    I was at a dinner cooked by Brandon last week and we received a box of his chocolates. They were sublime and so delicious. And all the combos worked so well, we’re not overly sweet and were so light and luxurious

    Coating your molds before hand with a very thin film of pure cocoa butter will give you a glossier, more glass like finish...

    How is the exterior of the yellow chocolates done at 1:05 . Is it yellow chocolate sprayed on? It looks like a felt texture.

      HI! After the chocolate has come out of the mold it is placed in the freezer for about 10-15mins then sprayed with coloured cocoa butter to give velvet effect!
      hope that helps

    really nice candies ! wow ! but i have one question : don't you cool down the chocolate before putting the stuffing? or is it still necessary to cool it first (to freeze)? what is more correct? thanks

      I think he said that the chocolate sets and in the frame at 7:13 you can tell that the shells have set before he pipes in the filling. But I wouldn't freeze it, I've heard it can damage the texture and crystal structure this way. Hope that helps :)

      You cannot place the chocolate in the fridge or freezer after filling the mold, you will destroy the tempering you worked so hard to achieve. After making the first layer, leave it in room temperature for some hours, fill with desired fillings, leave some more (only to the filling sets). And lastly make the "lid", leave it for some hours or over night if you want, and then flip them out of the mold. Avoid leaving the finished bonbons on colder or warmer place

      I'm telling you they were soo fantastic. It's hard to pick a favourite out of the box. The flavours are quite unique like cinnamon bun . All magic to the eyes and taste buds. Thanks for watching.

      cashmere2007 I don’t think Willy Wonka comes to mind with this chocolate maker. Nothing magical about his molded chocolates. No enrobed chocolates? Nothing special here. Dominique Ansel is definitely a better fit.

    i tried to make these but it doesnt work ( the cocoa butter
    gets stick to the mold and chocolates comes out clean. m
    i doin sumthin wrng

      Are you tempering the cocoa butter before filling the moulds? Then cooling them before you fill with ganache? Then again cooling to proper temperature before trying to remove from mould. Chocolate is very tricky and temperature and humidity need to be just right for the chocolates to come out like these beautiful one. Keep on working on it. Thanks for watching

      MyFavouriteFoods ChristineCushing how do you temper coca butter? And what temperature should it be when you try and use it as paint?I had the same problem with the glaze, and the chocolate shell just fall out of the mold when I flip it upside down?

      Catalina Dawn - I noticed that too. It all looks great, but I couldn’t get passed how he rubbed his nose, then no gloves... and she needed her hair tied back. Turned me right off

      agree. Not all cafes & restaurants in US are required to wear gloves. depends on the type of food being prepared. But, before they made the chocolate, HE wiped under his nose and SHE wiped her forehead/hairline. I hope that batch of chocolates were not to be sold in his store & only for her staff to take as a gift.

      dear god - that's chocolate on his hands and fingers!!! I work with chocolate, it's unavoidable, try it ............... and try wearing gloves to do intricate work, impossible - I am sure he's spotlessly clean or he couldnt keep doing what he's doing

      Oompa Loompas were agree with it, they are a race kinda similar to the Mayan, cacao is the most valuable thing in the world for them, so they felt like a fair deal, you just needa change your perspective. I woulda be more convinced if you say he was a pedophil ☺️

      Veggie Soup you dont have clue about the food service industry. If you think that was something just imagine all the things you dont see when you dine out . Dirty dishwasher, Servers touching money credits cards or there cellphones then touching your cutlery lol. the dried on chemicals residue the dishwashing detergent leaves on your glass when you have that nice glass of wine,smokers fingers touching your food. Do you like Chinese food 😁

      The Marble temperature does something to the chocolate. It doesnt go into it. It is being broken up into tiny pieces swirled and cooled by the paddle they are using.
