How To Make Chocolate Covered Ritz Cracker Cookies

  • Kathy's Southern Kitchen
    1 24oz Package of Almond Bark (Chocolate or White Chocolate)
    2 Large Sleeves of Ritz Crackers (more or less)
    1 Cup of Peanut Butter (approximately)
    Heath Pieces or Kosher Salt
    Place half of the crackers on a piece of wax paper. Top crackers with about a teaspoon of peanut butter. Place another cracker on top of the peanut butter, pressing lightly so that the peanut butter spreads to the edges of the cracker.
    Melt almond bark in a microwave proof bowl for 2 minutes at 50% power. Stir and cook in one minute intervals, stirring each time until the almond bark is smooth and completely melted.
    Using two forks, take each of the peanut butter crackers, one at a time and dip it into the chocolate. Make sure top, bottom and sides of the cookie are coated. Top with Heath Pieces or Kosher Salt. Allow the cookies to sit at room temperature until completely set. This takes approximately 2 hours. Enjoy!

    I have made this recipe with my children over 30 years & now my grandchildren. We use tongs to pick up & dip crackers in chocolate. I like the plastic bag idea as we always used short butter knives which can be messy. We have used crushed peppermint or small chocolate pieces on the white chocolate as well as green or red sugar to decorate.

    My grammy made something similar. She used Rolo caramels instead of P butter, baked them for a minute or two and put a ritz on top to sandwich it. OH MY GOSH theyre so good!! She has been gone awhile now and no one has made them. I might just make a batch of those and yours too!! Thank you for the recipe 🥰🥰

      You can find almond bark in the baking section of your grocery store. That's where I find mine at my local HEB grocery store.

    The Ritz crackers chocolate cookies sounds like a good idea but I would also like to try it with vanilla wafer cookies with Nutella on the inside of the cookies and dip the cookies in melted white vanilla bark

      If you want a real chocolate cookie you could use Nutella instead of peanut butter. If someone has a peanut butter allergy they con still enjoy them.

    I just subscribed to your channel. My mom used to make those treats, but she did use the white chocolate. She would put peanut butter on the crackers and then put them in the freezer for a few hours. She was told that would help the chocolate to set up on them better when she dipped them. Evidently that isn’t necessary and it sure would save time not to do that . I am looking forward to watching more of your videos!

      Freezing them may make condensation though and water messes chocolate up

    When making these with the kids, to help speed up for their small attention spans, get the crackers with pb already in them, then have their own bowls and spoons, soon as you come by with the melted chocolate to put in their bowls, have them immediately use their spoons and put their pb crackers into the chocolate and cover and put on their wax , parchment paper, and already have their candies to sprinkle on top ready. Then let them eat them. Makes a fun time, and treat for their school Christmas party. (Teachers always like us volunteer mom's to come up with cool treats, games for their class party's, kids seem to like things they get to help make their own).

    I have been making these for Christmas for years. I use smooth peanut butter and dip them in Wilton’s Dark chocolate. We love the dark chocolate so much better. 😊

    Jiff's natural peanut butter does not separate which is one of the things I really really like about it and it's the only peanut butter that I use and have in my house, of course it's the creamy because I'm not a fan of the ones with peanuts in it.

    I guess I cheat I have been having those for a snack lately. I get my roll of cheap knock off ritz cracker's a jar of peanut butter and a saucer of some chocolate chips. Set in front of the computer put peanut butter on my ritz and dip it in the chocolate chips. Just a little something sweet at bedtime.

      Merkens would be so much better! Are you from the buffalo,ny area? They are the only folks I've ever know to use Merkens chocolate wafers.

      @Michael Baugher I am from New Jersey. The supplier I go to sells Merkens chocolate. I also tried Stovers and I find Stovers melts better and much creamier. That I have to order from Stover.

    You know, if you put the PB in the microwave for a bit, it get gets easier to handle.
