      Exactly I'm 71 live alone and don't like complicated or too much energy output ..esp since I don't feel fully nutrified from this diet .. yet .I miss the comfort type meals meat Loaf etc n want to learn to cook these comforts plant based

    I love salads and do a non oil dressing, then I just eat some brown rice and quinoa or yam, etc with it so I feel fuller.

    Batch prep is almost a given when you eat WFPB, too easy otherwise to make poor last minute choices! I was confused, I thought "Rancho Gordo" was a type of bean, but it's a grower of a variety of heirloom beans. I'm sure they're wonderful, the "caviar" of beans, but just too pricy for my skimpy retirement budget when I can get 4 lbs of my favorite bean (cranberry/Roman) locally for the cost of one lb of theirs. Anyway, I was curious which one is your favorite bean?

    Thank you for this video. When I first started eating WFPB I swear I about drove myself nuts and wasted so much food. I thought I had to cook all these varieties of foods that I was seeing on RUclips videos. I no longer do that. I now tell people to pick out some basic menu's they like and rotate this. You can always try something new once a week or so.
    Keeping some basics made makes life so much easier. Great job on this video.

    These are my kind of meals. Wholesome ingredients prepared in my own kitchen. Best of all, assembled the way I like it at the time of eating. Sometimes I have a banana avocado smoothie with granola for dinner--quick, nutritious and satisfying, perfect after a day of work in the garden. BTW Jill, I used to sew aprons to give as gifts. The fabrics you've chosen to make your aprons looks absolutely beautiful on you. I would be highly interested if you started a clothing line. I know you thrift some of your clothes but I love your style and palette. A few pieces you've worn on your show (including the dress in this video) I would love to have in my wardrobe. So that you know, you've got a fan in me.

    I love your message of keeping it simple. I very much resonate with this and it’s how I have continued eating this way for the past fourteen years. It is THE reason I can keep my family of four fed with healthy, whole plant foods. I just started making some videos of how I make super simple starch staples for our family, how to use the instapot etc. It can be so simple once your tastebuds adjust.

    Meals look good. We don't get purple sweet potatoes here. Never would of thought of turning lentils into something a little sweet. Odd combos to me. But that is okay.

    I just made your grain mix, using oat groats instead of steel cut because that's what I had, and I'm very happy with it. I'll be making it over and over.
    I tried some with a tiny bit of maple syrup, cinnamon, walnuts and raw cocoa powder and it will be excellent for breakfast, snack or dessert. I'll be topping it with bananas or other fruit as well.

I just want to make sure I understand correctly - two people can eat breakfast, lunch, and dinner with the food you made in this video for 7 days? Or do you all other meals? Does in get repetitive to eat the same thing every day for a week?

    Thank you so much for this video! It's exactly what I need. I've been wondering whether every week I should prep a different bean and a different grain in the (beloved!) Instant Pot, and then chop up a variety of veggies, and try to form meals from that and by the looks of it, I'm thinking along the right lines for day to day eating. I don't like to cook every night, it's not one of those things that I enjoy - but I do enjoy cooking 2-3 times a week, and in between times, if it's OK to compile a Buddha bowl type of meal then I will be very happy with that. Thank you also for the lentils/grains combination - what a great idea that is, and I will definitely try that out in the near future. Phew! This video is like a weight off my shoulders.
    PS. Black lentils are beluga lentils, right? They look the same. I have beluga lentils but haven't used them before, so this will be a great chance to use them. I have buckwheat, not the flour, but it cooks at the same speed as lentils because I've used it in another recipe, so perhaps that must be the groats. Well, we'll soon find out! And I have a ton of the right kind of oats already.

    Good ideas but PLEASE WASH AND SORT YOUR LENTILS too. They are a natural food, so they can have grit, pebbles, etc just like the beans.

    How long do cut up vegetables last in the fridge? I saw online around three days. Today for the first time I cut up all the vegetables that I bought. it’s always a hassle to meal prep every day, lots of vegetables to wash, clean and cut become an obstacle and you end up not eating like that very consistently because of all the daily work.
    How to do it in an efficient way without vegetables going bad?

    Love your video and it is what I have been looking for to begin meal prep. Most WFPB individuals show what they make and show pictures of what to eat but they do not show what is eaten each day. I would like to request a prep video like today, but also what you would make for each meal (breakfast, lunch, dinner) for 5 days or a week with what you prepped. Obviously you wouldn't eat the same meal for 5=7 days? Or would you? I need variety and would love for a video of prepped food, how to prep like you did and what your family ate with the meal prep for a week. If it is too long, maybe it could be a two part video?

    I have had 2 A/fib . 20# clogged arteries. I’m on thyroid and migraine meds. I lost my optic nerve at the age of. 45. All I have is my prefer. I did keto years ago. All I want is to be healthy and get lean. I’m so curious on trying this new lifestyle of plant based ! I’ve eaten eggs for years. Will this be hard to do?? Like my wife and I go out to restaurants and where planning a cruise next year. How can I start?

    We also love Rancho Gordo beans! Lucky me, I live in the town where their store is located, and it's a fun outing to walk over there and buy a few packages. This video reminded me to start doing weekly meal prep like you dp, to make things easier and not be tempted to grab something unhealthy if we're short on time.

    When you refer to the grains in the Instant Pot, do you allow for a natural release or do you release the pressure right away? Will it need draining, or will all that water have been absorbed? I wonder, could I reduce the amount to be cooked and the water by half? Or could I freeze half the grains if there was too much for me over a week?

    Do you have a full recipe for the grains? I followed this and pressure cooks for 20 minutes with a quick release and it came out mushy and a bit watery. Should I have let it slow release? Not pressure cooked?

    Great video! I'm assuming one adds the lentils and the grains together in the instant pot. In the email directions you only say add grains to the instant pot. Please clarify if you can. Thanks!

    Thank you so much for this. Sometimes I just want to be done with cooking. I work full time and don’t want to eat out. I have cooked a few of your recipes and freeze half(it’s just me). Always great to have something I can pull out and warm up. Although I will say your meals are not frozen for long as I like to eat them soon after making them. 🎉 it is really nice to freeze and quick heat up meals in the winter, yum!

    Lentils are legumes and even beanier than beans nutritionally, not like grains. (Buckwheat is technically a seed). She definitely knows this but it bothers me when people put information that may mix up wfpb newbies.
