  • I don't know how I've made it this far (as a vegan) without trying our lord and savior, Tabitha Brown's iconic vegan mac 'n' cheese recipe. Tab did not hold back on the vegan dairy, you will find vegan butter, cheese, yogurt, and MORE in this classic staple. Let's see if it's as fabulous as its creator!     The measurements I used:
    16 oz pasta
    1 1/2 lb butternut squash
    1 large russet potato
    2 tsp herbs & spices
    1 stick vegan butter
    1 1/2 - 2 tsp salt
    1/2 cup vegan yogurt (unsweetened)
    1/4 cup nutritional yeast
    1 tsp garlic powder
    1/4 cup vegetable broth
    3/4 cup vegan cheddar
    3/4 cup vegan mozz

    My family is german and every year we make Spätzle for christmas (and dinner). It is a german egg noodle. For years after going vegan, I missed Spätzle so much so a little while ago, I decided to veganize it. And I made it better. This is also the opinion of my entire family who agree that my way is better. I’m going to leave the recipe and I hope anyone reading decides to give it a try. It’s really good.
    Ingredients: 1 medium sweet potato (cooked and mashed), 3 just egg eggs (9 TBS), 1/2 cup unsweetened plant milk (I use soy), 2 cups white flour, 2 teaspoons salt, 4 TBS vegan butter, 2 TBS minced parsley, 1/8 tsp nutmeg
    Instructions: Put a large pot of salted water to boil on the stove. Mix together mashed potato, salt, and just egg. Then add flour 1/2 cup at a time, mixing, until everything is well combined. Melt the vegan butter in a large skillet (I use a non stick one) and mix in the nutmeg. Turn heat off under the skillet and set it next to the pot of water. Once water is boiling, add a glug of neutral tasting oil to prevent sticking. Then take a potato ricer and add about 1/2 cup of the batter, and press it through into the pot of boiling water. Allow the noodles to cook in the water and separate them if they clump together. Once the noodles float, remove from the water with a slotted spoon and put them in the fry pan. Repeat until the batter is gone. Then stir fry the noodles on medium heat until they are golden brown (about 10/15 min). Mix in parsley and serve.
    I really hope people try this recipe. Of all the things I’ve veganized, Spätzle is what I’m most proud of and it really is very delicious.

      @@Evelyntheee yay! That makes me so happy to hear! I know potato isn’t traditional in Spätzle, but I added it so I didn’t have to use so much just egg. It worked well and it honestly improved the flavor a lot. I really hope you like it ☺️
      I also just realized that I left out one ingredient in my original comment. I’ve just edited and it has the complete recipe now.

      @@leonie0398 Maybe you can use Greenforce Veganes Ei, they're a German brand and have a lot less artificial stuff than Just Egg (can't get Just Egg in the Netherlands either btw, /waves to the neighbors).

    I love Gaz Oakley's mac and cheese--it has breadcrumbs AND mushrooms and tastes just like non-vegan mac. You should definitely try it out!

    Okay, I made this last night, it was ABSOLUTELY FIRE!!!! Literally best Mac & cheese ever, let alone Vegan Mac! I added a little cayenne to the sauce, and a dash of MSG, and holy crap. It slaps!! And pretty easy! Thanks for sharing Merle. Stoked that you’re going to be uploading more often. 🙌🏼. Happy holidays.

    I actually use a tip from an old tasty recipe of yours for butternut squash mac - poke the butternut squash with a fork then microwave it for a bit to soften it up, it makes it sooo much easier to peel and cut.

    This looks great but I would’ve loved to see more seasoning go into it, like old bay seasoning, garlic powder, onion powder , a bit salt and fresh cracked black pepper!

    I enjoy Tabitha Brown’s garlic all purpose seasoning! It’s great paired with some mushroom umami seasoning.
    Also, loving the added string lights! Very well done episode from mac and cheese (which I was looking for a good recipe) to the lighting and angles! 😊

    Sometimes you can find butternut squash pre-cubed, in the freezer section of the grocery store. So that might be an option if you really don’t like handling a whole squash. It’s understandable; they get sticky and gooey when you peel them. Also, just go to any coffee shop or restaurant, and the chances are very good that they have used coffee grounds that they would give you.

    LOL I love your description of orecchiette pasta. They do look like caps, but in Italian it means "little ears!" And a 'ch' in Italian is a 'k' sound! Just your friendly Italian here

      @@MerleONeal You just put it in the Microwave (prick some holes) for a few minutes. Wait a little and then cut and peel it.
      Way easier.
      I think I saw this the first time on the Martha Steward Channel.

    Another way you could go about the butternut squash is to half it, scoop the seeds, and simply roast it until tender then scoop the inside out of the skin. Might have a little more flavor.
    But this looks absolutely fire, thanks for sharing!!

    i would LOVE the farmers market idea. I see so much pretty veg that I just don't know what to do with so I don't get it. You could help bring attention to some unsung hero in the food world, bring more love to stuff people might be intimidated by! Great idea, can't wait for more videos

    Rainbow Plant Life just did a vid using butternut squash and her hack is to microwave the butternut squash for two minutes before peeling/slicing. Softens it enough to make it easier to work with!

    I have a few squash that I grew this summer that need eating. This couldn't have come at a better time. Thanks for testing this one out. I think another "holiday" themed video that would be so awesome is vegan cookies/cakes. We do a cookie tray at our family gathering and with one V & GF, one lacto/ovo vegetarian, and the rest of the family with no dietary preference - sweets are always a hard one.

    I would totally make this with precut butternut squash. I made mac n cheese for thanksgiving and I literally used the recipe on the back of the elbow macaroni box, just subbed vegan butter cheese and soy milk. Used a flour roux. It was amazing!

    This has been my go to vegan mac recipe for 2 years, and i agree with you about baking it. I made the mistake of baking it to get extra fancy for thanksgiving and it dried it out so bad :(

    ok while we're on the topic of cheese, there is this guy called Chef TJ here on youtube that makes some magical stretchy mozarella with fermented wheat starch and I would really like to try it out, but I don't really trust myself with the fermentation process...so I would really like to see you give it a go and share your thoughts!

    Hey Merle, you're my girl. Thanks for the video. I can totally relate to the prep of the butternut squash. Whenever I have to peel one, I also struggle through it with a peeler and a knife - and the worst part is definitely the squash hands afterwards. To combat this, I will typically take frequent breaks from handling the squash to rinse my hands.

    Would love to see a seasonal cooking series from you. Coming from a meat eater, I would love to see more recipes on your channel that aren't solely replicating meat but a way to make vegan food just taste good in general. Different ways of cooking veg or including it that would completely change its taste. For example, I'm not a fan of most mushrooms i've tried, is there a dish that rids them of that earthly dark flavour, disguising it entirely?

    I’ve heard rocking the squash 🎸 when cutting helps. Like instead of pressing down on the knife you hold the knife more still and roll the squash.

    This is pretty similar to the Thug Kitchen recipe that uses potato & carrots simmered down and then blended with a bunch of nooch and other flavours, then their recipe calls for spaghetti squash just folded in... It's one of my faves, the book automatically opens to that page lol

    I’m not vegan but have lactose sensitivity and am currently trying to incorporate more veggies/fiber in my diet I already try not to eat a lot of red meat and I notice a difference when I only indulge on occasion. I say all this to say I have a big love of gardening and farmers markets and love to create foods out of seasonal crops so PLEASE make a series for it I’d love it ! If you need any ideas or want to do FaceTime cooking sessions I’m all ears!

    Hey hey! Have adored your content for a long time now. I love cooking, i suggest looking into a cabbage peeler for larger produce. Makes a world of difference for peeling melons, pumpkins, or squash. ❤

    OMG FINALLY A VEGAN MAC N CHEESE WITHOUT NUTS!! I’m allergic to tree nuts so the cashew dairy substitution in most cheesy recipes is always disappointing. This looks delicious, I’ll have to try it out. Thanks!!

    I’m not vegan, but I am incorporating some vegan meals into my diet this year for health reasons. I’d love to know what herbs & spice you used so I can make this recipe. It looks delicious & your facial expression when you took your first bite said it all😄

    OHHHH MY GOD this is so off-topic but my dad used to read Caps For Sale every night and do voices and I absolutely loved it 😂😂 really is a great book -- also fantastic video and recipe, will definitely try to make at home... and risk the squash hands
