Cucumber is not boring! Sliced thin with onions, dill, vinegar, salt & pepper. I also dice it with onions, tomatoes, olive, feta cheese, avocado oil, vinegar, salt, pepper and oregano. I’ve also discovered baby cucumbers which are so tasty and make a great snack straight up!
I have a recipe for sautéed cucumbers that I’ve been enjoying for 20+ years. It’s made with baby peas, which, of course, can be left out. Peel (or not…I don’t care for the peel) and slice cuke lengthwise. Scoop out seeds with a spoon. Cut into 1/3-1/2” slices. Heat butter and/or oil in sauté pan. Throw in cuke slices, and sauté till soft and browned slightly. Toss with salt, pepper, and chopped fresh dill. Edit: I just checked out another of Dr. Dan’s videos. Apparently peas aren’t too bad. I add a small box of baby le seuer frozen peas to the sautéed cuke recipe above, cook till heated through.
I'm down 30 pounds in 4 mos. after being diagnosed as diabetic, with numbers off the charts. I refused Metformin and went keto @ 20 carbs a day. My numbers dropped dramatically, and I'm staying with keto. My doctor is in shock at my improvement. Thanks for your great ideas .... I'm a meat/fish and green veggies fanatic now.

I eat a variety of chunked vegetables for my salads. Celery, carrot, cucumber, tomato, radish, and avocado. I love all the colors and textures together. Mini bell peppers are cool and refreshing and all of the vegetables you mentioned are filling and satisfying. Thank you for your video.
Hmm…your mini-peppers inspired me to stuff raw ones with puréed and well-seasoned egg, tuna, chicken, or salmon salads. (Puréed are easier to get into small veggies, than just flaked.)
Bok choy, with its white stalks and green tops is like two vegetables in one, and it is delicious. I stir fry it with tomatoes, crumbled tofu, and some chipotle seasoning for a great breakfast.
Thank you for such great info! I just roasted two heads of cauliflower to eat as a tv-watching, popcorn replacement. I don’t feel guilty if I eat a little too much! (I cut them into tiny florets, coated in olive oil with a bit of salt, although you could add any seasoning, and roasted them at 400 degrees a for almost an hour, checking and turning them every 15 minutes. They came out golden brown and delicious!) sounds like you do pretty much the same! I love roasting a bunch of vegetables at the beginning of the week, and having them available for a side dish, a snack, or salad additions during the week. This is so nice to have all these veggies on the “safe” list because I love them all!

Cauliflower crust pizza is becoming quite popular here in the states. You can find it at almost every grocery story in majro metropolitan areas. Thanks for the tips and also for pointing out many of these things considered vegetables are actually fruits (if it has seeds in it and it comes from a flower, it's a fruit). Cheers!

I use to be a vegetarian in the early 90s and I learned to love (and still miss) morning star hamburger patties even though they gave me the worst heartburn! Same with my keto lifestyle: learning to eat all kinds of things I use to think were gross like cabbage and brussel sprouts. Lol!

My daughter is a very green fingered lady...also an excellent and imaginative cook. She’s the mother of three strapping lads! She grows courgettes in profusion. The boys are thriving on her many ways of cooking courgettes. Soup, as part of a veggie side dish....even in cake. She is a wonder. We all love her and revere her culinary ingenuity ❤️
Subbed. Man going on 58 years old and have to nip in the bud this slow weight gain trend I seem to be living. A week in doing an 18-6 intermittent fast and low carb diet. Riding my bike to work as well, 12 miles round trip. Down 6 pounds in 5 days and feel pretty good. Goal is to be down at least 25 by mid July when I do turn 58.
Just discovered your channel. 😆 This is a really helpful video for someone starting low carb or keto. I'd add celery. Also, I just discovered celeriac and successfully use it in beef stew; it's very tasty, looks like small cubes of potato! I never understand keto critics who accuse us of not eating enough veggies - there's such a variety we *can* eat...

Agreed, but English language is full of messed up pronunciations of foreign words. Lisboa, the capital of Portugal, is pronounced and even spelled Lisbon. How the heck do you confuse an a for an n? Then there's München, pronounced Moon-shken. But we pronounce it Mew-nick, and re-spell it Munich. Why? Because we get confused by the u-umlaut? So dropping the e in Guacamole is but a minor infraction. :D Cheers from an American who spells colour with a u, and refers to that metal as Aluminium, because not even us Americans can get English right! LOL

the good thing I like to your system is the measurement. you use grams instead of cup which i live in the USA and very confuse about using cup measurement. just like lettuce, how do you measure ½cup of lettuce since it take space in between, whereas, if you measure it in grams there no fooling around the volume. nice video, thanks
I agree cups seem very confusing to me. Kinda handy when you're measuring stuff out, but not when you're talking about trying to get really accurate measurements!
I'm from the desert SW United States...its Gwa co moley (Mo lei) like Molly with a mole ;) I use radishes in a chicken "packet" made with foil, lots of seasonings and a little cheese. Thanks for a good video :)
Started dieting on 1st July after gaining a stone and a half due to menopause, and overeating during lockdown. After a couple of false starts I've currently lost 9 pounds, and I'm finding that eating plenty of good food, while cutting right down on carbs, is working well for me. Also my dad has type 2 diabetes, and that's obviously something I want to avoid.

Although I love meat I also love veggies. I even love Brussels sprouts. My mom served all those vegetables to us regularly. Perhaps that's why I love them.
Totally agree...I could never go vegan, but would also never consider going totally carnivorous, as I love vegetables too much. Particularly kale, cabbage and Brussels sprouts!

Things with a seed or seeds are fruits. They are ripe plant ovaries, the fruit of the plant. Yum. Roots, leaves and stems are vegetables. Petals are modified leaves.
Thank you for this presentation and all the links ! 16 different vegetables is quite a variety. There should be several good recipes amongst this list. If one isn't available, another could easily be substituted. This is the best time of year to light up the oven, too.
Cucumbers aren't boring. I love them. And mushrooms are delicious in anything (the non-vegetable/fruit btw). I sauté them in butter and put them in my scrambled eggs with cheese.

Avocado and tomatoes are fruit, I think! I was thrilled to see that you have aubergine and mushrooms on your list - I've been following Dr. Eric Berg previously & I think he discourages eating aubergines and mushies! He's quite hardcore actually. I'm so glad you say that they are okay! I miss mushies and aubergine! Thank you!
Dr. Ekberg has never said not to eat mushrooms or aubergines. In fact they are on his list of veg that he recommends on keto, I have just watched his video presentation and they are included.

An amazing cabbage soup recipe: Chop half of yellow cabbage, half= red cabbage, 1 whole red onion or yellow onion -not both- yellow or red.add 1 tbsp of garlic powder, 1 tbsp of onion powder yes in addition to your onions add powder, grab 2 handfuls of spring mix salad washed and add it to the pot finally--add 1 envelope of sason goya-achiote if you like shred 2 carrots let boil for 1/2 hour to 40minutes. best low card soup ever! add a favorite ingredient if you like more spice. You can have this everyday for lunch and or dinner as a filler. Just a suggestion.
I tried the cauliflower pizza base, as I have to be gluten free and doing a Keto diet. It was surprisingly good - as is cauliflower rice. It is often the texture of carbs that we miss and this is a healthy substitute.

I enjoyed your video and it was close to being very accurate. At 71 I've likely eaten a strict low carb diet for more years than you've lived so I'll offer a couple of slight corrections. Squash, divide into summer and winter varieties. Summer varieties are almost all low carb and winter varieties are medium carb. So you can eat zucchini, yellow or other varieties of summer squash as a low carb allowed vegetable. You missed the best low carb vegetable and being from england I can understand you not including it but here in the southern US okra is one very popular vegetable. At four carbs per serving it's low carb and very rich in vitamins and minerals. It can be mixed in many dishes or simply chopped and sauteed in a bit of oil until crisp without breading. Now tomatoes, peppers, and onions are medium carb foods and the amounts you eat should be limited on low carb. No unlimited vegetable eating. I limit my intake to 12 carbs per day and that allows me at least two nice servings of fresh low carb vegetables (most growing fresh in my garden right now). I eat a wide variety of greens(mustards, collards, turnip, beet, chard, kale, cabbage, brussel sprouts, spinach, lettuce). I eat everything on your list and more. There are easily two dozen very low carb vegetables that find their way to my table and some medium carb ones that I eat in smaller servings like canned carrots, beets, etc. I simply eat a half serving of each and they come in at low on the carb scale.
I broke down and subscribed because, like another low carb dr I follow, you're straight to the point with useful info and without alotta silly unfunny inserts.
I am a Virta patient and am on the verge of reversing diabetes that I have had for 14 years. Since I have cut carbs out, my blood pressure has gone down significantly and I have stopped taking 3 prescription drugs. Cutting carbs is a godsend.
Great video! And it's guacamole, pronouncing the final "e". It comes from mole, that means sauce, or salsa, and guaca, for Aguacate, the mexican name for Avocado :)
in its original language, "avocado" means "testicle." And you can sort of see why...though I hope that poor Aztec guy whose woman named the fruit didn't actually have green ones, but who know.

I'm a bit puzzled. I just finished watching Ben Azadi of Keto Kamp and he was against consuming vegetables of the "Nightshade" family of which you recommend many. According to him, it's not about the carbs but chemicals that can cause inflammation in the brain. Would really appreciate your take on that.

Cucumbers are a big winner for me. Aside from being a good salad ingredient, I found a great but simple brine recipe and, with appropriate other ingredients/spices I make my own relishes, pickles, etc. all of which can serve as condiments, etc to add a *lot* of flavor to other dishes (for example meat and salads). A couple particular wins of DYI brine are 1] it’s easy to make “refrigerator” pickles and relishes (I.e. so you can make reasonably-sized batches and you don’t have to go through all the rigamarole of canning) and 2] since I make it myself, I have total control over the amount of sugar, which is great if you’re like me and that’s an issue.
I just recently started listening to your videos. And although this is not a scientific based video like your others, it is one of your best in my opinion. It is pronounced guacamole with a long e on the end. As a fellow physician, you are my hero. Keep it up!
I'm currently doing vegetarian keto with no dairy. My doctor gave me a food sensitivity test to work on reducing inflammation so she has me doing an elimination diet. So no cruciferous vegetables, dairy or tomatoes right now. Of course very limiting when trying to be keto. Have you mentioned black soybeans and jackfruit as Keto options? I'm practically living on these right now, along with zucchini, peppers, mushrooms, avocado. Found some great plant-based milks to sub for dairy -- macadamia nut milk, nutpods for coffee, Chao shreds, earth Balance vegan butter. I've lost about 10 pounds so far in 2 months. I'm also hypothyroid, so even more difficult losing weight and may be a factor in the cruciferous vegetable sensitivity.
Mexicans say it that way, Guatemalans say guacamol (without the e) so technically there's no right or wrong way. But guacamolE is the most widely used 🤓😎🥑. Another example: Mexicans say tamale Guatemalans say tamal (no e at the end)

How about celery, I was told it is a zero carb food i.e. you expend as much energy eating it as its calorific value. I can't stand it raw, but it goes great in soups and stews.

Zucchini, eggplant, peppers, tomatoes, olives, cucumbers, and green beans are all fruits. They're also vegetables. Fruit is a botanical definition. Vegetable is a culinary one and is simply based on how it is used. Because of this, things can fall under both classifications. Corn for instance, is a fruit, vegetable, and a grain.

If the rough chewy texture of regular kale (as opposed to dinosaur kale) turns you off, massaging it makes a world of difference. Cut or rip the leafy parts off the big stems. Cut or tear into bite-size pieces. Wash, dry, and place in a large bowl. Put olive oil on your hands, and start massaging the kale, or kneading with your fingers, till you feel it break down and soften. Season with salt and pepper, add other salad veggies, dress if you want, and enjoy a salad you’ll actually want to eat. Nala Atlas, a renowned vegan chef, demonstrated this technique to those of us attending an animal sanctuary event. Then she had us make our own. Game changer!

Roasting modifies their glycemic index. I loved roasted veggies but stopped after comparing their gi raw and roasted.

I mostly eat meat,eggs,cheese,celery with cream cheese or ranch,cucumbers,salad(with chicken & a boiled egg in it,or a deviled egg with sharp shredded cheese & tuna mixed up in the deviled egg filling & topped with crumbled bacon(protein packed) I also love zucchini fried in butter. Ive never cooked Cauliflower,never had avocado..going to try them
the good thing I like to your system is the measurement. you use grams instead of cup which i live in the USA and very confuse about using cup measurement. just like lettuce, how do you measure ½cup of lettuce since it take space in between, whereas, if you measure it in grams there no fooling around the volume. nice video, thanks
I agree cups seem very confusing to me. Kinda handy when you're measuring stuff out, but not when you're talking about trying to get really accurate measurements!
I'm from the desert SW United States...its Gwa co moley (Mo lei) like Molly with a mole ;) I use radishes in a chicken "packet" made with foil, lots of seasonings and a little cheese. Thanks for a good video :)
Started dieting on 1st July after gaining a stone and a half due to menopause, and overeating during lockdown. After a couple of false starts I've currently lost 9 pounds, and I'm finding that eating plenty of good food, while cutting right down on carbs, is working well for me. Also my dad has type 2 diabetes, and that's obviously something I want to avoid.
Update - by 1st October, have now lost 15 pounds.

Although I love meat I also love veggies. I even love Brussels sprouts. My mom served all those vegetables to us regularly. Perhaps that's why I love them.
Totally agree...I could never go vegan, but would also never consider going totally carnivorous, as I love vegetables too much. Particularly kale, cabbage and Brussels sprouts!

I like slicing summer squash and radishes to use instead of chips for dipping.
I diced radishes and fried them in a bit if oil, then put gravy on them...it had the texture of meat...

Things with a seed or seeds are fruits. They are ripe plant ovaries, the fruit of the plant. Yum. Roots, leaves and stems are vegetables. Petals are modified leaves.

Cucumbers aren't boring. I love them. And mushrooms are delicious in anything (the non-vegetable/fruit btw). I sauté them in butter and put them in my scrambled eggs with cheese.

Avocado and tomatoes are fruit, I think! I was thrilled to see that you have aubergine and mushrooms on your list - I've been following Dr. Eric Berg previously & I think he discourages eating aubergines and mushies! He's quite hardcore actually. I'm so glad you say that they are okay! I miss mushies and aubergine! Thank you!

Dr. Ekberg has never said not to eat mushrooms or aubergines. In fact they are on his list of veg that he recommends on keto, I have just watched his video presentation and they are included.

An amazing cabbage soup recipe: Chop half of yellow cabbage, half= red cabbage, 1 whole red onion or yellow onion -not both- yellow or red.add 1 tbsp of garlic powder, 1 tbsp of onion powder yes in addition to your onions add powder, grab 2 handfuls of spring mix salad washed and add it to the pot finally--add 1 envelope of sason goya-achiote if you like shred 2 carrots let boil for 1/2 hour to 40minutes. best low card soup ever! add a favorite ingredient if you like more spice. You can have this everyday for lunch and or dinner as a filler. Just a suggestion.

I tried the cauliflower pizza base, as I have to be gluten free and doing a Keto diet. It was surprisingly good - as is cauliflower rice. It is often the texture of carbs that we miss and this is a healthy substitute.

Have definitely felt the “keto flu” and slowly but surely persevering and commuted to stick with it. I’m hoping to lose 10 kg long term.
I enjoyed your video and it was close to being very accurate. At 71 I've likely eaten a strict low carb diet for more years than you've lived so I'll offer a couple of slight corrections. Squash, divide into summer and winter varieties. Summer varieties are almost all low carb and winter varieties are medium carb. So you can eat zucchini, yellow or other varieties of summer squash as a low carb allowed vegetable. You missed the best low carb vegetable and being from england I can understand you not including it but here in the southern US okra is one very popular vegetable. At four carbs per serving it's low carb and very rich in vitamins and minerals. It can be mixed in many dishes or simply chopped and sauteed in a bit of oil until crisp without breading. Now tomatoes, peppers, and onions are medium carb foods and the amounts you eat should be limited on low carb. No unlimited vegetable eating. I limit my intake to 12 carbs per day and that allows me at least two nice servings of fresh low carb vegetables (most growing fresh in my garden right now). I eat a wide variety of greens(mustards, collards, turnip, beet, chard, kale, cabbage, brussel sprouts, spinach, lettuce). I eat everything on your list and more. There are easily two dozen very low carb vegetables that find their way to my table and some medium carb ones that I eat in smaller servings like canned carrots, beets, etc. I simply eat a half serving of each and they come in at low on the carb scale.

I am a Virta patient and am on the verge of reversing diabetes that I have had for 14 years. Since I have cut carbs out, my blood pressure has gone down significantly and I have stopped taking 3 prescription drugs. Cutting carbs is a godsend.

I'm a bit puzzled. I just finished watching Ben Azadi of Keto Kamp and he was against consuming vegetables of the "Nightshade" family of which you recommend many. According to him, it's not about the carbs but chemicals that can cause inflammation in the brain.
Would really appreciate your take on that.
He is covering the carb aspect only in this video. Nightshades can be very inflammatory for many so it is best to stay away.

Cucumbers are a big winner for me.
Aside from being a good salad ingredient, I found a great but simple brine recipe and, with appropriate other ingredients/spices I make my own relishes, pickles, etc. all of which can serve as condiments, etc to add a *lot* of flavor to other dishes (for example meat and salads).
A couple particular wins of DYI brine are 1] it’s easy to make “refrigerator” pickles and relishes (I.e. so you can make reasonably-sized batches and you don’t have to go through all the rigamarole of canning) and 2] since I make it myself, I have total control over the amount of sugar, which is great if you’re like me and that’s an issue.

I'm currently doing vegetarian keto with no dairy. My doctor gave me a food sensitivity test to work on reducing inflammation so she has me doing an elimination diet. So no cruciferous vegetables, dairy or tomatoes right now. Of course very limiting when trying to be keto. Have you mentioned black soybeans and jackfruit as Keto options? I'm practically living on these right now, along with zucchini, peppers, mushrooms, avocado. Found some great plant-based milks to sub for dairy -- macadamia nut milk, nutpods for coffee, Chao shreds, earth Balance vegan butter. I've lost about 10 pounds so far in 2 months. I'm also hypothyroid, so even more difficult losing weight and may be a factor in the cruciferous vegetable sensitivity.

Mexicans say it that way, Guatemalans say guacamol (without the e) so technically there's no right or wrong way. But guacamolE is the most widely used 🤓😎🥑. Another example: Mexicans say tamale Guatemalans say tamal (no e at the end)

Love the avocado, cut in half, and place a little of the homemade dressing (olive oil/vinegar) with herbs and raw garlic in the holes.
How about celery, I was told it is a zero carb food i.e. you expend as much energy eating it as its calorific value. I can't stand it raw, but it goes great in soups and stews.
By all means include celery on your shopping list for low carb vegetables !!!

Zucchini, eggplant, peppers, tomatoes, olives, cucumbers, and green beans are all fruits. They're also vegetables. Fruit is a botanical definition. Vegetable is a culinary one and is simply based on how it is used. Because of this, things can fall under both classifications.
Corn for instance, is a fruit, vegetable, and a grain.

If the rough chewy texture of regular kale (as opposed to dinosaur kale) turns you off, massaging it makes a world of difference. Cut or rip the leafy parts off the big stems. Cut or tear into bite-size pieces. Wash, dry, and place in a large bowl. Put olive oil on your hands, and start massaging the kale, or kneading with your fingers, till you feel it break down and soften. Season with salt and pepper, add other salad veggies, dress if you want, and enjoy a salad you’ll actually want to eat.
