Ingredients
12 large eggs
1½ cups cottage cheese
2 cups (180 grams) pork panko
½ cup (1 stick) salted butter, melted
1. Preheat the oven to 375°F. Line a 9 by 5-inch loaf pan with parchment paper, allowing the paper to extend over the edges of the pan for easy removal.
2. Put the eggs, cottage cheese, panko, and butter in a food processor and blend until smooth.
3. Pour the batter into the prepared pan and bake until browned and a toothpick comes out clean when inserted in the middle, about 60 minutes.
4. Let cool for a bit before removing from the pan. Allow the bread to cool completely before slicing. For the best texture, toast slices before serving.

Less eggy flavor, use less egg yolks. Turns out delishes. Thanks for sharing.
I tried this for the first time. I baked it for 50 minutes and it came out a little moist, but we love it! It came out like a very moist cake. My husband warms it up and puts blueberries and heavy cream on it. Pan fried mine in lard with over easy eggs. As close to pancakes that I've had in years! Winner, winner!
Mine came out like a wet cake too. I saw another recipe that uses 4 cups of panko. Im going to try that next time because I wasted a dozen eggs
@@sriojas2274I baked mine for 1 hour.. I found eating them the next day was better and air fried slices for 15 mins to give it that nice toast
A tip, if you get shell in the egg use the outside of the shell you have in the hand and the little piece will stick to it.
I use a blender and make this all the time. It freezes and thaws very well.

@@SubieNinjamade in a mini or small waffle maker - most recipes include a base of egg and cheese and then other ingredients added to make sweet or savory foods. Tons of videos available. My favorite is seasoned ground chicken with pork panco crust -super crispy and juicy. Oreo and churro are amazing low carb sweets.

PS: Crack your eggs into a small bowl first, easier to catch shells or a spoiled egg and doesn't ruin the rest. HTH

Great carnivore basic bread. Lends itself to many variations. I ve played with it adding 1 cup grated Parmesan, sharp cheddar, any cheese -did I mention I love cheese. Also sliced & toasted for bacon burgers and grilled cheese sandwiches. It’s perfect carnivore kitchen staple. I’m persuaded to preorder the cookbook. Thanks.

Anyone in the uk cant find pork panko....buy a big bag of pork scratchings and blend them up small!

Always Crack my eggs in to a bowl one at a time, I buy farm eggs, every once and a while there is a bad one. Takes a minute or 2 longer but save the whole batch cause of that one ,and easer to get the occasional shell out.
This is why you always break an egg in a bowl, then pour it in your recipe. It is rare, but a bad egg can show up once in a blue moon. You can destroy the other ingredients in the recipe, besides the difficulty of fishing out shells from a batch of 12 eggs.
Still absolutely loving your raw vids! I want to try this, but with Philadelphia cream cheese. (Name brand has “cleaner” ingredients, and cream cheese a lot less carbs/sugar). I don’t miss much from the SAD, but I do miss toast. Have u tried it in the toaster?

@@kathryncastrission4492 I like this one best! Just make sure you toast it up good to dry it out, it’s pretty dense but the cottage cheese helps give it a more neutral flavor compared to the other one :)

I made this but was in a rush because of my newborn. I forgot to add the butter! But it came out just fine. Mine puffed up so much. Cooked it in a cast iron loaf pan. Will make it again with butter and see how it goes. I would eat it like that again though.

@@CourtneyLuna Well the bread is rather good. The only problem I had was the parchment stuck to the bottom of the loaf, and wouldn't come off.

@@CourtneyLuna I made it today, tastes pretty good, but the loaf fell about 2-2.5 inches after I took it out of the oven. I tested it with a thermometer and the internal temp was ~200 F.

This did not work out for me! I tried to halve the recipe since I am the only carnivore in my family. I ended up with an egg loaf definitely like French toast.. It was very wet. I am a pretty terrible cook to be honest.
Edit! I forgot the butter… oops, no wonder.

Yes just use a hand whisk or a fork. I never use blenders or mixers
Made this bread. Added a little mixture of Swerve powder sugar and cinnamon and swirled through the batter. Turned out great. Once cooled, I cut and made some slices into French toast. Yum!!!

Yesterday I took 1.5 cups pork rinds with 8 Oz cream cheese. 3 eggs. 1 cup milk. 1.5 tsp baking powder. Added vanilla and made 4 inch pancakes on the pan. I can take the same recipe and try bread after watching your video.
Maybe try powdered milk or cream for your bread
What could you use besides pork panko? ... for people that don't eat pork
Going to make this today but store is out of panko so I'm substituting Carnivore flour and using unsalted butter. Fingers crossed 🤞

A tip that really works!
Spread butter inside the pan before the bread be cooked. After the bread be cooked, warm up the pan over the stove for some seconds. The bread will release easily!!!

I made this yesterday, easy to make. I did mine in the blender. For any reason the bread had a hole at the bottom but still like it. It very moist but when you toasted isn't dry like other bread recipes. Didn't taste like egg. I add on mine onion and garlic powder, Italian seasoning and rosemary. Thanks

I tried it and the taste was good. It was a "wet/eggy" consistency but it tastes good. I need to try it in the Air Fryer to dry it out. What is your recommendation for the best way to store this? Freeze and thaw as needed or just keep in the fridge for a few days? Thanks!
Yes it needs to be dried out for sure. Keep in the fridge for a week or slice and freeze :)

I've made this before from the short you put out on it, and it was so good! I love the flavor the cottage cheese gives to it too! My husband really likes it as well. I have some of the Cajun pork panko, so I may try that next time. I usually let it cool down before cutting a slice, but my husband loves it straight out of the oven. :)

I’ve never used it, but I would think it would be good! If it’s a sugar texture it would probably absorb some of the moisture which would be a good thing!
I’ve added 1/4 c Allulose and it tasted great. I decreased the temp to 350 since Allulose tends to brown the bread a little faster.
Preordered your cookbook today via Amazon!! Can’t wait!! How does this keep in the fridge? I’m looking for a regular grocery store bread replacement for my kids. Would this work for packing sandwiches for school or work lunches? Also husband has health issues and I’m trying to get him off gluten, but he is addicted to all that is bready in this world.

What am I doing wrong? I've made this several times now, and each time I make it, it comes out looking great! However, about 90 seconds after being removed from the oven, it collapses in on itself and falls. I've verified I have the receipe correct. Any suggestions? Am I under-cooking it? (Aside from that, I love the bread. It still tastes great!)

Make your bread today and I'm having problems getting it dried out. I have an airfryer oven put it on 400 deg and left it in for 20 minutes ? Didn't want to ruin it but looking for some ideas? Thanks Courtney

Hi there... I tried this bread yesterday. It looked great out of the oven, but fell to half the size (height) in about 15 minutes... any idea what I did wrong???

Right now I only have Whole fat ricotta cheese and I'm going to use that. I'm out of cottage cheese because I used it to make ice cream. That was the best ice cream. I was looking for your bun recipe for the "tuna" ( trout)melt .
If you do less egg should you cut other ingredients? I am a big bread eater and needing some variety in options due to just starting this journey just eating meat is getting a bit stale. So I am hoping to find a breadish option. I like how simple this one is all the others want you to beat the egg whites and fold them in and it is alot and with two toddlers running around no one has time for that lol. Anyways just wondering if this would also work for a flat bread type scenario

I made this bread and it looked so good when I took out of the oven. Full and plump, but as I left it to cool it dropped and the size was like half in the pan. I am not a baker but is this normal? In your video it seem almost like the size of a normal slice of bread.

I still say test your ketones. I think once you are really in ketosis, you will lose more weight and you won’t feel interested in recipes. When I’m in ketosis, I’m not hungry at all. If this is sounding good to me, I know I’m out of ketosis. That’s just an idea to think about since you have been in a stall. I’m not even in ketosis right now, really struggling to get there.
