I didn’t understand what chicken could taste like until I ate at a Jamaicans friends place. They totally opened my eyes! Sadly allergies have forced me to become vegan since then, so I can’t eat chicken anymore. But I’ll try to emulate this recipe with the tofu I’ve got sitting in the fridge. Thanks a ton!

I fry the tofu crispy on all sides first then cook it down with all the seasonings. This tofu still looks soft and mushy in the end. Frying it gives it more texture like chicken.

Oh no! If it happens again just cover and simmer for longer. Tofu is hard to overcook so it can hold up to long-simmering.
