How To Make Louisiana Pralines

  • This is an authentic Praline recipe from my family in Louisiana. I show step by step how to make these delightful candy treats. Recipe is below.
    Pecan Pralines
    2 1/2 Cups Sugar (separated)
    3/4 Cup Evaporated Milk
    1 1/2 Cups Chopped Pecans
    1/2 Tbsp Butter
    1 tsp Vanilla extract
    Pinch of Salt
    Wax Paper layed out onto countertop for cooling the Pralines
    Stir in 1/2 cup of sugar into an iron skillet on high heat. Heat sugar until melted and caramel colored. Remove from heat.
    Stir in 2 cups sugar and evaporated milk. Return to high heat and bring to a boil. Boil for 3 minutes. Remove from heat.
    Stir in pecans, salt, butter, and vanilla. Continue stirring off of the heat for 3-5 minutes or until thickened.
    Drop by spoonful onto wax paper and let cool for at least 1 hour. Enjoy!!!

    I love PRAH-LINES and I make them every holiday! I was born and raised in Louisiana (Geaux Tigers--class of 1990) and crack up every time I hear the northerners say PRAY-LINES and PEE-CANS!

      Love these... I expermented making them in my microwave, I also used condense milk and instead of peacans I used cashews, which tasted almost as good as the pecans. they were so delicious, I made mine smaller, lol they don't hang around long especially if you make them large.

    Made dis last night added a little brown sugar took out a little white. absolutely delicious. Good and easy recipe. Family loved them. As good as the praline lady makes em.

    Have not tried this yet, although I have had pralines in Nola. Two things I always look for are ease of recipe (fewer steps the better) and a genuine enthusiasm on the part of the cook (always noticeable when it's pizza being made). Looking forward to giving this a go. Thank you for the video.

    After another failed recipe I decided to try yours and Im glad I did because these are great! My other batch never set up and were gooey but yours set up just after a few minutes on the wax paper. Next time Im adding more pecans because you can never have too many.

    I love it! I think the New Orleans Pralines with less sugar are much better though. So soft and chewy.

      Patti White I agree. I thought he used too much sugar and they looked burnt. I like Charlie Andrews' recipe. In that recipe, he doesn't add a pinch of salt. I do. They are delicious. God bless.

    I was just found your video. I was looking for a easy recipe without the use of 100 utensils and ingredients. This is perfect. I already had most of the ingredients in my cabinet. Your directions were not complicated at all. They look so good. Better than the ones in the stores for almost four dollars a piece. Thanks you for keeping it simple. P.S. Love the Doggy.

    I just made this recipe as shown in the video, and the pralines came out beautifully. I made a couple of errors, though. I used 2 tablespoons of butter instead of 1/2 tablespoon-I followed what I thought I saw and didn’t read the recipe. :-( I also used 4 cups of pecans instead of 1.5-I had a monster-sized bag of pecans from Costco that I wanted to use up. I ground 1 cup of the pecans finely and coarsely chopped the rest.
    I think the biggest lesson I learned was to to preheat my cast iron skillet to high heat before adding the sugar, and evenly add the sugar in the middle of the skillet. What I actually did was to sprinkle the sugar across the entire bottom of my skillet and THEN turn on the heat. Because the sugar on the edges was cooler than the sugar heating in the center of the pan, it tended to clump and crystallize instead of melt. This led to some jagged spots on the bottom of the pan when I was stirring in the rest of the sugar and evaporated milk; as a consequence, I inadvertently splattered some on my hand while stirring. Ouch!
    Despite my mistakes, I can’t wait to make another batch.

    1 stick butter
    1 can milk
    2 cups sugar
    And then just cook it down til it’s the color you like and add pecans

      T-Roy, do you use a candy thermometer at all or do you just eyeball it? I don't think I'm "seasoned" enough to eyeball it! 👀

      Chevy Brown It's funny you should ask. First off, when I shot this video and the video for Peanut Brittle, I eyeballed it and went by smell and appearance alone. No thermometer was used. Karen loved the peanut brittle and asked me to make another batch a few days ago. I decided to use a candy thermometer and the sugar mixture burned before hitting the required temp. So, it just goes to show you that sometimes you need to trust your instincts instead of a thermometer. Needless to say, I did make a successful 2nd batch of peanut brittle without the thermometer after the other batch got burnt. So, Karen is happy and I'm happy. Trust your instincts Chevy.

    Made these as per your instructions and they are delicious. The next time l made them l made two slightly different changes. First, l toasted my pecans and second, l used my homemade vanilla extract. Either way they are very easy to make & delicious!!

    BUTTERMILK PRALINES
    Preheat oven to 350 and spread 1c pecan halves on cookie sheet in oven to roast for about 5 minutes. Take out add 1tbsp real butter and pinch salt, mix together, set aside.
    In heavy bottom deep pot add 1c whole buttermilk, 2c sugar, 1tsp baking soda. Mix together over medium/low heat,only until mixed. Don't scrape sides.
    Stir occasionally into it reaches 234 on candy thermometer. Take off heat, add 2 tbsp real butter, 1 tbsp vanilla,mix, then add the 1c roasted pecans. Mix together until it STARTS to lose it's gloss or when you can FEEL it getting a little thicker. Drop by tbsp on wax/parchment paper.
    Let dry completely. Store in airtight container, separating between layers with wax/parchment paper. Don't double batch. Cook in cool dry area.
    I make these for weddings and such. Very requested. ♡♡

    These are not chewy, but have a slight snap to them when cooked to 234 degrees.

    I burnt my first batch, the sugar caramelized much faster than I imagined. Also using an electric range if that makes a difference. Will try again.

    I went to New Orleans once in the early 1970s and went to the French Quarter and bought pralines. So so good. These here look like the right consistency, but why not use brown sugar instead of burnt white sugar? Seems strange to me.

    Why do people use wax paper, wax melts! Use parchment paper or a Silpat™ mat. Plus you cooked down the sugar at too high a temp, that's why your pralines looked burnt

    I spent six years in the Fort Polk area and I fell in love with all things Louisiana. Pralines were one of my favorites. I always wanted to make some but was a bit intimidated. I'll definitely make this! Thanks Troy!

      I hope you do give it a try Jason. It's a wonderful recipe and it tastes just like those pralines from New Orleans. Melt in your mouth goodness!!! Just be sure you make these on a sunny day. A day with high humidity will keep these from turning out right. Enjoy it my friend!!!

    man u need to try the microwave version. instead of evaporated milk use sweetened condensed milk.Use a plastic safe microwave bowl. done in 12 minutes. they are so good!

    Lovely! When I was in the second grade in Ohio, c. '64, someone brought pralines from Louisiana for us to try. I was amazed and obviously never forgot it! Uprated.

      They are a huge hit around the holidays here in the Southern US. We can usually find them pretty much anytime of the year in the gas stations like 7-Eleven, but they aren't as good as homemade. Thanks!!

    Those have awesome flavor.
    However when I made them from your recipe, they came out sticky and gooey. Could not get them off the wax paper. But they tasted great, just a mess. Any ideas what I did wrong?

      Hey Mo, same thing happened to me the 2nd time I made them. You didn't cook the mixture long enough. I bet another 3 to 5 mins would have made a big difference how they turned out. I guess I truly had beginners luck when I made this video! LOL Give them a try again and let me know how they turned out. My 3rd time was excellent. Just keep practicing on it and you'll get it. Like you say, they taste good regardless of how they turn out. LOL

    Try it with buttermilk in place of evaporated you will love the difference.
