  • JUDY LUDY AND PUPPET COOK! EP 12 || Crab Cakes with Lump Crab
    In this episode, Judy shows Puppet how to prepare the summer classic - crab cakes!
    Let’s begin…
    STEP 1: INGREDIENTS (15) and Shopping List
    8 oz Crab Meat (Lump Crab) - picked over to remove Cartilage
    4 oz Crab Meat (pieces or leg meat)
    Butter/olive oil
    2 stalks celery - chopped fine
    ½ orange bell pepper - seeded and chopped fine
    1 tablespoon capers - minced or diced
    Celery salt/seed
    1 tsp cilantro - chopped
    1 tsp creole seasoning ‪@tonychacherescreolefoods6156‬ (Tony Chachere’s Original Creole Seasoning)
    Salt/pepper to taste
    ½ cup breadcrumbs (day old bread works best vs. canned breadcrumbs
    1/4 cup mayo
    1 teaspoons Coleman’s Mustard
    1 medium squeeze Wasabi paste
    1 egg slightly beaten
    Butter/olive oil for frying
    STEP 2: EQUIPMENT NEEDED
    Non-stick frying pan or cast-iron skillet
    Spatula for flipping
    Serving Platter
    Slider buns (optional)
    Garnish - lemons/cilantro
    STEP 3: PREP
    Prepare all ingredients
    Clean, chop, dice, measure all above ingredients and have them at the ready
    STEP 4: PREPARE THE CRAB MIXTURE
    1. In a hot frying pan, add butter and olive oil.
    2. Sauté celery, bell pepper and capers until soft/translucent.
    a. Set aside to cool
    3. In mixing bowl, add crab meat(s), add the breadcrumbs, mayo, mustard, wasabi, and egg
    a. Mix well
    4. Add sautéed veggie mix
    5. Shape into bite size crab cakes or several large crab patty burgers
    6. Refrigerate for 15 minutes (this helps keep them together)
    STEP 5: FRY THE CAKES
    1. Add butter and olive oil to frying pan - heat on medium heat
    2. Add crab cake and do not touch it
    3. Leave for 4-5 minutes until brown
    a. this depends on how long it takes to brown the cake
    4. Flip to other side and brown that side
    5. Keep warm in 250-degree oven and fry the remaining cakes
    Serve as sliders topped with slaw or as large burger (also topped with slaw) with arugula side salad
    OPTIONAL: Coleslaw for topping
    OPTIONAL: Aioli sauce (1 part mayo; 1 part Coleman’s mustard; 1 part Wasabi paste)

      @troynorth4079 give it a try; slaw atop is the only way to have them!
