Beautiful work! A tip for those without a dipping fork- a plastic fork with the center tines removed usually fits most bite sized pieces. Bonus being avoiding using metals on tempered chocolate because it tends to draw heat away to prematurely set up chocolate as you are working.

I make homemade extract flavors such as huckleberry, blackberry, lemon, raspberry, strawberry etc. Can I make the ğenache with white chocolate and flavor them? Or would it be a completely different process?
They get hardened within 5 mins usually. It can varies depending on other factors such as the thickness, the room temperature, etc. You might want to wait longer to touch them just in case!
