CREAMY MUSHROOM TOFU CURRY (VEGAN) WITH RED BELL PEPPER | Tofu Recipe Indian Style

This tofu recipe is too delicious. If you are not a fan of tofu then I highly recommend you to try this recipe as it may change your mind.
Ingredients required for making mushroom tofu curry -
* 454 gm/16 oz firm/ firm tofu. If your tofu comes in a box filled up with water, discard that water, just run some fresh tap water over the tofu, wrap it around paper towels and put a weight on top. Leave it like this for about half an hour so that the excess water drains off.
* 30 gms/ 2 tablespoons of cashew nuts soaked in hot water for about half an hour to an hour. If you are allergic to nuts, toast 2 tablespoons pumpkin seeds lightly in a pan over low heat and then soak them in water.
* 1 very large onion or 3 medium onions
* 5 large garlic cloves
* 1 inch length ginger
* 1 large or 2 medium tomatoes
* 1 green chilli
* 1 tablespoon raisins
* 3 portobello mushrooms or any mushrooms of your choice
* 1 red bell pepper
* 1 dry bay leaf
* 1 inch length cinnamon stick
* 5 green cardamoms
* 4 to 5 cloves
* 1 heaped teaspoon ground coriander (dhania powder)
* 1 heaped teaspoon ground cumin (jeera powder)
* 2 teaspoons Kashmiri red chilli powder
* 1 teaspoon turmeric powder
* 1/2 teaspoon dried fenugreek leaves (kasoori methi)
* 1 teaspoon garam masala powder
* about two teaspoons salt or as per taste
* 1 teaspoon sugar (optional)
* 5 tablespoons canned thick coconut milk. Can add more if you like coconut.
* coriander leaves(cilantro) or parsley for garnishing
Serve this with hot steamed rice/roti/naan/paratha

Omg - this was incredibly good - maybe too good, just like you said. I can't cook with cashews, so I typically substitute lima beans, which have a vague nutty flavor. Yum!!

Wow!!! Cashews and raisins sound very great combined with spices such as this. Also those bay leaves are much deeper colour than ones ive seen. I wonder are there different varieties or perhaps different processing technique???
They are the Indian bay leaves from Cassia tree

I had a few tomatoes I needed to use up, but wasn't quite prepared to make the entire recipe...no peas or mushrooms in my pantry and I didn't want to brown tofu that day SO I doubled the recipe, basically made the sauce adding in the garam masala and coconut cream. I jarred up the sauce. A day or two later when I made it to my favorite mushroom farm for mushrooms and bought some peas I sauteed mushrooms, browned tofu and made the dish with the jarred sauce. Darn forgot the peas but had plenty of sauce left. After we ate the tofu mushroom curry I made a chickpea and potato curry with the same sauce and added peas. Delicious! Thank you.

Hello Bumbi, I just prepared this curry dish and we loved it. All I changed was that I left out the green peas. The curry was hearty, creamy and spicy. My girl friend wants me to prepare it again for her - 5 stars!

I cooked this last night. Very nice. My wife and I both noted that there's a lot going on with this dish: the portobello mushrooms were meaty; the silkiness of the gravy; the squishiness of the tofu; the crunch of the bell pepper. We noted that the cloves came through a little bit. I confess that I forgot to add any chili (note to Bumbi: although the chili appeared in the video, you didn't include it in the ingredients list - hence I didn't think about buying it! Oops.)

Hello Bumbi. When you say thick coconut milk, is that the stuff the top of the can after the coconut milk has separated? Or coconut cream?
You can use any canned coconut milk, stirring it well or coconut cream

Why do you discard the soaking water of the cashews? Don't they contain flavour and creamyness that the massala can use?
You can use it if you choose to but add the water later on while blending in the blender. If you add while frying the onion ginger garlic the masala will get boiled instead of getting fried

There is nothing wrong or right. I mentioned that he dislikes coconut so added less coconut milk. It’s just a matter of individual preference.
