      most Ghanaian dishes are pretty easy to adapt. I've lived here for the past 8 years and we eat mainly local dishes just adapted. Palava we just do without the fish as you have the protein in the agushi, waakye too is delicious as is with stew, gari and salad (or kontomire) as the beans have the protein but you can always add some tofu in the side (easy to get in Accra or the north but harder elsewhere)...we do the soup for okro and banku with mushrooms, palm nut soup with aubergine, mushrooms and any other veg, same with groundnut soup, jollof with veg stock instead of chicken and sometimes add the red beans inside.... mmm I'm hungry now

    I am so happy to see a Greek person in this video! Greek cuisine is actually pretty vegan -friendly. There are a lot of Greek recipes which are vegan in their original form. Regarding spanakopita, I'd like to assure you that there is no need for anything egg-like if you don't want to add it. The ricotta cheese is also not something we traditionally add to it, as it's Italian. We almost always stick to feta cheese. Another tip is to use fresh spinach if you can find it. It makes a huge difference. Lastly, there is no need to precook the leeks, even though precooking them makes them even sweeter, and adding green onions and a bit of regular onions (red, yellow, it doesn't actually matter to us) makes the pie even more delicious.

    As a Vegan for decades, I am happy to see wider acceptance of Veganism. It's gone from having nothing to eat when dining out except for tired lettuce and sliced onion masquerading as an entre , to soo many delicious options. Plus its nice to tell someone you're a Vegan and not have them look at you like a communist in 1950.

      It feels good reading your story. I'm vegetarian for 2 years and I absolutely enjoyed every single day my veggies as much as I could. I wish I could do it earlier but I agreed with you. It's not anything as restricting but, instead inclusive. We can find and discover new ways to make to food enjoyable and feel good. 👍☺️

      My daughter went vegan as a high school student a decade ago. And even then there wasn’t much choice. I admire her so much for that, especially as such a young person! She finally talked me into it four years ago and I am so happy about it and wish I had done it sooner 💕🙌🏾

      @Sushimaster My diet is lacto-ovo vegetarian so I mostly consume vegetables, legumes, tubers, eggs and dairy products. Most of my family are meat eaters even though they occasionally eat meat too. There are definitely more types of vegeteterianism out there which I don't know much about. But it's good to know you prefer consuming plant-based meals over meat. Greetings from Venezuela 🇻🇪☺️

    The bean curd with tomatoes on toast sounds really good! Also it made me think about a way of veganizing shakshuka (a tomato and egg breakfast dish).

      I put soft tofu on shakshuka and stew it just like you would an egg. It’s very good! There are many Korean stews that do this with soft tofu and that’s what gave me the idea. I’ve never used black salt but I wonder if sprinkling a little on the tofu would be good too?

      @@nmg6248 That's a good idea with using black salt. Also another route that might be interesting is using peeled brussel sprouts since the sulphur in the brussel sprouts can give it a light, eggy taste.

      YES!!! I can testify that vegan shashuka is delicious and amazing! As NM G said, use tofu. If you like when the eggs in shashuka are super tender, I recommend silken tofu. Since tofu is already edible (no need to cook), let it come up to room temp as you are preparing the rest of the dish, then gently set it on top of the bubbling tomato, onion, etc. when ready to serve :)

    My yiayia still doesn't understand how I could be vegan. I tried not to break her little Greek heart when she realized I would never eat her spanakopita again. It is the one food I miss most. I am planning on making my own vegan version as soon as I work up the nerve. 🐑💗🌱

      @@MartinJones123 Her food is so so great, but I'm not missing out. The value comes from sharing the memories and moments, and those memories will always be there. I can easily have the same tastes and textures without animal products. But for those wondering, my yiayia is very elderly and over the last year or so has gotten to a point where she doesn't do much cooking anymore. Regardless of whether I was vegan or not, the last moments of enjoying my yiayia's spanakopita remains in the past and in my memory 💖

      There's some really good recipes out there for making veganized versions of seafood! If you like tuna you should check out "watermelon tuna" recipes! I haven't tried it myself yet (personally I was never a big fan of fish growing up) but I've heard lots of good reviews!

    Many dishes in Greece are vegan Spinacrice. green beans. oberg inens sucini green pepper and potatoes tomatoes in oven.Rice vith tomato .and many many different types of dishes.

    I haven't even finished the video yet but the bean curd as egg...wow that blew my mind. I was looking for a similar texture and I never even thought of it! For my use case, I wanted to replicate a dish my dad would make me growing up, huevos al albañil (eggs, construction worker style lol):
    - Sauté diced onions, garlic and a can of diced tomatoes
    - Once onions are translucent, add vegan chicken stock (or veggie). Ideally, this will be like a thickened soup so add as much stock/water as you want
    - Now with the bean curd! You can cook it in oil, adding black salt and pepper (turmeric like Tiffany if you want)
    - Once both the tomato broth and bean curds are done, serve the broth in a bowl and top with bean curd.
    - Add a dollop of vegan sour cream or vegan white cheese (let it melt a bit) and enjoy with some warm tortillas!
    Such a comfort food and I can't wait to try the bean curd!

    ahh I love gigantes, or as we call them in Cyprus, gigantes giahni😊 there are so many Greek dishes that are already vegan especially in the giahni category (basically any ingredients in that tomato sauce) and paired with yogurt & bread it’s just the heartiest meals ever❤️

    Ooooh I love how she combined tofu and mushrooms! We often eat mushrooms for the great meaty texture but they don’t have a good protein content like meat does. Combining them you get best of both worlds

    I'm not vegan but I really love watching these videos for great new ideas + inspiration! I have at least 1 vegan meal a day, sometimes 2, so videos like this really help me by getting excited to try new things. I can't wait to make some of these recipes while also continuing the journey of reducing my animal product consumption!

    Sounds good! But as an Italian the way in which pasta alla Norma is cooked is disappointing and it ruins it. Is a naturally vegan dish (if you take away the cheese ok top) therefore why modify the original recipe 😉

      A lot of Italian recipes are naturally vegan or easily "veganizable" if you think about it. Historically, people couldn't afford a lot of animal products, so many traditional dishes make minimal use of them

    Not gonna lie I’ve made that vegan Nutella and it’s more of a nut butter rather than a chocolate spread. Still good but def doesn’t live up to Nutella or even the version in the health food section that doesn’t have palm oil

      I also made the orange tofu, although I think I didn't make enough sauce for the amount of tofu I used. It was still delicious though, just not as vibrant in color

    you can't sautee in broth... sauteing is cooking something in high heat and a bit of oil... broth is water, not fat.

      Ikr it’s just something those oil free vegans do. Can’t for the life of me figure out why someone wants to eat oil free, when it’s so important for cooking and is necessary for health in moderation.

    Instead of sugar why not erythritol? Also, I'd make this healthier by adding erythrol separately to sweeten the yogurt and not process it with heat...our bodies treat processed as poison causing constant inflammation
