    Before you portion out the turtles onto the parchment, put the sheet into the freezer for a few minutes and the candy won’t spread out so easily. They look delicious 😋

    Homemade "TURTLES"!!! My absolute favorite of all snacks. Having a Peacon tree right outside my door means I won't even have to buy the main ingredient. How blessed am I... 😊

    Use non-stick spray before putting corn syrup, sweetened condensed milk, or honey into any container. It won't stick to the container.

    These look great. Turtles used to b a fave....essential at Christmas.....but store-bought turtles aren't at all what they used to b now that they use palm oil. Not to mention palm oil is causing animals to be wiped out. I dont buy them. Ill b making these for Christmas presents....incl to myself :) Thanks!

    These look delicious, but before I jump in... is there a certain temperature you are aiming for when cooking the caramel part in the microwave? Should it be bubbly? Or just trying to melt the ingredients together? TIA

      Caramel cooks at 320°-350°F. So you need to cook it in bursts with a candy thermometer until you reach temp. hope that helps. Just remember all microwaves vary in temp, so some take longer or shorter.

      I have two bags of pecans in the freezer that I got from the food pantry, and some corn syrup I haven't used in years. Guess I got some work to do. 😂

    If ya use your butter cup for cornsyrup measuring the cornsyrup will just roll out.

    I love chocolate turtles and they are expensive in the candy store. I didn't know they were this easy to make. I am going to make some for the holidays. A box of homemade turtles would make a neat family Xmas gift. ❤🎄🎅🏿❤

    Hello, how do you stop the caramel from sticking to the parchment paper after is cools. I made them for Xmas but they were all stuck to the paper. Any advice you can provide would be greatly appreciated. I was able remove a few of them but they were very sticky.

      Mine usually do not stick. You could allow the caramel to cool a little before putting it on the paper. I find that you have to get the caramel to the correct temp before using it. You could also do a light spray of non-stick cooking spray on the parchment paper. One problem I have seen for making this in the microwave, all microwaves have different cooking temps and sometimes they do not get hot enough.

    If I wanted to make them using cashews , peanuts, or almonds, would I still bake the nuts?

      Those other nuts are really thicker. So they would have to be handled differently. Since I have never made the Turtles that way, I am not sure how to cook them for it.

      @thesouthernmountainkitchen my dad brought some black walnut trees (sapplings) from Virginia to Washington State. He did this many, many years ago. Every year, I have to beat the squirrels to the black walnuts. 🥰

      If you mean to make the outside, probably. As long as they are meltable chocolate that rehardens, then go for it.

    Thank you! These and See's butterscotch squares are my fave. I've recently used a copycat recipe for butterscotch squares a couple of times and they turned out great. I had no clue that these would be so simple to make. Easier than butterscotch squares. I used to always buy pecan delights from the grocery store and was always in love with them. Over 10 years ago however they stopped being supplied to grocery stores in my area of Southern California other than the sugar free version. I have no clue why. Now I can make them myself which is better anyway!

      Depending on the temp of the microwave. They all vary. I would check by thermometer along the way so it is not overcooked.

      Yes, you can use a pinch of salt, just not too much. And Dark Chocolate sounds really good.

      Most definitely! I now live where I have my own pecan trees and I never would have thought of roasting them first. But it makes all the difference in the world in flavor. It’s like pecans on steroids! Enjoy.

      I used milk chocolate but you could use semi-sweet. There is plenty of sugar in this.

    My local bakery makes giant turtles in milk chocolate and now dark chocolate! I'm telling you the truth they are about the size of the palm of your hand, and soooo delicious. Now I can make my own and I don't have to pay $2.50 for one giant turtle, Thank you!

    What size spoon do you use to portion out the caramel?

      I used a larger sized soup spoon to scoop it onto my pan. My turtles were rather large, so you could go smaller if you wanted.

    If I cook the sugar mixture in the microwave longer, will it taste more 'caramely'?

      Maybe a little but it would probably burn at a point if you go too long

      @@thesouthernmountainkitchen ok. I did it. But I did it on the stove so I could watch it. I put a couple of tbsp water in it. It turned out great. Oh, the temp reached 242°.

    Can you increase sugar and eliminate the corn syrup? Avoid corn syrup like the plague.

      The corn syrup binds it all together. Not sure of a substitute.

    I use 2 chef's knives with the handles together when chopping that amount of nuts. It makes it go so much faster.

    spray the cups with cooking spray and it is supposed to help the corn surup or whatever come out easier

    Spray your bowls and utensils with oil before you get ingredients in them and they will come out very easy!

    Did you mix chocolates? Semi-sweet? What type did you use?

      I used the big block of chocolate you can get from the grocery store called Almand Bark Chocolate. You get a lot of chocolate for a good price.

    In your vlog, you referenced that the caramel needs to reach "the temperature it needs to be" but you did not mention what that specific temperature is. There is a significant variable in microwave wattage, hence cooking time! Any chance you could provide the finished caramel temperature?? Thank you!

      Temps vary per microwave. Microwave on high for 5 minutes and then stir. Continue microwaving and stirring 1 minute at a time until the temperature reaches 240° or a little above

    With the 4 types of sugar, it seems like they would be overly sweet, are they?

      They are actually not too overly sweet. They taste mostly of the chocolate and caramel. Best Wishes!
