    I make this from the book but because I have wrist arthritis, I just place all ingredients in the food processor and pulse it a bit, works fantastic, the texture is more like ground meat and it's delish.

    Love this recipe, it even is liked by my husband who is a meat eater. Thanks for sharing this video.

    1 onion
    Garlic
    Mushrooms
    Zucchini
    Tomato
    Carrots (purple, yellow, red) 1/2 cup
    1/2 cup capcicum
    Jelopeno chilli (half)
    4 cups greens (spinach or kale, bok choy, nappa cabbage, swiss chard)
    1/2 cup parley
    2 cans beans (rinse canned beans)
    1/2 cup salsa
    Rolled oats
    Mash oats and beans together with other cooked down. Mash together.
    Add spices
    4 grinds black pepper (1/2 tsp)
    1/2 tsps white pepper
    1 tsp mrs dash.
    Cook in 2 loaf pans. Spread bbq sauce in bottom of each loaf pan. Half mixture between both pans and spread bbq sauce on top before baking for 1 hr.

    Omg! I threw this together last night and we had it today for lunch. It was so good but so filling! We are stuffed! Very glad the recipe made two loaves. I dropped on off at the in laws. They’re vegan due to being too lazy to cook and me dropping meals at their door

    I love this recipe. Have one loaf in the freezer. I like to whirl the beans in my stick blender’s mini processor so they are mashed more and bind the loaf a little better. I think I like it because it has so many veggies included.

      I know this is late but I just discovered this channel. How would you cook the loaf you have frozen? Do you cook it ahead of time and then freeze it, or defrost it and then cook it?

    Seriously, one of the best vegan loaf recipes I made. This one doesn't have that starchy/paste mouth feel like many of the lentil/potato versions. This recipe can be easily modified with various herb and spice combinations as well as veggies. Thank you!!!

    I came back and cooked along with you, today. It was lots of fun. I used leftover lentils from dinner last night and also added celery. I like your recipes a lot when they add oodles of veggies to an old favorite. Veggies Rule! I serve it with salad and scalloped potatoes made with cauliflower bechamel. Thanks again.     I made this again the other day but finely chopped the veg in the food processor before sauteing. I also threw in a cup of bulgar I had hanging out in the fridge plus a small eggplant. What a difference it made in the texture! There is no way anyone could tell it wasn't the old flesh version except that the flavor is out of this world good. And BBQ sauce is a huge improvement over ketchup. Thanks for this yummy recipe.

    Hi regular meatloaf uses bread crumbs, an egg for the glue-
    flax eggs maybe a good substitute?
    I'm going to use this recipe modified to try stuffed cabbage ? substituting oats - with riced cauliflower, eliminating BBQ (for hunt sauce), eliminating mrs. dash & jalapeño maybe use little veg. broth, flax egg & nutritional yeast?? Idk 😅, mix in with all varied veggies & beans. Stuff'roll Par boiled cabbage, tomato sauce bottom of lasagna pan & place rolled cabbage, top with sauce.. bake 350 covered w/foil 45mins -1 hr. Wish me luck 😅
    You both are such a blessing to all of us learning plant based cooking.

    Hello ladies I've been a vegetarian for 30 plus years and this is the the best flavour & healthy ingredients loaf I've ever made & tasted 'perfect' i enjoy the use of oats instead of wheat in most of your recipes & that's made a huge benefit to my meals thank you.     I made this recipe but I did chop it all up in the processor as the previous person did. Delicious!! Tonight's dinner was so good. I've tried a lot of plant based recipes which were a disappointment. Thanks, so much for making my day!

    a “chia egg” might improve structural integrity, and add some omega 3s. it’s a beautiful looking loaf!

      Just made mine! I add several Tbs of both chia seeds and ground flax and it worked very well. I also let it cool in the fridge for several hours before cutting it. So good!

    I made a double batch on friday last week. I wish I could add a photo of my sandwich tonite. Jane is right. Gets better after it sits in the fridge a few days. I subbed raw shredded Chioggia beets for carrots cuz thats what I had but followed the rest. Make it but let it sit a few days, then slice and heat in the oven. Fabulous recipe!!

    I made mushroom gravy- added some garden veg - next I’ll turn it into eat loaf- or like 1/2 eat loaf and save 1/2 gravy to go over rice this was so so good!!

    I finally got around to trying this, and oh man it's delicious! I used the Grandpa's Eatloaf recipe which is just slightly different than the version in this video, and I modified it a bit. It didn't include kale but I added it because extra kale is always good I also added some liquid smoke because I like it. I left out the tomato because I don't like tomatoes, and the mustard and sage just because I didn't have any. My mouth was watering at the smell as it cooked, and it tasted as good as it smelled. I'll be making this regularly now. 😋

    Made this for the first time last night, but replaced one of the cans of white kidney beans with fat-free refried, added some smoked aminos, and a couple tablespoons of nutritional yeast. Oh my! I refrigerated it and sliced it up this morning and put it in individual bags to freeze for meals whenever. This is amazing, dear ladies! Thank you for being kitchen and health pioneers!!

      Just wondering is this flavor enhanced good for you? If plant base is our natural food why try make it taste like meat? Need to understand when I'm asked this question.

      @@whatisgoingonineedtoknow. Because some people like the taste of meat loaf. Because it helps some people transition to PB. Because it's plant based doesn't mean it can't or shouldn't taste meat based. With that kind of narrow thinking, we couldn't even make the "eat loaf" because it's a substitute for meat loaf. If it can look like it, it can taste like it.
      So ask them "why not"?
      The reasons for being plant based usually has nothing to do with flavor. Although it becomes that way when greasy animal fat and meat begins to taste awful after not eating it for years.

    LOL, yes, egg is used as a binding in meat loaf. This looks delicious and I will be adding this to my bean recipes. My favorite meat loaf (seldom made anymore, alas) uses onion, celery, worchestershire sauce, and poultry seasoning along with salt and pepper. I will adapt those seasonings to this as I found out it was the seasonings folks found they loved rather than the meat! Meat loaf sandwiches were popular the next day, and I think this will be good for that as well.

    Enjoy your channel. Stop eating this way during covet. 100 percent back to it now. Never looking back. Craving meat loaf though. I had meat eaters come to live with me and heard constantly how I am killing my husband he needs meat etc. He got a Hernia and I caved, he had to have surgery to repair. All I know is blood pressure out the roof on him and weight gain, me too. I felt like crap too. No energy, just three months back to eating this way and his blood pressure is down, mine too but still have it high sometimes. Weight has just came off me. Your channel is a great support for me. Just ordered your newest cookbook and have this one too. So will be digging it out of bookshelf. Thank you I wish you were my neighbors. I know no one who eats this way. I get told all the time you need meat and dairy. Even my doctor doesn't agree with diet. I am going to find another one. Just cannot figure out how. I cannot really pick my own have to go to the one my insurance recommends. I live in Central Florida, and its country.

    You didn’t mention the oven temperature but no big deal as it’s already cooked when it goes in.

    I love your videos! The thing I like about your recipes is that they're pretty basic...down to earth...nothing fancy. I think I have most of your cookbooks but have only tried a few recipes. I have this lazy bone in me and I struggle with the motivation. (sorry for the true confession 😊). I definitely want to try this one. Thanks for all you ladies do...and the rest of your Team!

    Just made this. Lots of liquid so I drained the veggies before adding to dry ingredients . I used Catsup cuz that’s all I had on hand. I also used 1/2 kale & 1/2 spinach. So delicious! I only had lemon pepper so that’s what I used too.
    This is going to be made at least once a month if not more! Yummm can’t wait to see how the sandwiches are. My husband loved it too!

    Just made it and am very pleased with how it tastes and holds together. I have your cookbook and made your roasted roots casserole as a side dish. You inspire me to try new vegetables!! Love that it is all fat free and that it also has a whole bag of chopped spinach. I would serve this to company.

    I made this and it tastes really good but it was mushy. When I sauteed the veg they produced a lot of liquid. I drained the excess but I didn't squeeze it out. I wasn't how sure how it would be. I love that it is healthy and makes 2 loaves. Next time perhaps I should saute it at a higher heat to reduce the liquid. The onion alone was fairly wet.

    I love this recipe! I would use a food processor on everything, but reserve 1/2 of the oats. Once I get it out of the processor, I will mix the remaining 1/2 of the oats in, for texture.

    A tip for kale, collard, etc stems: cut into bite sized pieces and use in your dog’s food/dinner or use as healthy treats. Same for Broccoli 🥦cauliflower & other hard stemmed veggies 🥕🥒 Just put them in a container and use when needed. They love anything crunchy and that makes less going into compost or garbage. I’ve been doing this for years with many dogs and they have all been healthy. Of course, that is only one thing I do. Filtered 💦 water being another.

    Saute onion,garlic,mushrooms. Then add jalapenos, tri cololoured carrots, red peppers,zuccini, tomtoes and 4C of kale.
    Add half C parsley. Mash 2 cans white beans, half C salsa and oats??
    and Add white and black pepper, tsp of Mrs Dash. Line 2 loaf pans with BBQ sauce and fill them.
    Top with BBQ sauce and bake for 1 hour at ?? degrees.

    I’m sure you don’t want to know what’s in a meatloaf recipe. However, as binders, you do have the oats which can be used or breadcrumbs, potato chips, etc. Usually, an egg or two is added. Yet, if everything holds together without it, it would be just better. So, I think you have natural binders there.

    I love to make this. Just 2 in my home. We eat some the first day with mashed potatoes and green beans. Then a couple of sandwiches the next day. I cut the second loaf into serving sizes and freeze. We eat that over the next month. Always good!

    This was tasty! I added an additional 1/2 cup of oatmeal based on comments. I also let the vegetables cook longer cause I used kale and it dried more then too. I also added 1/4 cup bbq sauce to the mixture.
