Nice recipe. First time I'm doing tofu like that. Not the last time ! Firm tofu : try freezing the tofu when you get it from the store and keep it in the freezer until the day before you need it. This will produce a firm tofu by itself. I buy tofu in unnamed 1.5 kg blocks so I chop it in 4 large blocks, place each in a freezer ziploc bag then freeze them and keep them there. This technique of producing firm tofu was found centuries ago in northern Japan during winters. Nice to start any tofu recipe with a tofu that already has a bite to it. EDIT : I saw it was suggested previously and you prefer the squeeze/strain tofu texture. Both has its uses I guess. The freezer approach requires no extra work at all. Thanks for the recipes !

Anyone who messed up with the tofu sticking to the pan like me - add 2tbsp of starch and mash everything up together in the pan, make it like a pancake shape and add oil around the rim. Flip it once one side is crispy.

After the water is cooled to Luke warm remove the tofu and proceed with recipe.

How about using what is called “hard tofu” ? Have seen this type of tofu at Oriental stores .
I am not aware of “hard tofu”. I always use firm/extra firm tofu

Maybe the temperature was too high. Try reducing the temperature and fry for less time

The soy sauce has made things harder. There is a chicken 65 recipe but it doesn’t have much of gravy.
