Whiskey Chuck Roast Smoked on WSM | Poor Mans Brisket

- Brisket prices are through the roof, so I'm smoking a whiskey injected Chuck Roast on my Weber Smokey Mountain 14 inch and using Uncle Steve's Shake for the rub. This roast turned out tasting amazingly like brisket point. So juicy and tender!!!
Next time you're wanting some brisket, try smoking a chuck roast instead!

Another great video. I agree with ya on the poor man’s brisket. Been using a 14” for four or five years and picked up an 18” yesterday and smoked up some ribs. I wanna tell.

@@TROYCOOKS I found out right away that temp control and stability is way easier with the 18. I can see moving away from my offset and sticking to the Webbers…we will see.
Wow, what a coincidence! I did a chuck roast for my Father last Sunday for father's day. I smoked it in a Weber Kettle for about 5 hours, then I cooked it the oven the rest of the way with beef broth and Waygu tallow for another 2 hours. It pulled apart like a pork butt and made for some mind-blowing tacos!

Exactly Right About The Smoke Ring Troy I Put My Meat In The Freezer For About A Half An Hour Before I Put It On The Smoker While I'm Bringing My Smoker Up To Temperature And Always Get A BEAUTIFUL Smoke Ring.

Love me a poor mans brisket. By the way, the grate you had there was the bottom grate which is smaller than the top one which is why it fell You can tell by the downward curve in the handles. I have the same baby WSM so I noticed right away.

I did a chuck roast not long ago on my WSM, and I just about liked it better than the brisket. I typically only use 3 ingredients - salt, pepper, garlic - simple sometimes is best, but I also like to experiment, so maybe some tiger sauce in the future. Thanks for sharing.

Hey T-Roy! Love how real and relatable your content is. The fact you don’t cut out the grate falling like others would helps us rookies relate 😂 a hot tip with the injector is after you sucked up your fluid if there’s air in the tube just tip it upside down so the needle is pointing to the sky and slowly squeeze the air out until it’s just fluid left. That way when you inject the meat no air pushes all those lovely juices out ❤️ much love from Australia 🤙

moisture also draws smoke into the meat, making it deeper down. Awesome to put a pan of water to help with that smoke ring... but, you are da man and da wizard... looks like you made a move too...

I'll have to try this. Once in a while I can get briskets for $1.96 per pound, hard to find now. Current price I think is $3.86 per pound.

I smoked a chuck roast on my WSM yesterday with post oak chunks. I coated it with the same rub you have in this video. It was outstanding!! Juicy and tender, and costs a fraction of a brisket. Great video!
