I lost my Mom in 2015 and my Dad in 2020. As their health declined over years, their palates changed as well. I would make lunch for the 3 of us (and any of their tag along church friends) every Sunday. As they aged, they LOVED bigger, bolder flavors. I suspect your Mom loves your food and is so incredibly proud of you for how you're sharing it with the World. Food is such a powerful way to bring people together and share love. I remember getting a similar reaction once I finally figured out MY version of Jamaican Rice & Peas, because you know everyone does it a LITTLE different. Just like making a jerk seasoning/marinade.

This recipe is soooo good! even if i couldnt follow it 100%! I live in Romania and i never saw russet potato (also,i cook very rare with potatos) but this time i had some white potatos leftovers so i used those (maybe 1 potato in total) I didnt have jamaican curry powder so i just added organic curry powder (wich i use in all curries and i really love) Also i used canned lentils and skipped spinach bcs i forgot to buy.. (but this can be added next time you reheat the curry and will be very tasty if you just blanche the spinach into the curry :D) and skipped bonnet pepper as i didnt saw it here..but i used homemade chilli oil to top the curry! Thank you for this recipe!
I'm not Caribbean but let me tell you! This recipe is amazing!!! I grew up in the south eating soulfood for a good portion of my life. Not realizing until I became an adult that I probably shouldn't eat this way all of the Time I started changing some lifestyle habits. My biggest issue is finding non meat alternatives that taste good while packing a healthy punch. This recipe is perfect and so flavorful! I love peanut butter too so this was definitely a win win for me! I'm looking forward to trying your other hearty recipes!!!!

Your techniques and organization look like craftmanship when I compare it to my approach to cooking. My kitchen is a mess after I'm done. Even when cooking a one pot. You do it so effortless. Just one knife, a meticulous cutting technique and a minimum of waste. I was in awe throughout the whole thing. This is highly inspiring and I will assimilate much of that. I can't believe I cut onions and garlics wrong my whole life.

I love using the 2 different types of curry, adding the peanut butter (I used almond butter) and lime juice at the end. Oh, and toasting the spices in the beginning makes a huge difference. I made this last night. Used a habanero pepper. For the Jamaican Rice and Peas which is linked to the recipe i used the remainder of the can of coconut milk and some oat milk which worked perfectly.

My wife was just diagnosed with gout and Hashimoto's thyroiditis (probably genetic), which suddenly puts a lot of dietary restrictions on us (we were meat lovers before). But we do love curries. We will surely try out several of your recipes. Including the Scotch Bonnet, which I grow locally here in Switzerland. We really would be interested in dishes which are low in purine! hands down the best chickpea recipe I've come across in a while. OHHHH MYY GOODNESS.. I followed the measurements to the tee, most timess when I find a recipe online they are not to my taste, but I wanted to do it how you demostrated. and I was really blown away that I didn't need to add anything spice wise that is. I did add cauliflower as didn't have enough chickpeas on hand. I just started looking into vegan eating and I will be adding this curry to my regular meal plan menu. The sweet potato and lental curry is next.. Thank you sooo much!
I love all things Curry, and yes, I often cook a combination of Brown Rice and Lentils as they cook about the same time, or cook Lentils first, then add the White Rice. I also use Jalepeno and Serrano Peppers.

Last night I grabbed a bag if lentil from my pantry and wanted to try something different, other than plain lentil soup. So I searched vegan recipe with lentils and found this recipe. As a Caribbean gyal..I had all the I ingredients and when I tell you that it turned out perfectly...Even my children approved.
Made this dish today, not even a vegetarian myself. But what a beautiful recipe, very tastefull and nutricious. Easy to make, even for a clumsy cook like myself. I want to thank you and your mother for sharing this. Greets from the Netherlands!!
I prepared this curry and it is definitely one that I will keep in my "Often" File. I had to make some tweaks because I did not have enough lentils on hand as I thought so I added some black-eyed peas with the lentils. I also added kale which is no biggie, just a preference. And did not use the scotch bonnet due to preparing for 89 year old mother. I will add the pepper the next time i prepare the curry for myself only. This is so, so flavorful without the basic salt and black pepper. Thanks for sharing this recipe. It can be prepared as a special dish for company ( I have friend who will love it and think I ordered carry-out); or it can be a special dish just for me anytime.

hands down the best chickpea recipe I've come across in a while. OHHHH MYY GOODNESS.. I followed the measurements to the tee, most timess when I find a recipe online they are not to my taste, but I wanted to do it how you demostrated. and I was really blown away that I didn't need to add anything spice wise that is. I did add cauliflower as didn't have enough chickpeas on hand. I just started looking into vegan eating and I will be adding this curry to my regular meal plan menu. The sweet potato and lental curry is next.. Thank you sooo much!
I love all things Curry, and yes, I often cook a combination of Brown Rice and Lentils as they cook about the same time, or cook Lentils first, then add the White Rice. I also use Jalepeno and Serrano Peppers.

The scotch bonnet pepper, when added whole, is only used to extract flavour, not heat. Unlike most other peppers, scotch bonnet is really flavourful.

Last night I grabbed a bag if lentil from my pantry and wanted to try something different, other than plain lentil soup. So I searched vegan recipe with lentils and found this recipe. As a Caribbean gyal..I had all the I ingredients and when I tell you that it turned out perfectly...Even my children approved.

I prepared this curry and it is definitely one that I will keep in my "Often" File. I had to make some tweaks because I did not have enough lentils on hand as I thought so I added some black-eyed peas with the lentils. I also added kale which is no biggie, just a preference. And did not use the scotch bonnet due to preparing for 89 year old mother. I will add the pepper the next time i prepare the curry for myself only. This is so, so flavorful without the basic salt and black pepper. Thanks for sharing this recipe. It can be prepared as a special dish for company ( I have friend who will love it and think I ordered carry-out); or it can be a special dish just for me anytime.

I’m always fascinated at how similar the steps and certain ingredients in Jamaican Cuisine is to Haitian Cuisine or maybe it’s all just African. This reminds me so much of Haitian Cuisine, even the way you cut everything lol 😂 The love of my life is Jamaican and I get so confused sometimes lol 😂
