I am 48 yrs old...old school born in New Orleans, raised in the parish(bayou area) we stood at that stove for 100 years stirring that sugar and evaporated milk til it made a hard ball when dropped in a lil bit of water...in and around nineteen hundred and eighty one through present day. I have bad wrists cuz of a trillion batches of "pecan candy" a/k/a pralines...lol. Coop.. YOU are the ONLY ONE who can convince me to make MICROWAVE pecan candy (pralines)... This comment took me ALL THE WAY OUT! LOL! I am also 48 and watched my none NOLA mom make pralines a few times when I was a kid. My NOLA man has had several mishaps with his pralines lately. The last two times I made them, they were perfect. I'm dairy-free, mostly plant based so I will have to keep doing the stove-top flicka da wrist method. I refuse to pay $25 for sweetened condensed coconut milk. I will slide this microwave method to my NOLA man, though. Oh, he's also 48, so it might take some convincing. 🤣

I’ve made these twice in the last two days-and they are even better than the famous ones I’ve purchased! The first batch I made as directed. But, today, I made them with light brown sugar instead of white sugar, and they are the best! You’ve got to try them with light brown sugar. Thanks again for the recipe and the video. It really helped to have the visual clues as to when they’re done cooking. My microwave took 1 1/2 minutes longer than the times stated in the recipe. P.S. I grew up in northern St. Tammany Parish. I'm in Bangkok now and it's nice to hear a familiar accent. I just watched your cream cheese pound cake recipe and you differ by using cake flour and beginning in a cold oven. I am so intrigued that the next cake I bake will be your cream cheese pound cake. I just bought some mail order pecans through the 'Amazon' of China and think your pralines will impress my Thai friends. Thank you for you no-beating-around-the-bush presentation. The two videos I've watched make me want to watch more.

I'm from New Orleans and my co worker did this at work. They came out better than almost any ones I've tasted in years. When I was a kid the old ladies in the neighborhood used to make em. They would sell em big as small Frisbees for 50 cent. Now you only get the little small ones for 2 to 3 bucks and they taste no where near as good.
I just made a batch using this method/recipe and the only thing I can say is watch the microwave temperature. The last round I put it in the microwave for 2 min I probably could’ve done 1:15 or 1:30. 2 minutes made it dark and it started getting hard to stir less than 30 seconds out of the microwave and I had to put in the vanilla extract and pecans right away. Overall it still came out delicious but slightly chewy. Great recipe and method though. Great 👍🏾 job.

Can you clarify why you specified plastic and not glass? I would think plastic might accidentally melt. Also, I worry about plastic leaching nasty chemicals into my food at high temperatures.

Opelousas, LA pecan candy and we also did the ball in cold water or if it hardened on a fork in cold water.
