    Did this last night, I've had trouble with burnt ends in the past doing the braising method in a pan. This was just perfect, did them 3 hours on the smoker and 3 in the beef tallow confit, so good! Never thought my best burnt ends so far would be on a chuck roast. Definitely using this technique for my normal brisket or bacon burnt ends in future!

    Just keep that ground fat in the bigger pan and put it in the smoker. You will then have smoked tallow to put on your food. It is amazing.

    I'd love to see you try making the brisket suadero tacos they make over at Suerte on the east side of Austin. I watched them show how they make it (without ingredient proportions for sauces) and came up with my over version. But the method you do on these burnt ends is similar. If you haven't tried them yet, get yourself over there and enjoy!

    Great video for the chuck burnt ends. I bought beef tallow because I don’t have the fat to make my own. What time reference do you use to soak in the tallow? 4 hours smoke, then tallow to the end. I’m confused on the time for the whole cook. Thanks. Great videos.

      He said 4 hours smoke, about 3 hours @ 250 in tallow. total time 7 hours.

    There is no substitute for that pure delicious beef tallow... but say we haven’t built up enough stock to pour over our smoked burnt ends. Is there another option you recommend?

      Might be able to use lard (or even bacon fat--though you'd probably need to reduce the salt in the rub even more).

      At my supermarket, I bought Bowl & Basket seasoned beef tallow
      They also have Duck Fat, and a few others
      I'm doing beef cheeks, following this method; the cheeks have a lot of that hard fat on them, but I'm not sure if what is there is enough
      My only concern is that the cheeks aren't a uniform thickness, so I may have to pull the thinner pieces off before they burn
      I'll let you know if it works

      Although the flavor won’t be as deep, any other fat or vegetable oil will suffice.

    I did these over the weekend. 4 hours on the smoker at 275, then 3 hours in beef tallow at 250. They came out incredibly over done and tougher than an old shoe. What could I have done wrong?

      I had the same problem. I was thinking about trying again but lower the temperature to about 200 for the soak.

    Well I tried this. I cubed up a chuck roast a little bigger than 1 inch cubes, rolled them around in rub, placed on a rack and placed in the smoker at 275. This video said to cook for 4 hours at 275 and then 3 more hours covered in beef tallow. I planned to use beef broth and bbq sauce mix but when I checked on them at 3 hours they were burnt ends all right, and burnt middles too. almost burnt to a crisp. I see on the HowToBBQRight channel they did the same thing (cut up the meat first) but that one says 2 hours at 275 and 2 hours in the sauce for 4 hours total. Could you have misspoken at the 6:09 mark when you showed them on the grill and said "It's been about 4 hours"?

      Bbq is not baking. There's to many uncontrolled factors. For his pit and meat that is what worked. You have to watch the temp and feel of the meat and make adjustments as you go. Sorry that happened though.

      I had the same issue the first time I made these and it was due to me not keeping an eye on the temp. The second third and fourth time after that they came out perfectly.

      They are Togo containers from most any restaurant. A lot of Chinese restaurant use them for soup

    Did this today, can confirm it's good. I'm going to try just a whole chuck steak with this method, but less time on the smoker otherwise it'd dry out.
