- This classic vegan meatloaf has been in the works here in our test kitchen for months. Using whole food ingredients to get that "meaty" texture has proven to be an interesting challenge. This meatloaf sets up with just the right firmness, texture, and smoky-tomato flavors reminiscent of the classic meatloaf you probably grew up with, but has all the amazing benefits of being fully whole food plant-based, gluten-free, refined sugar-free, and refined oil-free. I hope you enjoy every bite and know that the leftovers taste even better the next day!

I just made this for Christmas dinner! My brother and sister in law liked it, and they're not plant based! Also made mashed potatoes, mushroom gravy, asparagus, broccoli, sliced cucumbers and sliced tomatoes, and your pumpkin pie! It was all delicious!

Most of these products have barley in them another no no for coeliac disease

Love your channel! Here's another tip for your paper liner...turn your bread pan over and mold the paper to the outside... THEN it fits easy inside...!

This looks great! To make it taste even meatier, replace the black beans with cooked and drained brown lentils. Yum!

I finally got the buckwheat and made this yesterday. It was AWESOME!!! We absoultely loved it!! My husband even asked this morning, "we're having some more of that loaf tonight, right??" LOL!!

I made this tonight! So delicious and healthy!!! Mushrooms, beans, whole grains, and cabbage - can't beat that for a healthy "meat" loaf!! I made it with the scalloped potatoes, and a salad!!! This meal was so hearty that I didn't even want dessert! Thank you Jill!

Made this today and everyone loved it. Discovered your food processor must be a lot bigger than mine. Had to do it in 2 batches but it all worked out.
Please show close ups of finished foods. That helps us know what it should look like when done.

Looks yummy! I would probably add half a green bell pepper to the cooked veggies to give it another depth of flavor.

I top our meatless meatloaf with cranberry sauce mixed with a little brown sugar. So yummy!!

We had this for dinner this week and it was terrific! Served with PB mashed potatoes, PB gravy, and green beans just like before going plant based; my husband was so excited. Just the right texture for sandwich leftovers! Thanks for always excellent content.

I made this and it is delicious! It held its shape well too! We had it for dinner and then meatloaf sandwiches the next day. It did make a mess of my kitchen using so many appliances, blender and food processor, but completely worth it!

I made the meatloaf for Thanksgiving, even though I didn’t have the buckwheat groats I used farro, however I soaked it with the quinoa and it still came out very good. Thanks again for sharing another great recipe.
Just made it and replaced buckwheat with lentils because i don't like buckwheat but hopefully it comes out good like yours lol
