  • New Orleans Native Charlie Andrews demonstrates on how to make Pralines from scratch. Pralines are a sugar candy with a creamy consistency and have nuts such as almonds and pecans in them. Praline originated in Belgium. The recipe was brought to Louisiana and New Orleans created what is known as the American Praline. This recipe calls for about 10 to 12 Pralines and they are sweet, creamy and delicious. Hope you all will give this New Orleans classic a try.

Praline Candy Troubleshoot- If your Pralines come out too soft like caramel , no worries the issue can be solved. Do not throw your candy away. You'll have to melt the candy in the evaporated milk. Add 1/3 cup evaporated milk and 1 teaspoon vanilla extract and let come to a simmer. Add the candy pieces and let sit for 1 minute. From there carefully stir the mixture until the candy has melted. Once the candy melts, let the mixture simmer for 6 to minutes while stirring continuously. Transfer back on to parchment paper and let set. Hope this helps. Thanks!

The boil pattern at 3:10 is the most helpful tip! Since electric and gas stoves cook very differently, the amount of time will differ. Knowing to look for "pops" is the magic key to knowing it has cooked long enough. I've yet to hear this described on any other recipe. Thank you! Extremely helpful!

Cooked mine until the same pattern and it came out like caramel, I needed a thermometer to measure it to 240 degrees before it was done, this temp came after that boil pattern.
