- Merle and Rachel try their hand at Vegan Mac N' Cheese at two different price points: $3 and $32! Which one are you trying first?
Recipes:
Cheap Vegan Mac N’ Cheese
Servings: 4
INGREDIENTS:
½ cup rolled oats
2 cups water
1 head garlic
3 tablespoons olive oil, divided
1 medium shallot, diced
1 teaspoon salt + a pinch, divided
1/2 roasted red pepper
3 tablespoons nutritional yeast
1 tablespoon tomato paste
1½ tablespoons cornstarch
½ teaspoon paprika
¼ teaspoon turmeric
1 teaspoon apple cider vinegar
½ cup low-sodium vegetable broth
8 ounces dry elbow macaroni, cooked
PREPARATION:
Preheat the oven to 400°F (200°C).
Cut off the top ½ inch (1 ¼ cm) of the head of garlic and drizzle the exposed cloves with 1 tablespoon olive oil. Replace the top of the head of garlic and wrap tightly in foil. Roast for 35-40 minutes, until the cloves are easily pierced with a fork. Unwrap the garlic and let cool completely. Once cooled, squeeze all of the cloves from their skins.
Add the rolled oats, and water to a high-powered blender. Blend on high speed until completely smooth. 30 seconds. Don’t overblend or oat milk will get gummy. Double strain. Set aside.
In a 12-inch (30 G) cast iron skillet over medium heat, add 2 tablespoons olive oil. Once the oil begins to shimmer, add the shallot and season with a pinch of salt. Cook for 2-3 minutes until translucent.
To a blender add the sauteed shallot, roasted garlic, roasted red pepper, nutritional yeast, tomato paste, cornstarch, 1 teaspoon salt, paprika, turmeric, apple cider vinegar, oat milk and vegetable broth and blend until smooth.
Transfer sauce back into the cast iron skillet and cook until thickened, about 5 minutes.
Add pasta to the pot and stir until sauce is evenly distributed.
Sprinkle with paprika and serve.

Expensive Vegan Truffle Mac N’ Cheese
Servings: 4
INGREDIENTS:
1 cup raw cashews
3 cups cold water
3 ounces shiitake mushrooms
4½ tablespoons olive oil, divided
1¼ cups panko bread crumbs
1/2 teaspoon paprika
2½ teaspoon garlic powder, divided
2 teaspoons salt plus a pinch, divided
3 tablespoons grated vegan Parmesan
¼ cup chopped chives
4 tablespoons vegan butter
3 tablespoons flour
½ teaspoon black pepper plus a pinch, divided
1 teaspoon onion powder
⅛ teaspoon cayenne
2 tablespoons nutritional yeast
8 ounces vegan cheddar, divided
4 oz vegan cream cheese
Low-sodium vegetable broth (if needed)
8 ounces pasta
6 slices vegan gouda or provolone
2 tablespoons truffle oil
PREPARATION:
Preheat the oven to 375°F (200°C).
Bring a small pot of water to a boil. Add the cashews and boil for 10-12 minutes until tender, then drain.
Remove the stems from the shiitake mushrooms and cut into slices about ⅛-inch (3 mm) thick. Add mushrooms to a small baking sheet and drizzle with 2½ tablespoons olive oil and salt and pepper to taste. Toss mushrooms in oil until well coated and bake for 10 minutes.
Heat 2 tablespoons of olive oil in a medium skillet over medium-high heat. When the oil is shimmering, add the panko, paprika, ½ teaspoon garlic powder, 1 teaspoon of salt, and 3 tablespoons grated vegan Parmesan. Stir with a spatula to coat the breadcrumbs in the oil. Toast, stirring frequently, for 3-5 minutes, until the bread crumbs are lightly golden brown. Transfer the bread crumbs to a bowl and toss in mushrooms. Set aside.
Add the boiled cashews, and cold water to a high-powered blender. Blend on high speed until completely smooth. 30-60 seconds. Set aside.
Preheat the oven to 375°F (200°C).
In a large pot over medium heat, melt the vegan butter. Whisk in the flour, making sure there are no clumps. Cook the roux for 3-4 minutes, whisking continuously, until the flour is golden in color and fragrant.
Add the blended cashew mixture to the skillet and whisk well to combine with the roux. Add the remaining teaspoon of salt, black pepper, 2 teaspoons garlic powder, onion powder, cayenne, nutritional yeast, 4 ounces vegan cheddar, vegan cream cheese and stir until well combined. Bring to a simmer and let cook 2-3 minutes until thickened. It should be thick enough to coat the back of a spoon and pool when drizzled, but not so thick that it is gloppy. If the cheese sauce is too thick, add low-sodium vegetable broth, 2 tablespoons at a time, until it reaches the desired consistency. Stir in noodles.
Transfer half of the mac and cheese to an oven-safe dish and cover with provolone slices. Then add the rest of the mac and cheese and top with the rest of the shredded cheddar. Bake for 15 minutes. Remove from oven and top with bread crumb mixture. Bake 5 more minutes.
Drizzle with truffle oil and serve.

I actually made the $32 recipe and it was sooooo good! It was super rich and flavorful; a small serving fills you up! I used soy milk instead of cashew milk because I’m not a fan of cashew milk, and portobello mushrooms because they were what I had I hand, and it still came out well. Thanks so much for the recipe and for helping to provide me with a week of leftovers!
I'm gonna try Merle's recipe this weekend.

I love the affordable one because it’s oil free but the bread crumbs with mushrooms sound delicious.
Wish they would have this challenge be them buying the ingredients at the store to really match the price point that they are given! It would fun to see then have it showcase it by cents lol
I don't think they're given price points lol they get the ingredients and then calculate the price
If they did that, they'd both go over budget because they would have to buy full packages of the things they're using even if they're only using a fraction of the package. Like the vegan butter, a container can be around $4 but they're not using a full container, so they should just calculate how much goes into the actual recipe.

Hot tip for the broth: I keep a "better than bouillon" jar and i get sooo many uses and also use to season veggies! There a veggie one, garlic one and some other options. Great seasoning to keep on hand.

I want to note that buying nondairy milk (yes even and especially oat milk) is totally valid and to me preferred. Store bought nondairy milks are fortified which gives you more nutritional value than what you would do.. which is just.. oats and water lol. Just a note. I know the “no reason” comment wasn’t meant to be an extreme thing lol I’m just picky

There is a good reason to buy oat milk at the store! It's typically fortified with calcium and vitamin D. Oatmeal that you turn into oat milk isn't
some brands fortify it with B12 too’
Plus the oats I used were stale and made the worst non-dairy milk I've ever had. Buying smaller batches of fresh oats isn't as cost-effective but way better, bc bulk-buying leads to stale oats. However, if you're going to buy fresh oats constantly to have fresh oat milk, then you might as well just buy the pre-made cartons since the cost and time-savings of buying fresh isn't much cheaper.

It works so well! If you use veggie broth with it, you can't even taste the coconut.
thats what i did last week, vegan roux, full fat coconut milk, tumeric, paprika, adobo, other seasonings and i had a pretty good mac and cheese

I use oatmeal to thicken cream sauces. Works fine.
If that's a ceramic pan, you can skip the oil to make these healthier. Also those mushrooms look amazing

Assuming you have absolutely none of these ingredients, and assuming you are buying the smallest quantities possible to make this recipe, in the average grocery store, at sale prices instead of full retail, you will spend $42.91. This also assumes you are buying a box of vegetable broth cubes and not buying produce to make your own, which would make this closer to $50.
While I realize things are priced differently in different areas of the country (and these are US prices), I did a sampling of various major grocery store chains across the country and took an average. When possible I used the shopped for the same brand used in the video.
Here's the breakdown:
1 head of garlic $0.50
1 shallot $0.33
Old fashioned oats $2.49
1 jar roasted red peppers $3.49
16 oz. Extra Virgin Olive Oil $7.99
16 oz. can of sea salt $1.79
Nutritional yeast $6.49
1 4oz can tomato paste $1.25
Corn starch $1.99
Paprika $3.74
Turmeric $3.97
Apple Cider Vinegar $4.49
Vegetable broth $2.50
Macaroni pasta $1.89
Total: $42.91
These types of videos are very misleading and a lot of people watching these videos don't stock all of these things in their pantry.
Let's assume you have sea salt, olive oil, tomato paste, corn starch, paprika, and turmeric on hand all the time. If you had to go buy the rest of the ingredients, you still have to spend $15.69 for the rest of the ingredients.
Really the only way this is going to cost only $3.00 is if you have all of the ingredients on hand already, then dividing the cost of the items by the quantities used will this cost you $3.00. You still have to buy the ingredients and have them in your house.

Here is my own unsolicited advice for if you are making a cheap version of mac n' cheese cause it is my favorite. I am not vegan, but I like vegan mac better than dairy based mac n' cheese. I highly suggest using vegan chicken bouillon instead of vegetable broth. I have dabbled with both and the "chicken" one helps to make a more accurate cheese flavor. I also suggest using smoked paprika. I PROMISE, the smoked paprika gives it such a nice smokey layer of flavor to the cheese taste. Lastly, I suggest going with cashew milk instead of oat. I have made both many times and can always taste a major difference.

Really really easy cheese sauce: potatoes with nutritional yeast, salt and paprika powder in a blender until it’s sticky
(You can add tumeric for colour too and a splash of beer or white wine for some more flavour)
Could also add cooked carrot and/or vegetable broth and/or lemon juice
What vegan cream cheese was used and do you recommend it? I can’t find one I like
