- I don't know how I've made it this far (as a vegan) without trying our lord and savior, Tabitha Brown's iconic vegan mac 'n' cheese recipe. Tab did not hold back on the vegan dairy, you will find vegan butter, cheese, yogurt, and MORE in this classic staple. Let's see if it's as fabulous as its creator! (recipe measurements at the bottom)

Good to know!
Me too!!!
same here!!
I still make her apple crisp every year! ❤️
My family is german and every year we make Spätzle for christmas (and dinner). It is a german egg noodle. For years after going vegan, I missed Spätzle so much so a little while ago, I decided to veganize it. And I made it better. This is also the opinion of my entire family who agree that my way is better. I’m going to leave the recipe and I hope anyone reading decides to give it a try. It’s really good.
Ingredients: 1 medium sweet potato (cooked and mashed), 3 just egg eggs (9 TBS), 1/2 cup unsweetened plant milk (I use soy), 2 cups white flour, 2 teaspoons salt, 4 TBS vegan butter, 2 TBS minced parsley, 1/8 tsp nutmeg
Instructions: Put a large pot of salted water to boil on the stove. Mix together mashed potato, salt, and just egg. Then add flour 1/2 cup at a time, mixing, until everything is well combined. Melt the vegan butter in a large skillet (I use a non stick one) and mix in the nutmeg. Turn heat off under the skillet and set it next to the pot of water. Once water is boiling, add a glug of neutral tasting oil to prevent sticking. Then take a potato ricer and add about 1/2 cup of the batter, and press it through into the pot of boiling water. Allow the noodles to cook in the water and separate them if they clump together. Once the noodles float, remove from the water with a slotted spoon and put them in the fry pan. Repeat until the batter is gone. Then stir fry the noodles on medium heat until they are golden brown (about 10/15 min). Mix in parsley and serve.
I really hope people try this recipe. Of all the things I’ve veganized, Spätzle is what I’m most proud of and it really is very delicious.
Hello another german here and I will 100% try your recipe :)
@@Evelyntheee yay! That makes me so happy to hear! I know potato isn’t traditional in Spätzle, but I added it so I didn’t have to use so much just egg. It worked well and it honestly improved the flavor a lot. I really hope you like it ☺️
I also just realized that I left out one ingredient in my original comment. I’ve just edited and it has the complete recipe now.
Where do you get justeggs from? I cannot find it here in Germany:(
@@leonie0398 Maybe you can use Greenforce Veganes Ei, they're a German brand and have a lot less artificial stuff than Just Egg (can't get Just Egg in the Netherlands either btw, /waves to the neighbors).
I’m German I will try it. Still waiting for someone to make a vegan grüne soße
I love Gaz Oakley's mac and cheese--it has breadcrumbs AND mushrooms and tastes just like non-vegan mac. You should definitely try it out!
ohhhh okay i'm intrigued
I, love Gaz's Recipes ❤
OMGGG I need to try this!!
I need you and Tab to collaborate again. That was my favorite Tasty video ever. My 2 favorite vegans in one video, yes please!
I actually use a tip from an old tasty recipe of yours for butternut squash mac - poke the butternut squash with a fork then microwave it for a bit to soften it up, it makes it sooo much easier to peel and cut.
ahhh it seems i've forgotten my roots....
👀
I am not a vegan, but I love your videos. As a lacotse intolerant person, many vegan dishes are the better option for my gut and you make it fun and accessible to make them!
That makes me so happy💚
I'm not vegan either, but I love all of these recipe and ranking videos
I'm not vegan either, but I watch everyone of her videos lol.
Same. I also appreciate the dairy free alts and they are fun recipes.
I second this! I love Mac and cheese but my lactose intolerance stomach doesn’t like it. I’m excited to make this
You are much braver than I.....butternut squash is available in the frozen aisle....much safer to work with
yeahhhhhhh... that was totally an option that i missed
Oh my gosh I always forget frozen butternut exists! Haha. But every rare time I DO remember is much appreciated.
I would absolutely love a seasonal recipe series! Something I want to be more versed in, so I would appreciate the content !
I LOVE Caps for Sale!!! 😭😭😭 Thank you for mentioning it no one ever knows what book I’m talking about if I mention it
A CLASSIC!
those little lights are definitively a game changer 💡💛 very cozy
I have a few squash that I grew this summer that need eating. This couldn't have come at a better time. Thanks for testing this one out. I think another "holiday" themed video that would be so awesome is vegan cookies/cakes. We do a cookie tray at our family gathering and with one V & GF, one lacto/ovo vegetarian, and the rest of the family with no dietary preference - sweets are always a hard one.
Her recipe is my favorite mac and cheese recipe. I was lucky enough to find pre-cut butternut squash.
Another day, another fantastic video. Thank you for the knowledge. I'll be returning for more in the future.
Aw thank you! glad you enjoyed it :)
Sometimes you can find butternut squash pre-cubed, in the freezer section of the grocery store. So that might be an option if you really don’t like handling a whole squash. It’s understandable; they get sticky and gooey when you peel them. Also, just go to any coffee shop or restaurant, and the chances are very good that they have used coffee grounds that they would give you.
This made me hungry!! I love Tabitha Brown, she's such an amazing soul. Awesome you got to meet her!!
Another way you could go about the butternut squash is to half it, scoop the seeds, and simply roast it until tender then scoop the inside out of the skin. Might have a little more flavor.
But this looks absolutely fire, thanks for sharing!!
I would totally make this with precut butternut squash. I made mac n cheese for thanksgiving and I literally used the recipe on the back of the elbow macaroni box, just subbed vegan butter cheese and soy milk. Used a flour roux. It was amazing!
A seasonal cooking series would be amazing!
YES! Please do a seasonal series! Inspire us all please!😂
LOVE this angle! Feels super open and airy
Rainbow Plant Live just did a Video with Butternut Squash. And she shows how it is easier to cut them.
nowwww you tell me
@@MerleONeal You just put it in the Microwave (prick some holes) for a few minutes. Wait a little and then cut and peel it.
Way easier.
I think I saw this the first time on the Martha Steward Channel.
The compost tip is a great one! As someone who got a new Nama juicer this year...the fruit flies are vicious 👀 The Figgin Awesome hoodie is amazing by the way.
Yes, do a Tabitha Brown ranking video, love those
My mom puts a dash of hot sauce in her macaroni and cheese and I swear it improves the flavor so much. That might make it even better :)
This angle is the best so far! Happy holidays! ❤
Merle! Such a good video! I think when you do these kinds of videos and you have an idea to make it better, you should totally go for it once you've completed the original recipe! I totally want to see you add bread crumbs to this hahah.
Hey Merle, you're my girl. Thanks for the video. I can totally relate to the prep of the butternut squash. Whenever I have to peel one, I also struggle through it with a peeler and a knife - and the worst part is definitely the squash hands afterwards. To combat this, I will typically take frequent breaks from handling the squash to rinse my hands.
ok while we're on the topic of cheese, there is this guy called Chef TJ here on youtube that makes some magical stretchy mozarella with fermented wheat starch and I would really like to try it out, but I don't really trust myself with the fermentation process...so I would really like to see you give it a go and share your thoughts!
I saw that video. Best stretchy vegan cheese I have seen. I'm surprised saucestache hasn't made it yet.
Yes to seasonal cooking idea!
This is pretty similar to the Thug Kitchen recipe that uses potato & carrots simmered down and then blended with a bunch of nooch and other flavours, then their recipe calls for spaghetti squash just folded in... It's one of my faves, the book automatically opens to that page lol
Would love to see a seasonal cooking series from you. Coming from a meat eater, I would love to see more recipes on your channel that aren't solely replicating meat but a way to make vegan food just taste good in general. Different ways of cooking veg or including it that would completely change its taste. For example, I'm not a fan of most mushrooms i've tried, is there a dish that rids them of that earthly dark flavour, disguising it entirely?
I’ve heard rocking the squash 🎸 when cutting helps. Like instead of pressing down on the knife you hold the knife more still and roll the squash.
Kia ora from New Zealand! Our favourite holiday dessert is Pavlova with lots of yummy seasonal fruit as it is summer for us! Would love to see you make it vegan with aquafaba :)
Definitely liked the corner angle; much more interesting.
I pronounced "Daiya" incorrectly for years, but it's actually pronounced "Day-a". Like have a nice day-a!
Yes to seasonal cooking series!!
I've never commented on your videos. But I definitely had to hop on here and say I'd watch your seasonal cooking series! 10/10 video. What a treat!
Yay! Thank you!
Yes more seasonal recipes please!! And no one ever talks about the struggle of cutting butternut squash… the worst vegetable to cut ever 😫
it sUCKSSSSS
How did i just find your channel !?!?😳 I'm so glad to have stumbled upon your Jamie Oliver shepherds pie recipe taste/cook test, I was instantly sold and subscribed, now to binge all your other videos .
First one here😎❤️ love you Merle! You’re my therapy after a long work day
For butternut squash: pierce it and microwave it for a couple of minutes! Helps a TON!
Mark from Sauce Stache just gave you a shoutout! Let’s go RUclips do yo thang! Let’s blow Merle up! (in a good way)
The closer angle is 🙌🙌
merle ngl im tired as hell lol and the Mac and cheese shot in the beginning looks so good right now . also love the energy in this video !! the lights look so cool
you got this!! make the mac! make the mac! Glad you like the lights :)
@@MerleONealbased off of your reaction at the end i might have to !! thanks for spreading this awesome recipe cuz this looks amazing :D
Superb and awesome work 👏 👍 God bless you 😊
Thank you! Cheers!
I love that video with you and Tabitha! I watch it every now and then because the vibes from both of you was soooo good in that video. All the food y'all ate in that video looked so amazing too! I love watching Tabitha's videos too because she makes such delicious looking food.
I love the seasonal cooking idea!!!!
I love your videos because they help me sneak veggies into my family’s food! This I feel will be another great one! 🤣❤️
This looks absolutely divine. 😍
I would love love love for you to try making Koshary, a notional Egyptian meal - Yes, it is vegan! (unfortunately not a holiday meal), recipes differ between households and I would love to share mine!
Thanks for uploading, this year I lost some my family members this year might be sadder this holiday season
sending you love and a big hug
@@MerleONeal thanks and have a great holiday season
I’m not vegan but have lactose sensitivity and am currently trying to incorporate more veggies/fiber in my diet I already try not to eat a lot of red meat and I notice a difference when I only indulge on occasion. I say all this to say I have a big love of gardening and farmers markets and love to create foods out of seasonal crops so PLEASE make a series for it I’d love it ! If you need any ideas or want to do FaceTime cooking sessions I’m all ears!
Re: the amount of butter
If you're cooking at home and you wonder why things don't taste as good as X restaurant or your grandma's recipe, its because you didn't put enough fat or salt in. Occasionally it needs a squeeze or sprinkle of a vinegar or lemon/lime but usually its the butter/salt.
I need to try this ASAP
I’m not vegan, but I am incorporating some vegan meals into my diet this year for health reasons. I’d love to know what herbs & spice you used so I can make this recipe. It looks delicious & your facial expression when you took your first bite said it all😄
OMG FINALLY A VEGAN MAC N CHEESE WITHOUT NUTS!! I’m allergic to tree nuts so the cashew dairy substitution in most cheesy recipes is always disappointing. This looks delicious, I’ll have to try it out. Thanks!!
hope you love it!
Chao makes the best so far....😊
Hey hey! Have adored your content for a long time now. I love cooking, i suggest looking into a cabbage peeler for larger produce. Makes a world of difference for peeling melons, pumpkins, or squash. ❤
Love butternut squash and honeynut squash. But yeah cutting them is a pain. I found the easiest way, cut in half and bake and just scoop it all out. But that method isn’t all purpose.
My Gurl Merle! 🥰❤️🤗
This looks very yummy!
Try this traditional Dish called Kutia. It is usually eaten on Christmas in Eastern European countries and very easy to be made vegan. All you have to do is swap Honey for another sweetener of choice. I’d recommend agave or date syrup maybe. Maple might have to strong of a flavor for it. Anyways great and simple dish that is worth some attention.
Hi Merle, longtime fan. I’m from Kentucky, and nothing hits home like vegan biscuits with chocolate gravy on top. Bonus points if there are fried potatoes on the side!
Thanks for sharing!! That sounds delicious
That was an...interesting way to handle a butternut squash.
Recently discovered frozen cubed butternut squash. :D
yes i need to do that next time lmao
Love our reigning vegan queen. You're too funny Merle!! Can't wait for the next one!! ❤❤
I would love a food ranking
I hate peeling with a passion. I’m making purées every other day for my seven month old. I just chop it into slices and cut the skin off one end. Idk if it’s faster but I don’t have to struggle with a peeler.
I remember caps for sale and even have my old book I've now passed on to my kids
If you bake the squash for 10 to 15 minutes beforehand, they are much easier to peel.
I wonder what it would be like adding nutritional yeast?
I would’ve used some frozen butternut squash 😂. I hate cutting and peeling them.
Awesome :D I actually really love this vegan mac and cheese it has to be one of the best xox
Just turned on notifications so I don’t miss a video
Aw I'm so glad to hear it
If you pierce the butternut squash and microwave it for 3 mins, it is much easier to cut.
thank you!
What if you added a splash of fresh squeezed lemon juice? I make a different recipe and added lemon juice and it gave it a wonderful tang.
I would rather use violife cheese as it tastes much much better. Also, I think I will add some nutritional yeast as it has a very cheesy taste.
I was thinking chao shreds would be REALLY good in this too
That looked really good!
SOO good!
So glad I saw this in my feed. I’m not subscribed to you anymore how the eff did that happen?! Re-subbed!!
Welcome back!!!!
I love this!!! Although I dislike daya or whatever it’s called vegan cheese!! I’m not picky, but that for me is just bad!! I’ve gotten headaches from that cheese, and gave it a few tries before I trashed it!! I’d probably use chao! Although aside from that, this is so good!!
what pot is this> so cool that it can go from the stove to the oven!
I think that one is an Our Place pot!
Try Nora Cooks vegan Mac recipe. I think it will be even more your style.
Fun Fact: If you don't like coffee but still want the coffee grounds, you can go to any Starbucks and ask for theirs for FREE!
Tabitha Brown is a legend! A goddess!
add a little vegan Latic acid for the tangy....
🦴☠️ Most sugar in the United States and Canada is filtered using animal bones. Companies like Duncan Hinds, Aunt Jimima, Oreo, etc. definitely use it.
I have letters from them confirming this. If you’re vegan, you should only buying vegan sugar or organic sugar to avoid animal products.
I feel like I saw your video with Tabitha and then she went insanely viral on TikTok. Coincidence? I think not 😀
The pasta is prononounced “de-checko o-re-ki-ete”
try nuts for cheese roganic fermented cashew cheese on toast and noodles you wont regret it some of best vegan cheese there is
put the butternut in the oven for 10 minutes, that makes it easier to peal
You can get free coffee grounds from Starbucks
FORREAL!?!
do a seasonal cooking video teach me the unknown
What kind of blender do you have?
vitamix!
Merle, you really need to try Billie Eilish's vegan cookies!!! They're so good!!!
OHHHH great idea
Can you use frozen butternut squash?
I dont see why not!!
I usually just bake it and remove the flesh with a spoon
Sounds good, except the uber processed store bought vegan cheese. Otherwise it sounds great. Though I would do about 1½ tsp of vegan lactic acid. Really ups cheesienessss or dairy-ness mouth feel
Don’t sleep on Caps for Sale!!!
u kno!!!
If you are going to make 'soul food' you can't skimp on the unhealthy parts... Or you are just making a disappointment. Looks delicious!
Shoot I didnt know paper towels were compostable. Thank you!
I GOTT you
Fyi, cardboard and paper that isn't glossy/colored are also compostable! So are many fabrics (definitely not polyester) as well as threads (again, not polyester).
