    I love that you showed the prepping of the collards (stemming and washing), not a lot of cooking shows show that part, but sometimes that detail is extremely helpful to beginners, thank you ❤️

    Collards are close variety to kale. In the Western parts of Poland we used to make similar dish - kale or collards now, bacon for anchovies, barley for rice, onions and diced potatoes.
    Thank you for the recipe, I am dashing for the collard greens in my "potager".

      I'm from the South as well 💜 I have always made my greens this way especially because I like fermented food. I love putting fish sauce and spicy vinegar ( you know the one we have in the cabinet 🤣🤣) its so good. Don't forget the rice it will be a hit 😋

      it is a southern staple even wen a person moves from the they still cook it werever they move to i.e my mom side originally from louisiana n moved to washington n they were cookin it up there n my courtdhip spouses mimis from ga n then moved to ny n his mom made collards up there

    This reminds me very much of the N-German meal "Braegenwurst mit Braunkohl". Collard greens as far as I can see are called Gruenkohl [green cabbage] in most of Germany, but in Lower Saxony it's called Braunkohl [Brown cabbage]. Instead of Anchovies, we add a sausage that is very tasty and full of fat. Onions and mustard. The whole thing is actually left to cook for some time and then eaten with peeled potatoes. Used to be one of my favourites when I was little. I only mention this because it seems certain flavours seem to be a must when cooking with this, a strong salty one and mustard. Very nice to see a Korean version.

    Yum yum yum! Looks sooo good! Collards are an old staple of many Black Americans. I love recreating old recipes and this is one I will definitely try, minus the anchovies, lol! . I'll use salt cod instead. Thank you for sharing! Dee, Long Island NY

    My Korean teacher! I live Lebanon and having Korean products is very rare. Thanks to you I make some available k dishes. You taught me that Korean food is tasty and yummy and nutritious too. My traveling list is toped by Korea. I even want to open my Korean restaurant one day. Love you!

    Here in China we got a special use of this kind of greens, we wash then put it in a container and then pour hot water into it, ferment for at least a week, then we cook it like simply stir fry, it's very delicious, we use cabbage, turnip leaves, etc. The best is mustard greens.

      @@Maangchi yes, no salt or a little bit of salt. We eat this mainly for its sour flavor. We call it literally in Chinese "Sour yellow vegetable", lol. Mostly we use a local kind of radish like plant, the radish had some strong mustard flavor, seems not totally exact as the collard greens. You can cut the whole plant into tiny pieces with both the radish root and leaves, then fermentation same way as above. Chinese name: 酸黄菜

    If you cannot find doenjang in your supermarket miso is a very similar product. Also you can use dashi, a Japanese broth made of kelp and anchovies if you cannot find dried anchovies. Dashi can be found with kelp only or anchovies only. I recommend dashi made from anchovies only but regular dashi is fine too. You will add the same amount of dashi as the amount of water.

    When I saw your caption Collard Greens I was like, "WHAAT?!?!?" I have learned by working with many from other countries you learn to adapt and alter recipes with the products in that country. I love how you adapted the loveable, hearty and tasty collard greens to the Korean recipe. There was a Korean restaurant I went to from a second generation Korean who was raised in the south (USA). OMG! The adapted recipes were so delicious. Collard greens are the best in fall/winter the leaves are more tender. I grew up with them in a pot with a ham hock served with sliced onions, cucumber and tomatoes in dill and vinegar. My mom always made extra because she knew my dad would sneak some when they were cooked in that crisp tender phase like the way you cooked them. LOL! Good memories. Hugs to you Maangchi!

    It looks very delicious.i want to try this method.normally we cut this into very small pieces and mix with scarped coconut and stir fry with oil, onion.green or red dry chilly and Maldive fish very tasty too

    Maangchi: if you get the opportunity, try the Georgia variety collards. Buy them as a cool weather crop; they’re sweeter & less bitter. I’d love to try your recipe. I’d have to hide the anchovies though. He’s always had Georgia collards seasoned with a bit of ham meat from the cool crop collards. The greens are dressed with pepper vinegar at the table & served with cornbread.
    I’ll have to think about a way to hide the anchovy, even if I’d have to blitz them. 👍🏽😊

      Ooh, here in Korea we have what is known as "ssam-kale". They are marketed as kale but unlike the curly bitter ones, the leaves look a lot like these collard greens and do not have a strong flavor. I wonder if ssam-kale could be the Georgia collards, ir at least a similar variety?

      Btw, I’ve 8 heads of cabbage; I had 12 or 14 heads, but I gave some to my oldest daughter for her & her roommate along with a married couple friends. I made a huge pot of vegetable beef soup. I managed to freeze about 8 quarts (70ish ml - I think I got it close). The rest was eaten. Each time I cook soup or make bolognese sauce, I use this huge Le Creuset pot. I’m in that group of people who can’t make a ‘little bit’ of soup. By the time I’m done, I have gallons of it. ☺️😊
      I should have collards to harvest soon. I’ll definitely try this with some. It rained some today. Yay! I’ve taken up most of the drip irrigation lines so they won’t freeze.

    Here in Brazil is a very common veggie. It's perfect with feijoada and you can also use to make green juice (orange juice, collard, apple).

    제가 알기로는 한국에서 collard greens 농장들이 있지만 보통 라는 이름으로 팔아요. 완전히 똑같은 식물인지 확실하지 않지만 요리는 미국 콜라드그린과 똑같이 잘 돼요.

    I grew up eating bimbimbap and red beans & rice (not together but maybe I should try it 🤔). The ultimate in getting the perfect bite. When I eat rice dishes at restaurants, my friends always ask me why I mix everything together. I didn't realize it wasn't a thing 🤷‍♀️ It seems weird to me not to mix it up.

    I'm not a fan of collards, I much prefer mustard and turnip greens. But this does remind me of how my mom made greens, she always blanched then fried them, in bacon fat or smoked pork jowl. Delicious!

    Looks so delicious! In the UK we have Spring Greens which are the closest I can think of the Collard Greens so I’m going to try those.

      Mustard greens, turnip greens, or kale is a good sub if you can't find collards where you're from! Happy Cooking :)

    I'm a Korean, I never heard of Collard greens before but I'll definitely try with Nappa cabbage! looks so yummy
