg. I'll naturally have days where I don't feel hungry before 13:00, and other days I wake up hungry. But so far its working.
The reason I'm doing the Carnivore diet is because its a bit easier to maintain in a household where making meals for everyone's needs is impossible. I've also changed my to a better quality water supply. In my personal life I've noticed that I get a severe insulin response when I mix carbs with protein. Especially if its a lot of carbs with a little protein. Was wondering if you'd mind making a meal prep video?

I am reminded to combine foods (fats and fibre), to reduce their insulin response (and to allow nutrients to combine together for their best absorption). Giving up fruits just when they are all freshly abundant is really difficult, but I have to choose instead to achieve fat adaption. There is no sense in shooting myself in the foot after putting in all this time and effort! Thank you for the video, I've watched a lot of these top keto food videos, almost every single one of them are trying to scare you in some ways, like you can't eat this, you can't eat that.
You actually went into details and explained how it works, how it was calculated and everything, btw I love that chart.
    Thank you so much

What saddens me is having fed my children the standard diet of cereal and waffles with low skim milk and orange juice thinking we were feeding them something healthy. I really enjoy your explanations Dr. E of why and how keto works. What I can’t find anywhere is how to help those of us who have grown up on ethnic (Hispanic) diets. we’ve done keto for over a year; lost weight (30# ea), lipids normal for the first time in 20 + years, off anti reflux & bp Rxs, but still struggling with the cravings. How can a Hispanics not have tortillas, rice and beans??! A hamburger without bun?! 😳😆
We’ve done it but with a lot of struggles. we fall off the keto wagon and get back on. Thankfully we’ve been able to stay off the sugary drinks (pop and juices) since keto. The struggle is real. Any suggestions?

They also have this keto loaf of bread at Aldi's which doesnt really spike your insulin levels, and pretty great with plenty of butter if you toast it, I believe its around 3.50 a loaf of 10+ slices, pretty pricey but it gets to fulfill your carb cravings...
