  • JUDY LUDY AND PUPPET COOK!
EP 2 || Grilled Sandwiches 101 -- Perfect for Lunch or Dinner!
In this episode, Judy teaches Puppet that a perfectly grilled sandwich can be a great alternative from the same dull weeknight meal and…Puppet has a surprise for Judy!
    SHOPPING AND RECIPE GUIDE
    Sandwiches…who doesn’t like them?!
Be it piled high with sliced meats and cheeses and carefully placed between two slices of a favorite bread, or perhaps ahi tuna or chicken salad nestled in crisp lettuce cups …everyone enjoys that one perfect, first bite of a delicious sandwich!
In this episode, Puppet learns the “method” of making a great sandwich!
SIDE NOTE: Do not be afraid of “method” cooking.
Method cooking simply means instruction is given on how a recipe is built (in this case, it’s how a sandwich can be built and grilled) and then it’s up to the individual to make the recipe their own, by applying the method taught.
In this instance, the sandwich build uses:
o Two slices of The Rustik Oven sourdough bread
o Each slice slathered with a mayo mixture, using equal proportions:
    --- Full fat mayo
--- Cream style medium horseradish (or to your taste)
    --- Whole grain mustard
    --- Salt/Pepper to taste
o Multiple kinds of sandwich meats, several slices each:
    --- Black Forest Ham
    --- Pepper Turkey
o Topped with several slices each:
    --- Baby Swiss
    --- Colby Cheddar cheese.
o You may also like to sprinkle your favorite seasoning on the bread --
    --- Dried oregano flakes
    --- Italian seasonings
--- Anything you like - get creative!
o Or add sliced tomato and/or avocado.
    TO GRILL
    STEP 1:
Once all ingredients are in place on the bread, carefully lay one slice of bread on top of the other, aligning each slice together.
    STEP 2:
Spread the slice that is top side up with additional mayo or use your mayo, horseradish, mustard mixture.
    STEP 3:
Place that mayo-d side down into a hot skillet (preferably cast iron or non-stick skillet) using low to medium heat.
    STEP 4:
While the first side is browning, slather the side of the bread that is face up, with mayo, so it’s dressed and ready to flip.
    ------ Heat should be low
TRUST THE PROCESS and don’t peek at the side of the sandwich that is cooking - leave it alone!
------The low heat and mayo allow for deep, even browning.
    STEP 5:
Use a sandwich press or even better, and what most of us have in the kitchen, a flat stainless still pot lid as a press - press the sandwich down in the skillet so it’s flat.
-------This method allows the sandwich to heat through, melt the cheese and brown/crisp the bread.
    STEP 6:
Flip the sandwich to the other side after about 5 minutes and the first side is golden brown
--- When done, remove sandwich from skillet and allow to rest 3-5 minutes before slicing.
--- Slice with a serrated knife and serve warm!
There you have it…a hearty sandwich, stacked high with your favorite meats, cheeses, seasonings, tomato and or avocado - grilled to perfection!
Serve along side a simple arugula salad dressed with olive oil and seasoned rice wine vinegar, a glass (or bottle) of your favorite wine….and dinner is done!
Whatever you add, you and your own Puppet will enjoy that first, warm, cheesy bite!
    Enjoy!

Like most people, I always use butter before grilling -- but not anymore!!
