I made this today and it was so good! I used smoked paprika and added some lemon juice in at the end for some tang. I blended the sauce before putting in the tofu and then the coconut milk so that it was a lot smoother and served it was basmati rice! Delicious!

I made this Curry for my family today and they LOVED it! I don't eat spicy food, so I had to forgo some of the spices, but with paprika, it was enough to give it a little heat! I also added some carrot bits because I love carrots. My family loved this recipe, it was absolutely delicious, and I can't believe there's a healthy alternative to roux based curry! I might just go for seconds lol

I made it and my husband liked it but I felt it's not very flavorful. I do like it with chicken, the'res a lot of flavor there. I';d like to make it again but don't know how I could add more flavor in the tofu dish as the sauce is the only thing working here.

For a northern Indian twist, after the coconut milk add two single servings of fruit yogurt (pineapple = yum!) a handful of raisins and a half cup of slivered almonds.
What a good idea. But if I need to cook this for a group of vegans would it also work to put just pineapple pieces in it? What other vegetable additions would you suggest if I wanted to bulk this up for a large group of people?
@@dilemmix I added 2 cups of mixed frozen veggies (thawed) to bulk up mine. That made about 8 servings in all, served on a bed of basmati rice. Makes great leftovers too!
@@dilemmix The reason I added the fruit yogurt was to add some bulk but also to give the final curry a more silky texture. I don't see why you couldn't add pineapple, but on top of the raisins, it may make it too sweet for some tastes, but experimenting is always a good idea :-) If you want to bulk it up a bit you could always add more tofu and/or another cup of coconut milk. Btw, the quality of coconut makes a big difference I find. America's Test Kitchen recommends Aroy-D brand, which I can confirm is very high quality (i.e., high fat) - ruclips.net/video/J8F6p_H2fEw/видео.html
Louizasa - sure you can use green beans but try not to add too much of it otherwise it will dilute the flavour. Also, please know that it will yield a slightly different taste than the original recipe.
Kirbywebb - Missed your message. Sure you can cook this without oil. Here is how: Transfer the onion, ginger, garlic, tomato and salt to a pan. Add a bit of water and cook it with until soft with the lid on. Then transfer it to the a blender and add coconut milk to it. Blend it into a smooth puree. Then transfer it back to the pan and add the spices & tofu and bring it to a vigorous simmer. Reduce the heat to low and cover it and cook for about 20 mins or so. Uncover add the frozen peas and cook it for another couple of minutes uncovered. Serve it hot.
