    Gulyas is a soup normally so it needs more liquid but the recipe itself is pretty on point. You can also add some celeriac root which is also traditional or other root vegetables (like parsley root). 2 tbsp of paprika is not even a lot to be fair, you should see how much we use 😂 You can also add 1 tbsp smoked paprika to replace smoked meats that would also go into the traditional recipes.     I'm half Hungarian but only grew up with a couple of recipies..both had sour cream 😄 A dollop of plain cashew yogurt would be awesome on top of this. Thank you for the recipe!

    Made this today and I love it. You can really taste the caraway and paprika. It's flavorful and even a little bit sweet. I didn't use any soy curls, as the ones I can get in my town are not very good, but the mushrooms added just the right flavor and chew. Will definitely make this again and again.

    Terrific recipe! I don't consume soy in any form, so I'll use either veggie broth and/or Himalayan salt in lieu of miso paste.

    Sounds wonderful Jill! Fall time is definitely time for warm, nourishing soups and stews! I can't do soy, so I might try a plant based sausage like any flavor of Field Roast or Beyond Meat sausages. Even a burger crumbled and sautéed with the onions and garlic would be a tasty substitute.

    THanks for sharing this recipe. Goulash was my favorite meal my grandma made when I was a kid. I always wanted to try a good vegan version of goulash

    Will make this but Soy Curls are not available in my country. I find making any stew the day before its needed enhances the flavour. Cant wait to try this, thank you Jill ❤

    Looks good. You like it at the thickness of stew; however, this is actually a soup not a stew in Hungarian cooking. And yes.... I am Hungarian on both sides of my family.

    Great recipe! Have you ever tried Tinkyada noodles? Just brown rice and water made. They have organic and different shapes. Just a thought.
