Sometime try this recipe with Buttermilk instead of canned milk, that is the true Southern Pralines recipe. My son went to Tulane U. in New Orleans and one of the local studens mother gave him some and he got her recipe. Butterrmilk cuts some of the over sweetness of it.

Hi I am from Lafayette Louisiana I loves pauline’s candy I made me some Pauline’s candy I fallow your recipe it was good I share some Pauline for my co- worker they love them thank you for the recipe
I love your recipe and your video! You made it look so easy I decided to try it. I’ve never made pralines before but as soon as I boiled mine for 2 minutes I could tell it was going to seize. Should have stopped I think but I continued the 4 minutes then quickly removed it. I have an electric stove and struggled with bringing it to boil on medium so ended up using almost the highest heat. I think those first minutes of cooking on less than a boil contributed. I also only had dark brown sugar. Although that sounds like a recipe for disaster I went ahead with the recipe and added a bit of very hot water when it looked just like crumbles of pecans and sugar. I know you won’t be surprised that they came out ok after all that! Pralines must be the most forgiving of any candy you can make!!

Get you a candy thermometer and let candy boil to 240⁰f during that 4 min span. Then remove from stove and start adding pecans butter and extract.
