This is a beautiful and inspirational video. I've made thousands of chocolates, all by hand, and I can never stop learning. I am amazed by the automation, which is required for large production, but it does not diminish the quality of the end product. Clearly, they have managed this without cheapening the final result.

I've been honing my technique for a decade now but have relied mostly on recipes from my classes so I have nothing to offer to you, unfortunately. I did a wedding a while back in Hawaii where I incorporated Hawaiian flavorings in the ganaches. This year I made about 1100 pieces and boxed them up for 49 friends and family. I have a guitar, which is essential. I do molds as well. I have made transfer sheets from paintings from an artist friend, which I have used in magnetic molds with nice results. As for enrobing, I do every piece by hand as the number of pieces that I make do not warrant an enrobing machine. That being said, enrobing 180 pieces by hand takes a toll on my 71 year old back. I think that chocolate is one of the most wonderful substances on the planet to work with. You can recycle it and re-temper it repeatedly. Your video captures the beauty of chocolate. The bottom line is when the chef bites into the chocolate and a subtle smile emerges from his face. Life is good.
I just received these chocolates as a gift and I am almost finishing the box!! They are excellent, each flavor is like an adventure; that is what chocolate should be, thank you Canonica. I wish I could get them in the US.

Cacao poudre Bonjour, merci pour votre vidéo. J'ai une question a poser. J'ai fais l'erreur de moudre mes fèves achetées sur internet. Je ne pense pas quelles soit torréfiées. C'est possible je pense de le faire une fois broyées? J'ai réalisé ça avec un moulin à café. Le but final pour moi est d'utiliser la poudre pour me faire du chocolat cru pour mon petit dej, avec lait . Il me reste 300gr de poudre de cacao cru que j'ai acheté sur internet. c'est possible de mélanger les deux poudres? Je ne veux pas de sucre dans mon chocolat. Le but du jeu pour moi est de séparer la cosse du cacao afin de récupérer uniquement le cacao? Mais es t’il vraiment nécessaire de faire la séparation pour l'usage que je veux en faire ? Pensez vous que je peu passer directement à la récupération du chocolat avec le bain marie et de filtrer le chocolat fondant avec une passoire ? ça me ensemble pas bien possible mon idée ? Avez vous une idée pour que je poisse utiliser ma poudre de cacao avec cosse? Je sais que je peu faire le mélange comme ça avec ma poudre de cacao cru, je l'ai déja réalisé il y a un an et je ne suis pas mort.
